2 tablespoons mayonnaise
1/4 teaspoon prepared mustard
1/2 teaspoon honey
1/2 teaspoon lemon juice
Dash ground cloves
1/2 cup julienned fully cooked ham
1 small apple, diced
1 celery rib, sliced
Lettuce leaves, optional
1/4 teaspoon sesame seeds, toasted

Steps:

  • In a bowl, blend the first five ingredients. Stir in ham, apple and celery. Cover and refrigerate for 1 hour. Serve on a bed of lettuce if desired. Sprinkle with sesame seeds.

This is a really delicious salad. Great way of using up apples and that last bit of ham in the fridge. It was adapted from The Best of Country Cooking. Cooking time is time spent in the fridge. You may also want to add a finely minced garlic clove.

3 cups chopped up apples (I've used NZ Beauty)
1 cup ham (I buy the sausage/ham ends at the Deli for this purpose. Cheaper but just as good)
2 tablespoons green onions, chopped
3 tablespoons oil
1 tablespoon apple cider vinegar

Steps:

  • Mix everything together with salt and pepper to taste and chill for about 1 hour.
  • Eat.
  • If you like, you may double the oil and vinegar amount.

1/2 c fat-free, plain greek yogurt
1/4 c grated parmesan cheese
3 Tbsp light mayonnaise
2 Tbsp cider vinegar
1-1/2 tsp dried tarragon
1/2 tsp pepper
1/4 tsp salt
10 c organic mixed greens
1 large sweet apple, washed, cubed
1 c sliced radishes
3/4 c chopped ham
1/2 c chopped pecans

Steps:

  • 1. In lg bowl, whisk together yogurt, parmesan cheese, mayonnaise, vinegar, tarragon, pepper and salt.
  • 2. Add greens, apple, radishes, ham and pecans. Toss to coat.

1 can (8 ounces) unsweetened pineapple chunks
3 cups cooked brown rice
2 cups cubed fully cooked ham
1 can (8 ounces) sliced water chestnuts, drained and halved
1/4 cup finely chopped red onion
1/2 cup plain yogurt
1/2 teaspoon salt
1 medium apple, chopped
Lettuce leaves
1/3 cup chopped macadamia nuts, toasted
1/4 cup sweetened shredded coconut, toasted

Steps:

  • Drain pineapple, reserving 1 tablespoon juice. In a large bowl, combine the pineapple, rice, ham, water chestnuts and onion. Cover and refrigerate for at least 2 hours. , In a small bowl, combine the yogurt, salt and reserved pineapple juice. Pour over ham mixture and toss to coat. Stir in apple. , Serve on lettuce-lined plates; sprinkle with macadamia nuts and coconut.
