1 tablespoon oil
1 ½ lb chicken breast, cubed
1 teaspoon seasoned salt, divided
pepper, to taste
1 small onion, sliced
1 medium head broccoli
6 cups milk
1 lb bowtie pasta
1 cup shredded parmesan cheese
1 cup shredded mozzarella cheese

Steps:

  • Heat half of the oil in a large pot. Add in the chicken, season with half of the seasoned salt and pepper, and cook.
  • Once the chicken is nicely browned and cooked through, remove it from the pan. Set aside.
  • Add in remaining oil, onion, and broccoli. Cover for 2 minutes. Season with remaining seasoned salt and pepper. Cook and stir until the onions begin to become translucent.
  • Pour in milk and bring to a boil. Stir periodically so the bottom does not burn.
  • Once milk is bubbling, add pasta and stir frequently until pasta reaches your desired doneness (approximately 10 minutes at medium heat).
  • Add in Parmesan and mozzarella. Stir until cheese is melted.
  • Stir in chicken until well incorporated.

1 (16 ounce) package rotini pasta, uncooked
2 tablespoons butter
3 tablespoons extra-virgin olive oil
2 cups broccoli florets, finely chopped
2 tablespoons all-purpose flour
1 cup chicken broth
1 cup milk
salt and pepper to taste
⅛ teaspoon chipotle chile powder
2 cups Cheddar cheese, shredded
¼ cup onion, finely diced
1 pound ground chicken
1 cup sour cream

Steps:

  • Bring a large pot of lightly salted water to a boil. Add rotini pasta and cook until al dente, 7 to 10 minutes. Drain, cover, and set aside until needed.
  • Melt butter in a saucepan over medium-high heat, and stir in 1 tablespoon olive oil. Add 1 cup broccoli; toss and cook just until tender, about 5 minutes. Sprinkle broccoli with flour, and cook 1 minute. Stir in the chicken broth, and bring to a boil. Pour in the milk, and stir to blend. Season with salt, pepper, and chipotle pepper powder, if desired. Reduce heat to medium, and simmer mixture until sauce thickens, 8 to 10 minutes. Mix in 1 cup Cheddar cheese and stir until melted. Remove from heat.
  • Heat the remaining 2 tablespoons olive oil in another large skillet over medium-high heat. Stir in the onion, ground chicken, and remaining 1 cup of broccoli. Cook and stir until chicken is evenly browned and no longer pink, about 10 minutes. Season to taste with salt and pepper. Reduce heat, and cook until liquid is reduced, about 5 minutes.
  • Preheat oven broiler to High. Lightly grease 9x13 inch baking dish.
  • Toss the pasta with the broccoli sauce until evenly blended. Stir in the sour cream, if desired. Stir the broccoli sauce mixture into the chicken mixture. Spoon into the prepared baking dish. Top with remaining 1 cup Cheddar cheese.
  • Cook under preheated broiler until cheese melts and browns around the edges, 3 to 5 minutes.

1/3 cup mayonnaise
1/4 cup chopped fresh basil
1/4 cup chopped fresh flat-leaf parsley

4 cups chicken broth

This comes from a Pam Anderson recipe. I love creamy pastas like alfredos, etc... but don't like all the fat. This recipe is a great solution. By using 2 percent evaporated milk, instead of heavy cream, the fat content is cut considerably. The flavor and consistency is still wonderful, in my opinion. I love this recipe because: it's lower in fat; you can use left-over chicken (or cooked rotisserie chicken); cooking the broccoli in the same pot as the pasta saves an extra pot to wash, it's an easy one-dish meal! There are many variations you could try with this recipe, too. Notes: 1.this recipe calls for diced tomatoes - if you'd prefer a more traditional alfredo-type sauce, I think you could probably omit the tomatoes and it would be just fine. 2. Also, if you like your pasta spicier you could add more red pepper flakes than the amount called for. 3. I find it very helpful to have all my ingredients prepped/chopped and ready before I start cooking - especially for this recipe. 4. Make sure you reserve about a cup of the pasta cooking water - it helps to thin out the finished product, if necessary. Have fun and enjoy!

  • Bring about 2 quarts of water to a boil - add a tablespoon of salt to the boiling water.

1 cup cooked rice
1 (8 7/8 ounce) package dry alfredo sauce mix
1 1/2 teaspoons thyme
2 cups coarsely chopped broccoli florets

Steps:

  • Stir together broth, rice, alfredo sauce mix and thyme in a medium saucepan and bring to a boil. Reduce heat and simmer for 15 minutes. Stir iin broccoli and chicken. Cook for 5 minutes more.

6 cups chicken broth
2 tablespoons olive oil
1 shallot, minced
2 cups broccoli, cut into small florets
1/2 cup butter
3 tablespoons flour
1 cup cream, heated
1 cup half-and-half
1 cup cooked chicken breast, chopped
salt
pepper
parmesan cheese, grated

Steps:

  • In a soup pot, bring broth to a boil over med-high heat.
  • In a skillet; heat oil over med-high heat; saute shallot and broccoli 3 minutes.
  • Add to broth; decrease heat to medium.
  • Melt butter in skillet over medium heat.
  • Add flour; stir until mixture forms a paste.
  • When roux begins to bubble, stir in hot cream; whisk until smooth.
  • Add cream mixture to broth along with half-and-half and chicken.
  • Simmer, without boiling, 10 minutes.
  • Add salt and pepper to taste.
  • Remove from heat and serve with grated Parmesan cheese over the top.

2 cups reduced sodium chicken broth
1 cup milk (I used 2%)
1 teaspoon poultry seasoning
1/2 cup flour
2 cups water, divided
1 cup uncooked quinoa, rinsed
1/4 cup cooked, crumbled bacon (optional... sort of)
1 pound boneless skinless chicken breasts
2 teaspoons seasoning (like Emeril's Essence or any basic blend you like)
1/4 cup shredded Gruyere cheese (any kind will work)
3 cups fresh broccoli florets

Steps:

  • Sauce: Preheat the oven to 400 degrees and generously grease a 9×13 baking dish (seriously, be generous because it really really sticks to the sides). Bring the chicken broth and ½ cup milk to a low boil in a saucepan. Whisk the other ½ cup milk with the poultry seasoning and flour; add the mixture to the boiling liquid and whisk until a smooth creamy sauce forms. Assembly: In a large bowl, mix the sauce from step one, one cup water, quinoa, and bacon and stir to combine. Pour the mixture into the prepared baking dish. Slice the chicken breasts into thin strips and lay the chicken breasts strips over the top of the quinoa mixture. Sprinkle with the seasoning. Cover with foil and bake for 30 minutes. Broccoli: While the casserole is in the oven, place the broccoli in boiling water for 1 minute until it turns bright green and then run under cold water. Set aside. Bake: Remove the casserole from the oven, check the mixture by stirring it around in the pan, and if needed, cover and bake for an additional 10-15 minutes. When the quinoa and chicken are cooked, add the broccoli and a little bit of water (up to one cup) until the consistency is creamy and smooth and you can stir it up easily in the pan. Top with the cheese and bake, uncovered, for 5 minutes, or just long enough to melt the cheese. Notes You will know the quinoa is done when it is soft and looks as if it has popped open, with the germ of the kernel visible as a little spiral. If you want the chicken to get that browned exterior, leave the foil off for part of the cooking time, but be aware that the quinoa does take a lot longer to cook without the foil.

1 (14 ounce) can cream of chicken soup
1 (14 ounce) can cheddar cheese soup
1 (14 ounce) can chicken broth
1/2 teaspoon salt
1/4 teaspoon cajun seasoning (I used Emeril's brand)
1/4 teaspoon garlic salt (Lawrys)
1 cup sour cream
6 cups broccoli florets, lightly steamed, just fork tender (I cook it in boiling water for 3-4 minutes)
1 cup shredded cheddar cheese

Steps:

  • Place soups, chicken broth, salt, Cajun and garlic seasoning into a crock pot over low heat. Whisk until smooth. Place chicken in, pressing to the bottom. Cover lid and cook on low for 6 hours or on high for 3 hours.
  • When chicken is cooked, use 2 forks to shred into bite size pieces. Stir in sour cream and broccoli.
  • Serve over steamed rice and sprinkle with cheese.

4 boneless chicken breasts

paprika
1/2 teaspoon dried oregano, crumbled
1/2 teaspoon dried basil, crumbled
3 tablespoons olive oil
1 small onion, chopped
2 minced fresh garlic cloves (or to taste)
2 cups sliced fresh mushrooms
3 cups broccoli florets
1 cup cream
1 1/2 teaspoons Dijon mustard
1/2 cup grated parmesan cheese
1/2 cup minced fresh parsley

Steps:

  • Season chicken well with salt, pepper, paprika, oregano and basil.
  • Brown and cook the chicken breasts in oil on both sides until juices run clear and chicken is cooked through. Place the cooked chicken in a serving dish with high sides (to catch the sauce).
  • In the same skillet, saute the onions, garlic and fresh mushrooms until onions are soft (about 4-5 minutes).
  • Add broccoli florets, cream and mustard and bring to a boil. Reduce heat to low, cover and simmer for 5-6 minutes or until broccoli is crisp-tender and cream sauce is thickened. Remove from heat and stir in 1/2 cup Parmesan cheese.
  • Pour the sauce over chicken in serving dish.
