1/2 cup diced cheddar cheese

1 medium onion, chopped

4 bacon strips, cooked and crumbled

Steps:

  • In a bowl, combine the peas, cheese, onion, Miracle Whip, salt and pepper; mix well. Refrigerate until serving. Sprinkle with bacon.

1 cup mayonnaise
1/2 cup sour cream
1 tablespoon lemon juice
1 teaspoon lemon zest
1/4 cup parsley leaves
1/4 cup cilantro leaves
1/4 cup basil leaves
2 (8.8 oz) packages cooked beets, diced
3 to 4 cups chopped iceberg lettuce
3 to 4 cups chopped romaine lettuce
3 ribs celery, thinly sliced
8 ounces blue cheese, crumbled
10 ounces frozen peas, thawed
Freshly ground black pepper
4 slices bacon, cooked until crispy and crumbled

Steps:

  • In the bowl of a food processor, add mayonnaise, sour cream, lemon juice and zest, and herbs. Pulse until smooth. Refrigerate until you are ready to use.
  • Layer your salad in a trifle dish. Start with the beets on the bottom in an even layer. Next add a layer of each lettuce, celery, blue cheese, and peas. Spread the dressing over the top of the salad and season with pepper to taste. Top with bacon. Serve immediately or refrigerate until ready to serve.

1/4 cup sour cream

1 garlic clove, minced
1/2 teaspoon sugar
1/8 teaspoon salt

  • In a bowl, combine peas, bacon, water chestnuts and onions; set aside. Combine all dressing ingredients until smooth; pour over salad and toss to coat. Refrigerate for at least 1 hour.

1/3 cup mayonnaise
1/4 cup chopped fresh flat-leaf parsley
3 tablespoons sour cream
2 tablespoons finely chopped fresh chives
2 tablespoons chopped fresh mint
1 1/2 tablespoons fresh lemon juice
8 ounces dried penne or pennette
1 1/2 cups frozen peas, thawed
1 cup diced ham

Steps:

  • Bring a large pot of salted water to a boil.
  • Whisk together the mayonnaise, parsley, sour cream, chives, mint, lemon juice, 1/2 teaspoon salt and a few grinds of pepper in a large bowl.
  • Add the pasta to the boiling water and cook according to the package directions. Three minutes before the pasta is done, add the peas to the pot. Drain and rinse under cold water to cool; add to the bowl with the dressing.
  • Add the ham to the bowl and toss to combine. Season with salt and pepper. The pasta salad is best if served right away.

1/2 cup frozen peas
3/4 cup low-fat mayonnaise
1 tablespoon Dijon mustard
1 tablespoon apple cider vinegar
1 teaspoon dried tarragon
1/2 teaspoon salt
1/4 cup chopped red onion

Steps:

  • Bring potatoes in salted water to a boil.
  • Reduce heat; simmer till tender (about 20 to 25 minutes).
  • Two minutes before potatoes are done, add peas.
  • Drain off water; cool to room temperature.
  • Cut potatoes in wedges.
  • In large bowl, combine mayonnaise, mustard, vinegar, tarragon and salt.
  • Stir in potatoes, peas and chopped onion until coated.
  • Chill for 1 hour or until ready to serve.

4 cups drained canned corn niblets (or use both!) or 4 cups frozen thawed peas (or use both!)
1 small red onion, chopped (or thinly sliced)
2 cups chopped cucumbers (peeled and seeds removed)
1 stalk celery, finely diced
2 roma tomatoes, chopped
1/2 teaspoon fresh ground black pepper (or to taste)
2 tablespoons sugar
1 teaspoon mustard powder
1 cup sour cream
3/4 cup mayonnaise
1/4 cup vinegar
1 teaspoon seasoning salt (or to taste)
1/2 teaspoon garlic powder (optional)

Steps:

  • Place the corn or peas on a plate and pat dry using paper towel/s then place in a bowl with onions, cucumbers and celery (DO NOT add in the tomatoes you will add them in just before serving) toss to combine.
  • Mix all the dressing ingredients together until well combined.
  • Pour over the veggies; mix well to combine.
  • Season with black pepper and more salt if needed.
  • Cover and chill for a few hours to blend the flavors.
  • Just before serving add in the chopped tomatoes.

2 teaspoons fresh lime juice
1 teaspoon kosher salt
Freshly ground pepper to taste
6 medium cucumbers, peeled, halved lengthwise, seeded and cut across into 1/4-inch slices
2 tablespoons fresh lemon juice
1 teaspoon kosher salt
6 tablespoons coarsely chopped fresh mint
10 cups salad greens
2 cups torn basil
1 cup plain lowfat yogurt
1 tablespoon milk
4 teaspoons olive oil
1 small clove garlic, peeled and minced
1/2 teaspoon kosher salt, plus more to taste
Freshly ground pepper to taste
2 scallions, minced

Steps:

  • Blanch sugar snaps in boiling salted water until crisp-tender, about 4 minutes. Drain, refresh under cold running water, drain and pat dry. Place in a bowl and toss with the olive oil, the salt and pepper.
  • Place the rice in a bowl and toss in the basil, lime juice, 1 teaspoon of salt and pepper.
  • Place the cucumbers in a bowl and toss with the lemon juice, salt and mint.
  • Place the salad greens in a large bowl and toss with the basil. Whisk together the yogurt, milk, olive oil, garlic, salt and pepper to taste. Stir in the scallions and place in a small bowl. Pass the dishes separately, letting guests build their own salads.

2 baby carrots, shredded
1/2 cucumber, peeled and diced small
2 - 3 oz ham, julienned
1 c shredded, cheddar cheese
2 oz swiss cheese, cubed
1 c cashew halves - if not serving till the next day - add these then to retain their crunchiness
1 stalk(s) celery sliced thin or diced
1 c red onion, diced
2 green onions, tops included, sliced
DRESSING
1/2 c cheese ranch ( is what i used ) dressing or regular ranch
1/4 c sour cream
1/4 - 1/2 c mayonnaise
1/2 tsp dried or fresh chopped dill
1 Tbsp sugar
1/2 tsp dried mustard
1/2 tsp pepper
1/2 tsp kosher salt or to taste

Steps:

  • 1. In a medium sized bowl add the peas and all other veggies and cheeses. ( add the cashews before serving )
  • 2. In another small bowl; mix dressing ingredients...adjust seasoning to your own taste if needed. Stir dressing into the pea mixture; coat evenly and refrigerate till chilled, at least a few hours till flavors mesh.
  • 3. Enjoy...even better the next day, if there are any leftovers...

1 cup chopped celery
2 hard-boiled eggs, chopped
1/4 cup onion, finely chopped, sometimes I use green onions
1 1/2 cups cubed cheddar cheese
1 cup mayonnaise
3 tablespoons sweet pickle relish
1 teaspoon sugar
1 teaspoon seasoning salt
1 teaspoon mustard

Steps:

  • In large bowl, combine mayo, relish, sugar, seas. salt and mustard. Gently fold in rest of ingredients adding peas last so they don't get broken up and mushy. (Add more mayo if needed.) Chill.
