This is a delicious, super quick side or main dish. I got it from the back of a pasta box and it is yummy!

1 (1 lb) box penne or 1 (1 lb) box penne rigate, cooked as directed, drained and kept hot
2 tablespoons butter or 2 tablespoons margarine
2 garlic cloves, minced
2 tablespoons flour
3/4 cup chicken broth or 3/4 cup beef broth
3/4 cup milk
2 teaspoons parsley flakes
salt and pepper, to taste
1/3 cup grated parmesan cheese

Steps:

  • Melt butter and add garlic in a medium sauce pan.
  • Cook over medium for 1 minute.
  • Add flour and cook 1 minute, stirring constantly.
  • Stir in broth and milk and cook, stirring frequently, until sauce boils and thickens.
  • Add parsley, salt, pepper and cheese.
  • Stir until cheese is melted.
  • Toss hot pasta with sauce and serve immediately.

3 heads garlic
Parchment-lined foil
Olive oil
A few sprigs thyme
3/4 pound penne
1/2 cup grated Pecorino Romano
2 tablespoons cream
Greens such as watercress

Steps:

  • Trim the top thirds of garlic heads. Set on parchment-lined foil, drizzle with olive oil, top with thyme, and wrap. Roast at 400 degrees for 1 hour. Cook penne, reserving 3/4 cup pasta water. Squeeze garlic out of skins and heat in a skillet with pasta water and cheese, whisking until thick and creamy. Stir in cream, and penne. Season, and top with greens.

2 tablespoons butter (I also add 2 tbsp olive oil)
2 large garlic cloves, minced
2 tablespoons flour
3/4 cup chicken or 3/4 cup beef broth

8 garlic cloves, peeled
3 cups small broccoli florets
6 ounces penne pasta
2 cups evaporated skim milk
1 tablespoon all-purpose flour
1 teaspoon all-purpose flour
1 1/2 ounces reduced-fat cheddar cheese, grated
1 1/2 ounces parmesan cheese, freshly grated
1/2 teaspoon black pepper, freshly ground
1/4 teaspoon salt

Steps:

  • In large pot of boiling water, cook garlic 3 minutes, until softened.
  • With slotted spoon, remove garlic from water.
  • Mince garlic; set aside.
  • In same pot of boiling water, cook broccoli 3 minutes, until bright green and just softened.
  • With slotted spoon, remove broccoli from water; set aside.
  • In same pot of boiling water, cook penne 8-10 minutes, until tender.
  • Drain, discarding liquid; set aside.
  • Meanwhile, in large nonstick skillet, with wire whisk, combine milk and flour, blending until flour is dissolved.
  • Cook over medium heat, stirring constantly with wire whisk, 4 minutes, until mixture is bubbling and thickened; stir in minced garlic.
  • Reduce heat to low.
  • Add cheddar and Parmesan cheeses, pepper and salt to milk mixture; cook, stirring constantly, until cheeses are melted.

CHICKEN & BACON WITH PENNE IN CREAMY GARLIC SAUCE

This grilled chicken and bacon with pasta in a creamy garlic sauce was a meal fit for a king. Just perfect for a father's day meal. I wanted a special dish and this was a hit! Inspired from Plain Chicken Blog

3 to 4 boneless chicken breast
1 lb bacon, fried and crumbled
1 lb penne, cooked to directions
MARINATE
1 c white wine
1/4 c olive oil, extra virgin
2 clove garlic, chopped
1 tsp herbes de provence
1/2 tsp salt
1/2 tsp white pepper
CREAMY GARLIC SAUCE
1 c heavy cream
4 oz cream cheese
1/2 c parmesan cheese, grated
2 large egg yolks
1 to 2 tsp chives, dried
1 to 2 tsp garlic powder
salt and pepper to taste
1 to 2 tsp red pepper flakes

Steps:

  • 1. Combine ingredients for marinate in a ziploc bag or marinate container; add boneless chicken breast. Make sure chicken is coated well. Refrigerate over night or at least a couple of hours prior to grilling. You can grill the chicken outside over charcoal, on a gas grill or in a cast iron stove top grill. For this recipe I used my cast iron stove top grill.
  • 2. Put water on stove to boil for pasta; add salt. Once water boils add pasta and cook according to directions on package.
  • 3. Fry bacon. I cut up the bacon before frying.
  • 4. Cut cream cheese up into small piece. Combine cream cheese and heavy cream in a small pan, simmer over low heat, stirring occassionally until cream cheese has melted.
  • 5. Heat grill over medium high heat. Once good and hot, drain marinate off chicken and add chicken to hot grill, reduce heat to medium. Cook 5 to 7 minutes on each side or until chicken is done with no pink showing.
  • 6. Once chicken is done, remove from pan and slice into bite size pieces. Return to pan, cover and keep warm over a low heat until ready to add to pasta.
  • 7. Once cream cheese has melted; whisk in parmesan cheese, egg yolks, chives, garlic powder, red pepper flakes, salt and pepper. NOTE: Don't worry about the raw egg yolk, it will cook in between this warm mixture and the hot pasta.
  • 8. When pasta is done, drain reserving 1/2 cup of the hot liquid. Return pasta to pot and immediately add cream cheese mixture. Add some of the reserved water to loosen the sauce. Add chicken and bacon, toss to combine. Sprinkle top with some dried chives or fresh parsley and serve with a green salad and a roll. NOTE: if you feel you have too much chicken, store some in ziploc bag in the fridge to use in a salad for another day.
  • 9. NOTE: I had four pots and pans on the stove all at one time. This dish goes fast once it gets going. I started heating the cast iron grill first and then I started my water for pasta, started melting the cream cheese in the heavy cream, started frying the bacon and added chicken to hot stove top grill. It seemed to all come together nicely in the end.

1 (13 1/2 ounce) can skim evaporated milk
1 1/3 cups skim milk
3 tablespoons all-purpose flour
2 -4 garlic cloves, minced
2 teaspoons vegetable bouillon granules
3/4 lb boneless skinless chicken breast half (about 3)
2 teaspoons olive oil
1/2 teaspoon cayenne pepper
1/4 teaspoon fresh coarse ground black pepper
1 cup chopped fresh tomato
1 1/2 cups imitation crabmeat (about 6 ounces)
3 cups penne pasta (10 ounces)
2 quarts boiling water
1 tablespoon salt (optional)
2 tablespoons grated lowfat parmesan cheese (optional)
chopped fresh parsley (optional)

Steps:

  • Whisk both milks into flour in large non-stick frying pan until smooth. Add garlic and bouillon powder. Heat and stir on medium-low until boiling and thickened. Keep warm on low, stirring occasionally.
  • Sauté chicken in olive oil in non-stick frying pan for 5 minutes until slightly browned. Sprinkle with cayenne and pepper. Add tomato and crabmeat. Toss well until hot. Add to milk mixture. Stir. Keep warm.
  • Cook pasta in boiling water and salt in large pot or Dutch oven for 10 to 12 minutes until just tender. Drain.
  • Turn pasta into serving dish. Pour sauce over top. Toss to coat. Sprinkle with Parmesan cheese and parsley.
  • Makes 7 1/2 cups.
