1 package (8 oz) cream cheese, softened
1/2 cup sour cream
2 teaspoons Mexican seasoning
1 cup medium salsa
3 cups Original Bisquick™ mix
1 tablespoon Mexican seasoning
1 cup shredded Cheddar cheese (4 oz), chopped
1 lb chorizo sausage, cooked, drained, cooled
1 can (14.75 oz) cream style sweet corn
1/4 cup milk
About 40 small pitted black olives, drained (from 6-oz can)

Steps:

  • In small bowl, beat cream cheese and sour cream with electric mixer on low speed 30 seconds, scraping bowl constantly, until mixture is smooth. Add 2 teaspoons seasoning and the salsa; beat until blended. Cover and chill. Salsa can be made the day before and served warm or cold.
  • Heat oven to 450°F. Line 2 large cookie sheets with cooking parchment paper. In large bowl, mix Bisquick mix and 1 tablespoon seasoning. Stir in Cheddar cheese and chorizo; mix well. In small bowl, mix corn and milk. Stir corn mixture into Bisquick mixture until well combined.
  • Spoon 2 tablespoons mixture onto cookie sheet, press 1 olive into each, covering olive completely.
  • Bake 12 to 13 minutes or until golden brown. Serve nuggets with creamy salsa dip.

Similar to the makings of queso fundido and chile con queso, crumbled Mexican chorizo gets cooked in a thick, creamy cheese sauce flavored with onion, garlic and pickled jalapenos. Deepen the flavors by adding beer when cooking the sauce - any Mexican lager will do!

4 ounces fresh chorizo, casings removed, crumbled
Olive oil, as needed
1 small red onion, chopped
1 clove garlic, finely chopped
5 teaspoons all-purpose flour
1/2 cup Mexican lager-style beer, such as Negra Modelo
1/4 cup chopped pickled jalapeno, plus 1 tablespoon pickling juice
3/4 cup milk
4 ounces Monterey Jack cheese, finely diced (about 1 cup)
4 ounces whole-milk mozzarella, finely diced (about 1 cup)
2 tablespoons chopped cilantro
Warmed tortilla wedges, tortilla chips, bell pepper triangles or French fries, for dipping

Steps:

  • Cook the chorizo, stirring, in a medium skillet or a flameproof gratin dish over medium-high heat until golden, about 5 minutes. Remove with a slotted spoon and pour off any excess rendered fat, reserving about 1 tablespoon in the pan. If there is less than 1 tablespoon, add enough olive oil to make 1 tablespoon.
  • Reduce the heat to medium and cook the onions, stirring occasionally, until soft, 5 to 6 minutes. Add the garlic and cook, stirring, until fragrant, about 30 seconds. Sprinkle in the flour and cook, stirring, until the flour is golden, 1 minute. Pour in the beer and bring to a boil. Stir in the chopped jalapenos and pickling juice and cook 2 minutes. Gradually add the milk, whisking, and bring to a gentle boil until thickened, about 1 minute. Add the cheeses and reduce the heat to low. Cook, stirring frequently, until the cheese fully melts, about 3 minutes. Stir in the reserved chorizo. Transfer to a serving dish, garnish with the cilantro and serve warm with dippers.

Give me a bowl of chips and some warm dip and a good game!!! This dip is a staple at our house for that big game!! Hot and spicy so have your beer ready to wash it down!

Number Of Ingredients 5

1 lb chorizo (mexican sausage, mild or medium)
1 pkg softened cream cheese, 8 oz
4 clove garlic, minced (optional)
2 c cheddar cheese, shredded
1 c buffalo sauce or chipotle tabasco (i usually use 4 oz each)

Steps:

  • 1. Cook chorizo in skillet until no longer pink (if you haven't worked with chorizo, be sure to remove the casing..I basically squeeze it into the pan out of the package. it will cook the same way ground meat cooks). Drain
  • 2. place chorizo, and all ingredients back into the skillet and continuously stir until cheese is all melted and everything is mixed together.
  • 3. Serve warm with tortilla chips!
