3 cups fresh or thawed frozen cranberries, chopped
1 can (20 ounces) unsweetened crushed pineapple, drained
2 cups miniature marshmallows
1 medium apple, chopped
2/3 cup sugar
1/8 teaspoon salt
2 cups heavy whipping cream
1/4 cup chopped walnuts

Steps:

  • In a large bowl, mix first 6 ingredients. Refrigerate, covered, overnight., To serve, beat cream until stiff peaks form. Fold whipped cream and walnuts into cranberry mixture.

This is my favorite Thanksgiving dish! The sweetness is a nice contrast to the saltiness of the turkey. The walnuts and apples give a nice texture, but make sure they are chopped small enough. The mayo seems like a strange addition, but you don't taste it, and it improves the texture of the cream cheese. Enjoy!

1 (8 ounce) can crushed pineapple, drained and juice reserved
1 (16 ounce) can whole berry cranberry sauce, drained and juice reserved
1 ½ cups water, or as needed
2 (3 ounce) packages raspberry-flavored gelatin mix (such as Jell-O®)
1 (8 ounce) package cream cheese at room temperature
2 tablespoons mayonnaise
1 cup frozen whipped topping (such as Cool Whip®), thawed
1 tart apple, peeled and finely chopped
½ cup chopped walnuts
½ cup frozen whipped topping (such as Cool Whip®), thawed - or to taste

Steps:

  • Pour juice from crushed pineapple and cranberry sauce in a measuring cup and add enough water to equal 2 cups of liquid; bring to a boil in a saucepan. Remove from heat and dissolve raspberry gelatin in the liquid. Pour gelatin into a bowl and refrigerate until partly set, about 45 minutes.
  • Beat cream cheese with mayonnaise in a bowl with an electric mixer until fluffy; gradually beat partially set gelatin into cream cheese mixture. Gently fold 1 cup whipped topping into the mixture. Stir crushed pineapple, cranberry sauce, apple, and walnuts into gelatin mixture. Transfer to a serving bowl and refrigerate until set, about 4 hours. Serve frosted with 1/2 cup whipped topping, or as desired.

1 (12 ounce) package fresh cranberries
1 cup white sugar
1 (6 ounce) package red Jell-O® mix
1 (8 ounce) can crushed pineapple, drained
¾ cup orange juice
1 apple with peel, grated
1 cup chopped pecans
1 cup whipping cream
1 (8 ounce) package cream cheese, softened

Steps:

  • Process cranberries in blender or food processor; pour sugar over cranberries and stir to dissolve.
  • Bring 3/4 cup of water to a boil; stir in gelatin and let cool. Stir cooled gelatin into cranberries, and add pineapple, orange juice, apple and pecans. Mix well, cover and refrigerate overnight.
  • Whip cream and beat in cream cheese.
  • In a glass serving dish, layer half of the cranberry mixture, then the whipped cream mixture, then the remaining cranberry mixture.

My Aunt made up this recipe and my mom adapted it to have with our holiday family dinners. When my youngest nephew had it for the first time, he talked for weeks about "the pink stuff." So now that's the only name that it goes by.

1 can(s) whole cranberries
1 can(s) (the half size can 8 oz.) crushed pineapple
1 pkg cream cheese (8 oz)
1 pkg cool whip (8 oz)
2 pkg raspberry jello or cranberry jello (we like to use one of each, and the suger free variety does not change the taste)
1 apple (pealed, cored and cut into 1/2" chuncks)
1 c chopped walnuts
water

Steps:

  • 1. Empty the cranberries and pineapple into a sieve and strain out the liquid. You may have to stir up the fruit and press on it to get all the liquid.
  • 2. Put the liquid into a measuring cup and fill to 2 cups with water. Boil the liquid. and mix it with the two packages of Jello.
  • 3. Allow the jello to partially set for about 45 minutes. It should not be hard, if you stick a finger in the jello it should come out coating you finger with no lumps.
  • 4. About 15 minutes prior to taking the jello out of the fridge, mix the left over cranberries and pineapple with the apple chunks and walnuts.
  • 5. In a separate bowl whip the cream cheese until it is easily stirred and them add the cool whip. Dump in the partially set jello and mix well. It's ok if there are cheese chunks it adds to the overall presentation.
  • 6. Fold in the fruit and walnut mixture and transfer to a presentation bowl. (We put it in a beautiful blue pie plate.) Refrigerate for at least 3 hours until set, but it always tastes better if you make it the day before.

We were just blown away by the creativity of this delectable dish. It can most definitely pass for either a salad or dessert... and you can't help but feel a little extra swanky noshing out of a martini glass.

20 oz canned crushed pineapple, drained thoroughly
2 c fresh or frozen cranberries, thawed, processed finely
1 1/2 Tbsp granulated sugar
2 stalks celery, diced small
4 oz marshmellow creme
8 oz tub whipped topping
8 oz cream cheese, softened, room temp
1/4 c 2% milk
1/2 c powdered sugar (confection sugar)
2/3 c walnut pieces, or chopped walnuts

Steps:

  • 1. Drain pineapple thoroughly, strain, ring out any excess juices, set aside.
  • 2. In a food processor, add cranberries and chop fine, add to drained pineapple. (If cranberries are frozen, place under warm water for 2 minutes to thaw) add 1 1/2 T sugar while processing
  • 3. With a hand mixer, mix softened cream cheese until smooth, add 1/4 c. milk and 1/2 cup powdered sugar, mix until smooth.
  • 4. Add 4 oz marshmellow creme to cream cheese, stir until combined.
  • 5. In a bowl mix pineapple, cranberries, chopped celery.Add Cream cheese mixture, fold in 8 oz whipped topping and fold into mixture. Add chopped walnut pieces and fold until combined.
  • 6. Chill cranberry-pineapple salad in refrigerator for 20-25 minutes to an hour to chill.
  • 7. To Serve: a) add to Texas sized muffin pan, sprayed with cooking spray, level off and set in freezer for 10 min to chill. Turn out muffin pan onto a cookie sheet, with a spatula place one at a time on bib or green lettuce leafs; or b) Line a martini glass with leaf lettuce, add salad to 1 cup measuring cup and turn onto lettuce in glass, top with extra cranberries if desired.

1 medium lemon (zested to yield 1/2 teaspoon zest, juiced to yield 2 tablespoons juice)

salt & fresh ground pepper, to taste
1 large celery rib, sliced thin crosswise
3 tablespoons dried cranberries (Craisins)
1/4 cup toasted walnuts, chopped coarsely
1 head boston lettuce, leaves separated, rinsed, and dried

Steps:

  • Toss apples in 1 tablespoon lemon juice in medium bowl; set aside.
  • In small bowl, add remaining tablespoon lemon juice and zest; whisk in oil, then cream. Season to taste with salt and pepper.
  • Add celery, cranberries, and walnuts to apples. Drizzle dressing over fruit mixture; toss to coat.
  • Place a large leaf or two of lettuce onto each plate.
  • Spoon portion of salad onto each bed of lettuce and serve immediately.

I found this recipe last week on another web site and being the cranberry lover that I am, I knew I had to make it for Thanksgiving. It was delicious and very well received.

12 oz pkg. fresh cranberries
1 c white sugar
6 oz pkg. red jello (cranberry, raspberry, cherry)
8 oz can crushed pineapple, drained
1 c apple with peel, grated
1 c chopped pecans
1 c whipping cream
8 oz cream cheese, softened
3/4 c orange juice

Steps:

  • 1. Process cranberries in blender or food processor (I use a small electric chopper); pour sugar over cranberries and stir to dissolve.
  • 2. Bring 3/4 cup water to a boil; stir in gelatin and let cool. Stir cooled gelatin into cranberries; add pineapple, orange juice; apple and pecans. Mix well; cover and refrigerate overnight.
  • 3. Whip cream and beat in cream cheese. In a glass serving dish, layer half of the cranberry mixture, then the whipped cream mixture, then the remaining cranberry mixture. This makes a festive looking presentation. I would even consider adding orange zest or mandarin oranges to this recipe. I used Cherry jello as my grocer didn't have cranberry but I would probably use Cranberry or Raspberry over the Cherry. ENJOY!

AUTUMN SALAD WITH CREAMY CRANBERRY DRESSING

I came across this recipe in a local grocery store flyer a few years ago and it has easily become the most requested recipe by my friends and family. Its quick to make without a lot of preparation and it can be fun to change up the salad ingredients. I love it the way it is without any altering but I took it to our family Christmas dinner this year and instead of adding pears I used fresh mandarines and accidentally forgot the cheese - it was still a huge hit and not one bite left behind. I do prefer the flavour and the consistency of the dressing when refrigerated at least 5 hours as it will thicken up and allow the flavours to blend. I have also added one tbsp of lemon juice to regular milk instead of using buttermilk. Enjoy.
