1 ½ cups chopped fresh broccoli
1 (16 ounce) package uncooked rotini pasta
½ cup olive oil
4 cloves garlic, chopped
1 pinch crushed red pepper flakes
1 cup chicken broth
½ cup lemon juice
salt and ground black pepper to taste
¼ cup freshly grated Parmesan cheese

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Stir in the broccoli, and cook, uncovered, for 3 minutes. Remove the broccoli with a slotted spoon; set aside. Stir the rotini into the same pot, and return to a boil. Cook uncovered, stirring occasionally, until the pasta is cooked through, but still firm to the bite, about 8 minutes. Drain.
  • Heat olive oil in a skillet over medium heat; cook and stir the garlic and crushed red pepper for 1 minute. Stir in the broccoli, chicken broth, lemon juice, salt, and black pepper. Bring to a boil; reduce the heat to medium-low and simmer until the broccoli is tender, about 5 minutes. Stir in the drained pasta; cook over low heat for 1 minute. Stir in the Parmesan cheese.

14 ounces whole wheat rotini pasta
1 (10 ounce) package frozen broccoli
1 tablespoon olive oil
2 cups diced fully cooked ham
1 (15 ounce) jar Alfredo sauce
½ cup 2% milk
ground black pepper to taste
1 cup shredded Colby-Monterey Jack cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Bring a large pot of lightly salted water to a boil; cook the pasta in the boiling water, stirring occasionally, until tender but not mushy, about 10 minutes. Drain.
  • Thaw the broccoli in a microwave oven until you can break it apart into small pieces.
  • Heat the olive oil in a large skillet over medium heat; cook and stir the diced ham in the hot oil until the edges start to brown, about 10 minutes. Stir in the broccoli and cook and stir until any excess water has cooked away and the ham and broccoli are hot. Pour in the jar of Alfredo sauce and the milk; stir to blend, sprinkle with pepper, and add the cooked pasta. Stir everything together to coat the pasta with sauce and bring to a simmer.
  • Spread the bubbling pasta mixture into the prepared baking dish, top with shredded Colby-Monterey jack cheese, and bake in the preheated oven until the casserole is hot and the cheese is melted and starting to brown, about 30 minutes.

3/4 pound broccoli, trimmed and cut into florets
1 tablespoon extra-virgin olive oil
Coarse salt and ground pepper
6 ounces wide egg noodles
5 ounces cream cheese, room temperature
6 ounces thinly sliced deli ham, cut into 3/4-inch pieces

Steps:

  • Preheat oven to 425 degrees. On a rimmed baking sheet, toss broccoli, oil, 1/2 teaspoon salt, and 1/8 teaspoon pepper. Roast until broccoli is tender and lightly browned, 15 to 20 minutes, tossing halfway through. Meanwhile, in a large pot of boiling salted water, cook noodles until al dente. Reserve 2 cups pasta water; drain pasta.
  • Return empty pasta pot to medium-low heat. Add cream cheese and 1 cup pasta water; whisk until smooth. Add broccoli and ham and cook until hot. Gently fold in noodles. Thin sauce to desired consistency with more pasta water and season pasta with salt and pepper.

I finally got my son to eat his broccoli!! This is a variation on a recipe I found on the web. I like to use rotini for the pasta and buy the cheese already shredded. Choose your favorite "cream of" soup. So simple and yummy!

This is a great recipe to use leftover ham, you can also use cooked chicken or turkey in place of the ham. One medium cauliflower cut into florets can be used in place of broccoli if desired. This recipe can be doubled if desired. You will love this casserole!

3 cups broccoli florets (can use more)
4 tablespoons butter
1 -2 tablespoon minced fresh garlic
1 small onion, finely chopped
1 pinch cayenne pepper (optional or to taste)
1/4 cup flour
2 cups half-and-half cream (or use full-fat milk)
1 cup shredded old cheddar cheese
1/2 cup sour cream
1/2 teaspoon seasoning salt (or to taste or use white salt)
black pepper
2 cups cooked finely diced ham
3/4 cup canned sliced mushrooms, well drained
1 1/2 cups breadcrumbs
2 tablespoons grated parmesan cheese (optional)
2 tablespoons melted butter

Steps:

  • Set oven to 350 degrees.
  • Butter a 2 or 3-quart casserole dish.
  • Cook the broccoli florets in boiling water until just tender; drain very well, then place on paper towels to dry further.
  • Melt butter in a medium heavy-bottom saucepan over medium heat; add in the onions, garlic and cayenne, saute until tender (about 3-4 minutes).
  • Add in flour whisking constantly until mixture thickens (about 2 minutes, do not brown the flour, if the mixture is too thick just add in more cream to thin out).
  • Slowly add in half and half cream or full-fat milk, whisking constantly until the mixture begins to thicken.
  • Add in cheddar cheese and sour cream; stir until the cheese melts (do not boil).
  • Season with salt and black pepper to taste.
  • Add in broccoli florets, ham and mushrooms into the cheese mixture; mix to combine.
  • Transfer to prepared casserole dish.
  • In a small bowl mix together the breadcrumbs with Parmesan cheese (if using) and melted butter until combined; sprinkle on top of casserole.
  • Bake uncovered for about 45 minutes.
  • Delicious!
