CREAMY SHRIMP AND GNOCCHI

2 tablespoons olive oil
Kosher salt
1 pound frozen peeled and deveined jumbo shrimp (16/20)
2 tablespoons lemon pepper seasoning
1/2 cup white wine
2/3 cup heavy cream
1/2 cup mascarpone cheese
1/4 cup prepared pesto
2 lemons, both zested and 1 sliced, for garnish
Freshly ground black pepper
One 17.5-ounce package gnocchi
2 cups frozen peas
6 to 8 fresh basil leaves

Steps:

  • Place a large skillet with a lid over medium-high heat and add the olive oil. Bring a large pot of salted water to the boil.
  • Lightly rinse the shrimp to help separate them and remove any large pieces of ice. Shake off any excess water, then toss the shrimp with the lemon pepper seasoning.
  • Add the shrimp to the hot oil, using tongs to move into a single layer. Cover and let cook until the shrimp start to defrost and turn pink, about 2 minutes. Uncover, flip the shrimp and cook for an additional 2 to 3 minutes, flipping for the final minute. Check that the shrimp are pink all over, then remove to a plate.
  • Deglaze the skillet with the wine, scraping the bottom. Add the cream, mascarpone, pesto, lemon zest and good pinch of salt and pepper. Stir to combine and bring to a simmer. Continue simmering for 1 to 2 minutes and allow the sauce to thicken slightly.
  • Add the gnocchi to the boiling water and cook for 3 to 4 minutes. When the gnocchi are ready, they will begin to float.
  • Drain the gnocchi and add to the sauce along with the frozen peas and the shrimp with any juices. Stir and heat through until the sauce has thickened a little more and everything is combined, about 2 minutes. Taste and adjust the seasoning as needed. Garnish with the basil and lemon slices.

1/3 cup butter, divided
1 small onion, chopped

1-1/2 cups heavy whipping cream

  • Heat the olive oil in a frying pan. Fry the garlic until golden, then add the tomatoes. Season, then simmer for 10 mins. Stir in mascarpone, then cook for 2 mins more.
  • Meanwhile, boil the gnocchi according to pack instructions. Add the spinach for the final min of cooking. Drain well, pour back into the pan, then stir the sauce through. Mix well and serve immediately with basil leaves and Parmesan shavings scattered over, if you like.

1 large onion, thinly sliced
6 mushrooms, sliced
1 teaspoon brown sugar
1 (16 ounce) package potato gnocchi
20 peeled and deveined large shrimp (21 to 30 per pound)

1 teaspoon paprika
1 pinch saffron
salt to taste

Steps:

  • Melt the butter in a large skillet over medium heat. Stir in the onion, mushrooms, and brown sugar. Cook and stir until the onion has cooked to a deep brown color, about 10 minutes. Remove the caramelized onions and set aside.

Steps:

Steps:

  • Place porcini in medium bowl. Pour 1 cup boiling water over. Let stand until porcini are soft, about 30 minutes. Remove porcini from water, reserving soaking liquid. Finely chop porcini.
  • Melt butter in heavy medium saucepan over medium-high heat. Add porcini and sauté 3 minutes. Add cream and 3/4 cup soaking liquid, leaving any sediment behind in bowl. 1 cup mashed potatoes (without added milk and butter)
2 cups all-purpose flour
1 large egg, lightly beaten
1 cup canned pumpkin
2 teaspoons minced fresh sage
1/2 cup butter, cubed
6 fresh sage leaves
1 garlic clove, minced
1 tablespoon all-purpose flour
2 tablespoons heavy whipping cream
Shaved Parmesan cheese
1/4 teaspoon salt

Steps:

  • In a Dutch oven, bring 6 quarts salted water to a boil. Place potatoes in a large bowl. Using a fork, make a well in the potatoes; sprinkle with flour. Mix egg, pumpkin and minced sage; pour into well. Stir vigorously until blended. On a lightly floured surface, knead 10-12 times, forming a soft dough., Divide dough into 8 portions. On a floured surface, roll each portion into a 1/2-in.-thick rope; cut crosswise into 3/4-in. pieces. Press and roll each piece with a lightly floured fork. Cook gnocchi in batches in boiling water until they float, 3-4 minutes; remove with a slotted spoon., In a large skillet, melt butter over medium heat. For sauce, in same skillet, discard melted butter, reserving 2 tablespoons; add sage leaves and cook over medium heat until sage is crispy, 2-3 minutes, turning once. Remove sage and set aside. Add garlic and cook, stirring, 1 minute., Stir in flour until smooth; gradually whisk in cream, salt and 3/4 cup cooking water. 200g long-stem broccoli, each cut into 3 pieces
350g fresh gnocchi

100g frozen peas

  • Mix together the crème fraîche, mustard and lemon juice. Set aside. Bring a large pan of salted water to the boil. Once boiling, add the broccoli and cook for 3 mins, then tip in the gnocchi. This came to me one night when I was craving gnocchi. I let it bounce around in my head for a couple of weeks before I made it. My husband swears it was definitely worth the wait. The sauce is creamy and smooth, coating the chicken and gnocchi with a wonderful pesto flavor without the oiliness of straight pesto. Try it with garlic bread or multi-grain bread and butter.

1 quart chicken broth or 1 quart stock, plus water
2 tablespoons olive oil or 2 tablespoons grapeseed oil
1 medium onion, diced
1 large garlic clove, minced
8 ounces mushrooms, sliced
1 1/2 lbs boneless skinless chicken, cut into 1 to 1 1/2 inch cubes
1 (10 ounce) can cream of mushroom soup, undiluted
3/4 cup basil pesto
1 teaspoon sundried tomato and basil seasoning (like Sbarro) or 1 teaspoon italian seasoning
salt and pepper
1 (16 ounce) package potato gnocchi
grated parmesan cheese, for serving

Steps:

  • Put a pot on the stove with the chicken broth in it and heat to boiling.
  • Meanwhile, in a large saute pan, saute the onion in the oil on medium heat until soft. Add the minced garlic and saute for a minute more until fragrant. Add the mushrooms and saute until lightly brown and most of their liquid is evaporated; push to the side of the pan. Add the chicken and saute, stirring often, until just cooked through. Add the soup, the pesto, and the seasonings to the pan and stir to combine everything thoroughly. Reduce heat and simmer gently until the gnocchi are ready.
  • When the broth reaches a boil, carefully add the gnocchi and stir to separate. Add extra water if needed to give the gnocchi plenty of liquid. Cook until the gnocchi are done and float to the surface. Using a spider strainer, transfer the gnocchi to the saute pan. Stir gently to coat the gnocchi. If the sauce is too thick, add a little of the cooking broth and stir to combine. Serve in pasta bowls with grated parmesan and bread.

  • In a Dutch oven, heat the extra-virgin olive oil and 2 tablespoons of butter over medium heat. Add the mushrooms, rosemary, thyme and bay leaf and cook until the mushrooms are lightly brown, about 7 to 8 minutes. Stir in the onions and garlic and season with salt and pepper, to taste. Raise the heat a bit and cook 5 minutes more. Stir in the tomato paste, Worcestershire sauce and stock. Bring to a boil then reduce heat to a simmer. Add the turkey and heat until the mixture bubbles, then turn off heat and cool. Store in the refrigerator for a make-ahead meal.
  • Reheat the sauce, in a covered pot, over medium heat, then uncover the pot and stir in the cream. Simmer over low heat.
  • Bring a large pot of water to a boil over medium heat. Salt the water and add the gnocchi. Cook until they float, about 1 to 2 minutes.
  • Drain the gnocchi and them to the pot. Stir in the remaining 1 tablespoon of butter and season with a hint of freshly grated nutmeg. Serve in shallow bowls topped with lots of chunky, creamy sauce and some cheese.

This honestly is so easy to make and such a nice dish. This is good enough to serve to company. Other than the asparagus and onion that you will need to cut, the rest is all pantry or store bought items. The creamy ricotta and bread crumbs added to the soft gnocchi makes for a perfect dish. Many grocery stores carry fresh and frozen varieties, as all of mine do. Whole Foods, Sams Club, Trader Joes, for those in the US carry them and of course most Italian Markets. They are a nice change from the traditional pasta shapes. I happen to love asparagus in this, but I have also used peas or green beans too. For the pesto, by all means make your own, but a good store brand makes this quick and easy.

1 lb gnocchi (refrigerated or frozen)
1/2 lb asparagus, cut in 1/2-inch pieces on an angle (approximately 2 cups, green beans or peas make a great substitute)
1 medium onion, cut in half and thin sliced (use less onion if you want)
1/2-3/4 cup black olives, cut in half (buy a can of pre cut olives and save yourself some time)
1/2 lemon, zest of, use the other half thin sliced as a garnish if you want
salt (go easy with the salt as the pesto and olives are both salty)
pepper
1 cup pesto sauce (I used a basil pesto)
1/4 cup heavy cream
1/3 cup ricotta cheese
1 cup Italian seasoned breadcrumbs
1 1/2-2 tablespoons olive oil
1/2 cup parmesan cheese

Steps:

  • Bread Crumb Topping -- Make this first and then just set it off to the side. In a small dry saute pan, add the breadcrumbs and bring to medium high heat. You just want to toast them and they don't take long so keep an eye on them. Make sure to keep stirring them. You could easily make your own bread crumbs for this, but I used store bought Italian seasoned bread crumbs which saved some time. Once the bread crumbs are toasted and golden brown, transfer to a small bowl and mix with the olive oil and parmesan cheese.
  • Vegetables -- In a large pot of salted boiling water (on a medium boil), add the asparagus and cook until tender. About 3-5 minutes. It depends on how thick your asparagus is. Remove the asparagus with a slotted spoon to a bowl of ice water to set the color and to stop the cooking. It just needs a minute in the water, then transfer to a plate lined with a paper towel to dry.
  • Gnocchi -- Cook the gnocchi according to package directions. Drain well and return to the pot (keep the heat on medium / medium low.
  • Finish -- Add the cream, pesto, olives, and onions to the gnocchi and cook another 2-3 minutes until everything is heated through. Check for seasoning and add any additional salt or pepper if needed. Then add in the asparagus, lemon zest and toss lightly.
  • Serve -- Transfer to a serving platter and top with the toasted bread crumbs and a scoop of the ricotta cheese. Garnish with the lemon slices from the half of lemon you did not zest. ENJOY!
  • Add a fresh cucumber and tomato salad for a nice simple side dish.

1 lb frozen gnocchi
2 TBSP Bertolli olive oil
1 package frozen chopped spinach, thawed and squeezed dry
2-3 chopped garlic cloves
1/4 tsp nutmeg
8 oz. heavy cream
1/2 cup seasoned italian bread crumbs
8 oz. crumbled gorgonzola cheese
1/2 tsp salt
1/2 tsp pepper

Steps:

  • Cook gnocchi till tender. Meanwhile in large pan, heat 2 TBSPS olive oil. Add chopped spinach, garlic, nutmeg, salt and pepper. Saute 2-3 minutes. Add heavy cream and heat till thickened. In separate pan, heat 1 TBSP olive oil; add bread crumbs and toast lightly. Drain gnocchi and add to spinach-cream mixture. Toss together to coat. Mix in crumbled gorgonzola cheese and top with toasted bread crumbs. Serve.

1 pound Gnocchi (homemade or store-bought, my store-bought Gnocchi said cooked in 2 minutes)
1/4 cup + 2 tablespoons freshly grated Parmesan cheese
1 cup grated Fontal (or Gruyere) cheese
fresh thyme
WHITE SAUCE
1 tablespoon butter
1 cup milk (I used 2%)
1 tablespoon flour
pinch salt
dash of oregano, basil and pepper

Steps:

  • 1.Pre-heat oven to 425°, lightly oil an 8 x 6 inch baking dish. 2.In a large pot of boiling salted water add the Gnocchi, remove as soon as the Gnocchi float (no more than 30 seconds) and drain well. 3.In a medium pot over medium heat melt butter, then add flour and salt, combine with a whisk, add milk slowly and continue to stir until thickened (but not too thick, if it becomes too thick add a little extra milk), stir in oregano, basil and pepper. Remove from heat. Stir in half the Fontal (or Gruyere cheese) and ½ the Parmesan cheese, then gently add the Gnocchi. 4.Place in baking dish, sprinkle with remaining Fontal cheese and Parmesan cheese, top with fresh thyme if desired. Bake for 3-5 minutes then broil for another 3-5 minutes. Let sit a couple of minutes before serving. Enjoy!

2 tablespoons butter
1/2 cup onion, minced
1 garlic clove, minced
1 tablespoon flour
2 cups half-and-half (fat free will not thicken up)
5 ounces frozen spinach, thawed and drained
10 ounces frozen cut broccoli in cheese sauce, thawed in microwave
1/4 cup parmesan cheese, finely shredded
salt
pepper
1 teaspoon italian seasoning (I have also used Greek Seasoning)
1 lb potato gnocchi

Steps:

  • Bring a large pot of salted water to a boil.
  • In the meanwhile, in a large skilled, melt the butter over medium-low heat. Add onion and garlic and cook, stirring occasionally until softened (10 minutes or less).
  • Add 1 tbsp flour to the onions/garlic. Stir constantly for 2 minutes. Add the half and half and simmer, stirring constantly until slightly thickened (3 minutes). Stir in the cheese, spinach, broccoli, salt, pepper and spice. Remove from heat, cover and set aside.
  • When the water is boiling, cook your gnocchi as per the directions on the package. Drain when done. Add sauce to the gnocchi and stir to coat. (You can either cook it or freeze it at this time).
  • Bake in a 350 degree oven, uncovered for 20 minutes or until hot and bubbly.
  • IF COOKING FROM FROZEN. . .bake uncovered 350 degrees for 40 minutes or until hot and bubbly.

This is a very quick and easy recipe to throw together, it tastes great and makes for a wonderful after work dinner or great mid week meal when you want no fuss. You can make your own gnocchi if you prefer, but for quickness of this recipe I used fresh store bought gnocchi, you can find this in the fresh pasta section of most supermarkets. For those of you who have never eaten gnocchi before or do not know what it is, a quick explanation is basically Italian dumplings, made from either potato, semolina or flour.

olive oil
4 chicken breasts
1 -1 1/2 teaspoon garlic powder, combined with
1 -1 1/2 teaspoon dried parsley, to sprinkle over breasts
800 g gnocchi
2 garlic cloves, crushed
2 tablespoons dry white wine
1 tablespoon lemon juice
1 teaspoon instant chicken bouillon granules
300 ml cream
2 tablespoons fresh oregano, finely chopped

Steps:

  • Sprinkle combined garlic and parsley on both sides of all the breasts. Heat some olive oil in a large frying pan and cook chicken, uncovered, about 20 minutes or until cooked through.
  • Meanwhile pour some water in a pan add a little olive oil and bring to the boil.
  • While you are waiting for the water to boil, add a little oil to another saucepan, add garlic, cook, stirring, about 1 minute, Add wine to pan, to deglaze, evaporate all liquid, add lemon juice and the stock, stir.
  • Pour cream in and bring to the boil. Reduce heat to a simmer, simmer uncovered, about 5 Min's until sauce thickens slightly. (If you want it thicker just add a little cornstarch I prefer a more thin sauce when it is more like a pasta dish.) Stir in oregano, keep warm over a low heat while you cook the gnocchi.
  • Once the water is boiling add gnocchi and cook as per packet instructions, mine was only 3 minutes; drain.
  • While gnocchi is cooking remove breasts from pan, cut chicken into slices.
  • To Serve: Divide gnocchi among serving plates, top with sliced chicken, drizzle with sauce.

This is a shortcut version of a dish my grandma made from scratch. It is super yummy either way. I have added chicken to her recipe to make it a main dish rather than a side.

2-3 boneless chicken breast (pounded 1/2 inch thick)
1/4 c olive oil, extra virgin
1 pkg dry italian dressing mix
1 pkg prepared potato gnocchi
4 Tbsp butter (divided)
1/2 c dry white wine
1/4 c chicken broth
1/2 c pesto
1/2 c heavy cream
1/2 c parmesan cheese (plus some for garnish)

Steps:

  • 1. Prepare gnocchi per package instructions. Melt 2 tbs butter in a medium saute pan over medium high heat. Add gnocchi with a little salt and pepper. Saute just enough to give a little caramel color to some of the gnocchi. Just a few spots. Don't overcook. Remove from heat and set aside.
  • 2. Rub chicken with dry Italian dressing mix. Heat olive oil over medium high heat in a large saute pan. Saute chicken until it's nice and colored on both sides (about 5 minutes per side). Remove from pan. Cut into bite size pieces.
  • 3. Add butter to pan and scrape up bits stuck to pan. Add chicken broth and wine and bring to boil. Reduce to simmer and cook about 5 minutes. Stir in pesto. Stir in heavy cream and Parmesan cheese. Return chicken to pan, fold in gnocchi and heat to serving temperature. Garnish with Parmesan cheese and enjoy!
  • 4. My grandmother made her own gnocchi and pesto which was wonderful. I make this from scratch a lot but wanted to also have a quick and easy version for those days I don't have much time or don't feel like destroying my kitchen, lol.
