1 (2 1/2-pound) rotisserie chicken
1/3 cup mayonnaise
1/4 cup finely chopped dill

  • Whisk mayonnaise, dill, lemon juice, mustard, pepper, and 1/4 tsp. salt in a medium bowl.
  • Add asparagus and chicken slices to potatoes in steamer, cover, and steam until asparagus is crisp-tender and chicken is warmed through, about 3 minutes. Cucumber and dill is always a pleasant combination. When I made this the first time I didn't know what to expect. It has a nice crisp taste and is good on fresh salads.

1 6 inch piece seedless cucumber, peeled
1 clove garlic (use a small clove)
3/4 c mayonnaise
1 1/2 tsp lemon juice
1 tsp dry mustard
2 Tbsp fresh dill, chopped or 1 tbsp dry
salt to taste

Steps:

  • 1. Puree cucumber and garlic in food processor. Place puree in a fine mesh strainer, press down gently with a spoon and let drain. (Cucumbers are largely water, so if they are not well drained, the dressing will be too thin)
  • 2. Place remaining ingredients in food processor and blend together
  • 3. Add pureed cucumber and garlic. Mix together. If too thick, thin with a little water, a teaspoon at a time. Refrigerate for an hour (or longer) before serving.

1 (12 ounce) package small shape pasta (wagon wheel, small shells etc.)
1 (19 ounce) can chickpeas, drained and rinsed
1/2 cup chopped cucumber
1/2 cup chopped red onion
1/2 cup chopped green pepper
3/4 cup mayonnaise
3/4 cup plain yogurt
1/4 cup chopped fresh dill
1 lemon, juice and zest of
1 garlic clove, crushed
1/2 teaspoon salt

Steps:

  • Cook pasta according to directions or till just al dente. Drain pasta.

1/4 cup mayonnaise, preferably Best Foods or Hellmann's
1 tablespoon Dijon mustard
1 tablespoon fresh lemon juice
2 garlic cloves

3 green onions, coarsely chopped
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground pepper
1/2 pint cherry tomatoes
2 ears of corn
1 large nectarine
6 heads Little Gem lettuce
Olive oil

12-inch cast-iron skillet

Steps:

  • To make the dressing: In a food processor, combine the buttermilk, mayonnaise, mustard, lemon juice, garlic, dill, green onions, salt, and pepper and pulse until the dressing is smooth. Transfer to a tall 8-ounce Mason jar and refrigerate.
  • Prepare a campfire and fit it with a grill grate. Remove the dressing from the cooler and let it come to room temperature.
  • To make the salad: Once the flames die down, heat a 12-inch cast-iron skillet on the grate until hot but not smoking and roast the cherry tomatoes until blistered, about 3 minutes. Remove the tomatoes from the heat and grill the corn directly on the campfire grate, then cut the kernels from the cobs.   • Cut the lettuces in half lengthwise. Brush the cut sides with olive oil and sprinkle with salt and pepper. Grill on the campfire grate until soft and slightly singed, about 3 minutes per side. Plate the lettuce halves on a platter and drizzle with the dressing (give it a good shake first). Sprinkle the corn, tomatoes, and nectarine slices evenly over the top and serve with extra dressing on the side.
