2 packages (16 ounces each) frozen corn
1 package (8 ounces) cream cheese, softened and cubed
4 jalapeno peppers, seeded and finely chopped
1/4 cup butter, cubed
2 tablespoons water
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a 3-qt. slow cooker, combine all ingredients. Cover and cook on low until corn is tender, stirring occasionally, 4-5 hours.

8 ears corn, husked
2 red bell peppers, diced
2 jalapeno peppers, diced
1 cup heavy cream
Kosher salt and freshly ground pepper
1 stick salted butter, cut into pieces

Steps:

  • Preheat the oven to 350 degrees F. Slice the corn kernels from the ear in a large, deep bowl with a sharp knife. Turn the knife to the dull side and scrape the cob all the way down to remove all the bits of kernel and the creamy milk.
  • Add the red bell peppers, jalapenos, heavy cream, 2 teaspoons salt, a generous amount of pepper and the butter and mix well. Pour into a 9-by-13-inch baking dish. Bake until hot and bubbly, 45 to 55 minutes.

6 ears of corn
water enough to cover
1 stick butter
4 Tbsp honey
1 c heavy cream
2 jalapenos seeded and sliced
salt and butter for serving

Steps:

  • 1. In a large pot enough to hold the ears of corn. Add water just enough to cover. Mix in the butter, honey, heavy cream and jalapenos. Bring to a boil and reduce the heat. Once the butter is melted add the corn and cook until the corn is done about 5 to 7 minutes. Remove the corn and discard the liquid.Serve salted with a pat of butter

4 ears fresh sweet corn
2 jalapeno peppers
3 tablespoons canola oil, divided
3/4 teaspoon salt, divided
1/4 cup panko bread crumbs
1/2 teaspoon smoked paprika
1/2 teaspoon dried Mexican oregano
4 ounces cream cheese, softened
1/4 cup media crema table cream or sour cream thinned with 1 teaspoon 2% milk
2 tablespoons lime juice
Ground chipotle pepper or chili powder
Optional: Chopped fresh cilantro and lime wedges

Steps:

  • Husk corn. Rub corn and jalapenos with 2 tablespoons canola oil. Grill, covered, on a greased grill rack over medium-high direct heat until lightly charred on all sides, 10-12 minutes. Remove from heat. When jalapenos are cool enough to handle, remove skin, seeds and membranes; chop finely. Set aside., Sprinkle corn with 1/2 teaspoon salt. In a small skillet, heat remaining oil over medium heat. Add panko; cook and stir until starting to brown. Add paprika and oregano; cook until crumbs are toasted and fragrant., Meanwhile, combine cream cheese, crema, lime juice and remaining salt; spread over corn. Sprinkle with bread crumbs, jalapenos and chipotle pepper. If desired, sprinkle with cilantro and serve with lime wedges.

1 lime, juiced and zested
1 small jalapeno, seeded
1 clove garlic
1 teaspoon sweet paprika
6 ears corn on the cob, husked
1 slice bread, of any kind
Coarse salt

Steps:

  • Combine butter, lime, jalapeno, garlic and paprika in food processor and pulse process until smooth. Place on waxed paper or plastic and roll. Place in freezer until ready to serve.
  • Cook corn by boiling, steaming or grilling. Cut disks of butter and rub onto corn, nesting the butter in a slice of bread to apply it to the hot corn. Season ears with salt (and fight over the hot buttered bread slice!)
