8 ounce(s) lasagna noodles
1 package(s) soft chive cream cheese
3 - eggs
24 ounce(s) cottage cheese
1 pound(s) frozen spinach, thawed and squeezed dry
1 can(s) mushrooms, stems and pieces
1 can(s) cream of mushroom soup
1 - minced garlic clove
1 cup(s) chopped onion
1 pound(s) ground beef
2.75 ounce(s) french fried onions

Steps:

  • Grease 13 x 9 inch baking dish.
  • Cook noodles to desired doneness as directed and drain.
  • In medium skillet, cook, ground beef, onions, and garlic over medium-high heat until beef is browned; drain if needed.
  • Add soup and mushroooms; mix well.
  • In large bowl, combine spinach, 2 cups cottage cheese and 2 eggs; mix well.
  • In another large bowl, combine cooked noodles remaining 1 cup cottage cheese and remaining egg, toss gently.
  • In greased dish layer half of the noodle mixture, spinach and beef mixture, repeat layering.
  • Cover with foil and bake 35 - 40 minutes in a 350 degree oven.
  • Remove from oven and sprinkle fried onions over top.
  • Return to oven cook additional 5 minutes.
  • Let stand 5 minutes before serving.

This slightly spicy casserole was always a hit at our potlucks at work, so I finally asked the co-worker who brought it for the recipe. Now I make it for my family with the same success.-LeeAnn McCue, West Springfield, Massachusetts

Number Of Ingredients 11

1 pound ground beef
1 tablespoon finely chopped onion
2 cans (8 ounces each) tomato sauce
1 can (2-1/4 ounces) sliced ripe olives, drained
1/2 teaspoon garlic salt
1 cup 4% cottage cheese
1 cup sour cream
1 can (4 ounces) chopped green chiles
4 cups crushed tortilla chips
2 cups shredded Monterey Jack cheese
Additional tortilla chips

Steps:

  • In a skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add tomato sauce, olives and garlic salt; set aside. In a bowl, combine cottage cheese, sour cream and chiles; mix well. In a greased 11x7-in. baking dish, layer half of the tortilla chips, meat mixture, cottage cheese mixture and Monterey Jack cheese. Repeat layers. Top with additional tortilla chips. Bake, uncovered, at 350° for 40 minutes or until heated through.
