This is very simple and just as impressive. I've posted the full-fat version, but you can make this lower fat by using a low fat cream cheese and a low fat/no fat mayo. You can make this up to 48 hours in advance and it will taste great, just give it a stir before serving.

8 ounces softened cream cheese
1 cup mayonnaise
2 medium peeled and chopped cucumbers
3 tablespoons sliced scallions
1 tablespoon freshly squeezed lemon juice
1 tablespoon freshly snipped dill weed
cayenne pepper
salt
pepper

Steps:

  • Beat the cream cheese until smooth.
  • Add the rest of the ingredients and mix until smooth and creamy.
  • Cover tightly and chill until ready to serve.
  • Garnish with additional dill sprigs and chopped red bell pepper if desired.

3 ounces cream cheese, softened (reduced fat is OK)
1/2 cup light sour cream
1/2 cup plain yogurt
2 tablespoons finely chopped fresh dill
1 English cucumber, peeled and finely chopped
6 green onions, finely chopped (white and light green parts)
1/4 teaspoon pepper
1/4 teaspoon salt

Steps:

  • In a mixing bowl, beat together cream cheese, sour cream, yogurt and dill until well-blended and creamy.
  • Mix in remaining ingredients and combine well.
  • Place in bowl. Garnish with fresh dill, if desired.
  • Chill 1-2 prior to serving.

1 cup reduced-fat plain yogurt
4 ounces reduced-fat cream cheese
1/2 cup chopped seeded peeled cucumber
1-1/2 teaspoons finely chopped onion
1-1/2 teaspoons snipped fresh dill or 1/2 teaspoon dill weed
1 teaspoon lemon juice
1 teaspoon grated lemon zest
1 garlic clove, minced
1/4 teaspoon salt
1/4 teaspoon pepper
Assorted fresh vegetables

Steps:

this is a cool refreshing dip, it is great on a cucumber (makes a nice fancy appetizer) it is wonderful with salt and vingear chips...you like cucumbers and garlic you will love this

4 oz cream cheese
1/2 c sour cream
1 clove garlic, minced
1/2 tsp garlic salt
1/4 tsp pepper
1 small onion(diced) i use 1t dried onion
1/2 c diced cucumber

Steps:

  • 1. Blend cream cheese and sour cream till well blended. Add seasonings. Mix well.
  • 2. Fold in onions and cucumbers. Refriderate at least 2 hours before serving. I found that it taste better and will thicken if refridgerated over night.
  • 3. Serve with fresh veges, chips, or crackers. I have served it on a cucumber slice. its elegant and makes for a nice appeititzer.

Don't let the WW fool you. This dip is delicious and I did fool my family. They loved it and didn't know it was a WW recipe. Cool and refreshing with a hint of mint! I use Greek fat free plain yogurt. Serve it with warmed pita wedges and/or fresh vegetables. Leftovers make a tasty topping for grilled chicken or lamb. Try it!
