Spinach, Bacon, and Onion Dip image

4 slices bacon, thinly sliced crosswise
1 medium yellow onion, diced medium
coarse salt and ground pepper
1 teaspoon all-purpose flour
2 packages (10 ounces each) frozen spinach, thawed and squeezed dry
1 cup whole milk
1/2 cup sour cream
1 bar (8 ounces) cream cheese
1/2 cup grated Parmesan
Crostini or pita chips, for serving

Steps:

  • Preheat oven to 350 degrees. In a medium saucepan, cook bacon over medium, stirring occasionally, until browned and crisp, 10 minutes. Drain bacon on paper towels. Discard all but 1 tablespoon fat from pan. Add onion to pan, season with salt and pepper, and cook, stirring occasionally, until tender, 8 minutes. Add flour and cook 30 seconds. Add spinach, milk, sour cream, and cream cheese. Cook, stirring, until cream cheese melts, 2 minutes. Stir in bacon and 1/4 cup Parmesan.
  • Transfer mixture to a 1 1/2-quart baking dish and top with 1/4 cup Parmesan. Bake until bubbling, 14 minutes. Heat broiler and broil until top browns, 3 minutes. Let sit 5 minutes. Serve dip warm with crostini or pita chips.

  • Cook 3 slices chopped bacon in a saucepan until crisp. Remove; discard all but 2 tablespoons drippings. Add 1 chopped small onion and 1 minced garlic clove,; cook 3 minutes. Sprinkle in 1 tablespoon flour; cook, stirring, 1 minute. Whisk in 1 1/2 cups milk,; season with salt and nutmeg,. Cook until thickened, 4 minutes. Stir in 1/2 cup shredded gruyere,, 1 pound thawed frozen chopped spinach, (squeezed dry) and the bacon. Cook 2 minutes.

From my favorite gal of all time!! Dip may made up to 2 days ahead of time, covered and refrigerated. Let stand 20 minutes before baking as directed. (These are Paula's directions, but I had to bake for a few minutes more, as well as place under the broiler for a few minutes to get the top browned). Prep time does not include thawing time for spinach and onions.

1 (10 ounce) package frozen chopped onions, thawed and squeezed dry

1 cup shredded mozzarella cheese
1/2 cup mayonnaise
corn chips, for serving

8 ounces cream cheese, at room temperature
1/4 cup mayonnaise
1/2 teaspoon dry English mustard
1/4 teaspoon cayenne pepper
1/4 teaspoon kosher salt
1/4 teaspoon Worcestershire sauce
1/2 cup plus 2 tablespoons shredded Parmesan
1/3 cup Onion Jam, recipe follows
3 strips bacon, cooked and crumbled
Chopped chives, for garnish
Serving suggestions: crackers, toasted bread and vegetables
1 tablespoon vegetable oil
2 yellow onions, thinly sliced
1 teaspoon kosher salt
2 tablespoons balsamic vinegar
1 teaspoon brown sugar

Steps:

  • Preheat the oven to 350 degrees F.
  • In a stand mixer fitted with the paddle attachment, beat the cream cheese until fluffy, about 5 minutes. Add the mayonnaise, mustard, cayenne, salt and Worcestershire, and continue to beat until smooth, about 5 minutes. Add 1/2 cup of the Parmesan and the Onion Jam, and mix on low speed until just combined. At this point, cook immediately or store the dip in the refrigerator until ready to serve.
  • Scoop the dip into a baking dish and top with the remaining 2 tablespoons Parmesan and the crumbled bacon. Bake until the cheese melts and the dip begins to bubble, 8 to 10 minutes. Garnish with chives and serve the dip with crackers, warm bread and vegetables.
  • In a large frying pan set over medium-low heat, add the oil and then the onions. Add the salt and cook, stirring often, until softened, about 5 minutes. Reduce the heat to low and add the vinegar, sugar and 2 tablespoons water. Continue to cook over low heat, stirring often, until the liquid is absorbed and the onions are rich golden brown, about 20 minutes. Spread the onion jam on a cookie sheet and cool to room temperature. Refrigerate any leftovers.

10 ounces thawed and squeezed dry frozen spinach
2 shredded and squeezed onions
24 ounces softened cream cheese
5 ounces shredded parmesan cheese

  • Brown and crumble a one pound package of bacon.
  • Thaw and squeeze dry a 10oz package of spinach.

Spinach and watercress, abundant in antioxidants, are no chore to eat when blended into this healthful yet indulgent take on spinach dip. Avocado lends it richness, and colorful crudites add crunch but not empty calories.

1 tablespoon extra-virgin olive oil
1 medium Vidalia or other sweet onion, thinly sliced
1 garlic clove, minced
8 ounces (6 cups) fresh spinach, stemmed
1 ounce (1 cup) watercress leaves, coarsely chopped
1/2 avocado, halved, pitted, and peeled
1 cup plain nonfat yogurt, preferably Greek
1 teaspoon finely grated lemon zest
1 tablespoon fresh lemon juice
1/2 teaspoon hot sauce, such as Tabasco
1/4 teaspoon coarse salt
Freshly ground pepper
Crudites (such as spears of English cucumber, peeled baby carrots, and trimmed radishes), for serving

Steps:

  • Heat oil in a large skillet over medium heat. Add onion, and cook until softened, about 8 minutes. Reduce heat to medium-low, add garlic, and cook, stirring occasionally, until onion and garlic are very soft and golden, about 20 minutes. Add spinach, and cook, tossing often, until wilted, about 4 minutes. Let cool slightly.
  • Puree mixture in a food processor until smooth. Add watercress, avocado, yogurt, lemon zest and juice, hot sauce, and salt, and season with pepper. Puree until smooth. Transfer to a bowl, cover, and refrigerate for at least 1 hour (or up to 3 days). Stir the dip, and serve with crudites.
