Say hello to one of your next favorite recipes, Creamy Chipotle Chicken Breast! I am always trying to make new recipes that take less time to make but can still satisfy my Mexican taste buds, and I'm also always wanting to try new things and maybe get out of my comfort zone a little.

1 lb. of Chicken breast (cut into 4-oz. serving sizes*)
1 teaspoon ground garlic powder
Salt and pepper to taste
2 tablespoons of vegetable oil
1 cup of heavy cream
1 cup of milk (whole)
2 Chipotle peppers in Adobo from LA MORENA® Brand
1 Tablespoon of powdered chicken bouillon
2 Parsley sprigs (to garnish)

Steps:

  • Season the chicken breasts with garlic powder, salt, and pepper.
  • Heat oil in a large skillet to medium high.
  • Once the oil is hot, add the chicken breasts and cook for 3 minutes per side, turning once. They have to look lightly golden. Remove the chicken and place on a plate.
  • While the chicken is cooking, add the heavy cream, milk, LA MORENA®Chipotles in Adobo, and powdered chicken bouillon into your blender. Process for a couple of minutes until it has a fine texture.
  • Using a paper towel, clean up any excess oil from the skillet where you cooked the chicken. Turn the heat to medium and pour the creamy chipotle mixture in to slowly cook. Make sure to watch the heat, as the sauce has to be gently simmering, NOT boiling. Too much heat will affect the cream and it will curdle. Cook for 4 minutes and then add the chicken breasts.
  • Cook for 4 more minutes, turning the chicken breasts if needed to have an even cooking.

1 medium onion, chopped
1 cup sliced cremini mushrooms
3 cloves garlic, minced
1 (10 ounce) can CAMPBELL'S® Condensed Cream of Chicken Soup
1 ½ cups water
1 cup milk
1 tablespoon lemon juice
2 teaspoons Worcestershire sauce
4 cups uncooked curly egg noodles
½ cup frozen peas

Steps:

  • Season the chicken as desired. Melt the butter in a large deep non-stick skillet over medium-high heat. Add the chicken and cook, breaking up with a spoon, 8 minutes or until no longer pink.
  • Add the onion, mushrooms, and garlic. Saute 3 minutes or until slightly softened.
  • Stir in the soup, water, milk, lemon juice, and Worcestershire sauce; heat to a boil. Stir in the noodles. Reduce the heat to medium. Boil gently, uncovered, stirring often, 8 minutes.
  • Add peas. Cook, stirring often, 3 to 5 minutes or until noodles have reached desired tenderness.

A TexMex style stroganoff that will tickle your tongue! I love that even the noodles cook up right in the chicken breast and sauce making this a true one-dish meal. Hurray for fewer dishes to wash! I almost always have these ingredients on hand in my kitchen which makes this a gret go to meal when I am short on time and / or energy. If you like you can serve this with a simple green salad to increase your family's veggie intake. Serving this dish also gives me a great excuse to enjoy some great Mexican beer like Dos Equis (XX) or Modelo. :)

1 lb boneless skinless chicken breast, cut into cubes
1 medium onion, chopped
1 1/2 cups chicken broth (1 can)
1 cup mixed mushrooms, sauteed or 1 (8 ounce) can mushroom stems and pieces, undrained
8 ounces medium egg noodles, uncooked (4 cups)
1 chipotle chile in adobo, finely chopped and a little of the adobo if you like

Just like the popular beef version, but with chicken! Came up with this one night when my boyfriend was tired of our usual meals...he asked for beef stroganoff, chicken was what was defrosted so I made it with that. Has become a favorite! I like to make it with shells cause they really hold the sauce.

Number Of Ingredients 11

1 lb chicken breast, cut into chunks
1 tablespoon olive oil
1 lb pasta, any variety
1 medium sweet onion, diced
2 garlic cloves, minced
3 cups low sodium chicken broth
1 cup sour cream (full fat, or light, your choice)
2 tablespoons butter
2 tablespoons flour
salt
pepper

Steps:

  • Put a large pot of water on high heat to boil. Add pasta and cook to box's directions once boiling.
  • While water is boiling/pasta is cooking: heat oil in a large skillet and add onion.
  • Saute for 2-3 minutes until the onion begins to become translucent.
  • Add chicken and garlic, raise heat to medium high and cook until chicken starts to brown.
  • Push mixture to one side of the pan. In the empty side, add butter and melt. Add flour and cook for 1 minute to make a roux.
  • Carefully whisk in chicken broth. Bring to a simmer. Sauce should begin to thicken due to the roux.
  • Add the sour cream and mix thorougly.
  • Add salt and pepper to taste.
  • Mix with, or serve over pasta. Serve with French bread and salad for a deliciously easy meal.
