From Cooking Light, this is a wonderful side or light main dish. It is good even without the pine nuts if you don't have them on hand, also any herb will work for the basil, you just may need a little more or less depending on the herb.

1 tablespoon butter
1 cup orzo pasta
1 1/4 cups low sodium chicken broth
1 1/4 cups water
1/4 cup parmesan cheese, fresh is better
2 tablespoons fresh basil, chopped
1/4 teaspoon salt
1/4 teaspoon black pepper
4 teaspoons pine nuts, toasted

Steps:

  • Heat butter in a medium saucepan over medium heat. Add orzo and cook 3 minutes, stirring constantly.
  • Stir in broth and water; bring to a boil. Reduce heat and simmer until liquid is absorbed, and orzo is done, about 15 minutes.
  • Remove from heat; stir in cheese, basil, salt and pepper. Sprinkle with pine nuts. Serve immediately.

2 cups uncooked dry orzo pasta
1/3 cup butter
1 small onion, finely chopped
2 tablespoons fresh minced garlic (you may adjust to taste)
1/4 teaspoon crushed red pepper flakes (optional or adjust to suit heat level)
1/2 cup grated parmesan cheese
1/4-1/3 cup light cream (such as half and half or 18% table cream)
2 -3 tablespoons chopped fresh parsley
1/2 teaspoon salt (or to taste)
fresh ground black pepper (to taste)

Steps:

  • Cook the orzo according to the package directions; drain well.
  • In a large skillet melt the butter over medium heat; add in the onion and saute until just softened (about 3-4 minutes).
  • Add in fresh garlic and chili flakes the last 2 minutes of cooking.
  • Reduce the heat to low and add in the cooked orzo, Parmesan cheese, milk or cream, parsley and salt; toss to heat through.
  • Season with fresh ground black pepper to taste.

3 minced garlic cloves
1 cup orzo pasta
3 cups water
1/2 cup half-and-half (light cream)

6 -8 leaves fresh basil, sliced fine

Steps:

  • Saute garlic and orzo in butter 3-4 minutes until golden brown. Stir in water and half and half. Cover and let simmer 20 minutes, stirring occasionally. Stir in parmesan, shrimp and basil. 6 -8 ounces bacon, cut into 1-inch pieces
2 -3 tablespoons butter
1 onion, chopped
1 -2 tablespoon fresh minced garlic
1 lb orzo pasta
4 1/2 cups chicken broth
1/2 cup whipping cream
1 cup grated parmesan cheese
1 teaspoon dried thyme
salt and black pepper

Steps:

  • Cook the bacon in a large saucepan over medium heat until crisp; remove with a slotted spoon (you can drain the bacon fat or leave it).
  • Melt 2-3 tablespoons butter, then add in onions and garlic; saute until soft (about 5 minutes).
  • Add in the orzo and stir for about 2 minutes.
  • Slowly add in the 4-1/2 cups broth; simmer uncovered until the orzo is firm-tender and the broth is absorbed, stirring occasionally (this should take about 7-8 minutes).
  • Add in whipping cream and bring to a simmer.
  • Mix in Parmesan cheese and thyme, then cooked bacon.
  • Season with salt and pepper.

2 large leeks, cleaned and sliced thinly
1 cup chicken stock
1 cup orzo pasta
1/2 cup heavy cream
salt and pepper
ground nutmeg (optional)
4 tablespoons grated parmesan cheese

Steps:

  • Cook orzo in boiling salted water and drain.
  • While orzo is cooking, melt butter in large sauté pan.
  • Add leeks and cook over medium heat until they are softened.
  • Add chicken stock and simmer until the stock almost disappears.
  • Add cream to the sauté pan with the leek mixture.
  • Add cooked orzo and heat thoroughly.
  • Season with salt, pepper and nutmeg to your taste.
  • If it looks a little dry, add a little extra cream.

Number Of Ingredients 13

1 lb chicken breast (boneless and skinless (about 3))
1/2 tsp salt (or to taste)
1/2 tsp pepper (or to taste)
1 tbsp paprika
2 tbsp olive oil
1 cup asparagus (chopped)
1 large onion (chopped)
4 cloves garlic (minced)
2 cups orzo (uncooked)
2 cups half and half
3 cups chicken broth (low sodium, or water)
1 1/2 cups Parmesan cheese (grated)
2 tbsp parsley (chopped, for garnish)

Steps:

  • Season the chicken breasts with salt, pepper and paprika on both sides.
  • In a large skillet heat the 2 tbsp of olive oil over medium-high heat. Sear the chicken for about 5 minutes per side, or until golden brown and cooked through. Depending on the thickness of your chicken you might need longer time. Transfer the chicken to a warm plate; set aside.
  • In the same skillet add the asparagus and saute for about 3 minutes, just until it starts to soften and starts to brown a bit. Transfer to a plate; set aside.
  • In the same skillet add the onion and garlic and saute for about 3 minutes until the onion is translucent and the garlic becomes aromatic. Add more olive oil if needed.
  • Add the orzo to the skillet and saute for just one minute, to get it a little toasted, this will give it a nutty flavor. Add the half and half, chicken broth and stir.
  • Bring to a boil, then turn the heat down to a medium-low, cover with lid and let it cook for 10 minutes.
  • Remove the lid and stir in the Parmesan cheese. Taste for seasoning and adjust with salt and pepper.
  • Add the asparagus back and stir it in. Slice the chicken into thin slices. You can either add it to the skillet and stir it in, or as seen in the photos, arrange over the orzo.
  • Garnish with more Parmesan cheese if preferred, and parsley. Serve warm.

3/4 cup(s) uncooked orzo pasta
2 tablespoon(s) butter
2- 3 teaspoon(s) jarred minced garlic or a few fresh cloves, minced
1/3 cup(s) fine chopped onion
2 slices - mushrooms, diced - optional
2 thin slice(s) prosciutto - diced - optional
2 1/4 teaspoon(s) flour
1 cup(s) milk
1/2 cup(s) shredded parmesan cheese
1 cup(s) fresh spinach, chopped
salt - & pepper to taste
a few pinch(es) ground nutmeg

Steps:

  • Cook pasta according to directions, about 9 minutes once water boils, drain.
  • In a med to large skillet, melt butter over med heat. Stir in onion, garlic and mushrooms if using and proscuitto. Cook for 2 - 3 minutes, stirring often.
  • Stir in the flour and cook for another minute, making sure not to scorch.
  • Whisk in the milk, slowly and bring to a simmer. Continue cooking until becomes bubbly and thickens.
  • Remove from burner and stir in the Parmesan cheese, until melted. Stir in the spinach and orzo and toss to coat. Return to burner, add nutmeg, salt & pepper to taste, cook only long enough to heat pasta and wilt the spinach.
  • Serve immediately. Delicious!

1 shallot, minced
1 tbsp. all-purpose flour
1 c. milk (I used whole)
⅓ c. parmesan cheese

Steps:

  • In a large pot of boiling water, cook orzo according to the package's directions.
