CAESAR SALAD TO GO: SHRIMP OR CHICKEN LETTUCE WRAPS WITH CREAMY CAESAR DRESSING

Caesar Salad to Go: Shrimp or Chicken Lettuce Wraps with Creamy Caesar Dressing image

This recipe requires no cooking and is served cold, so it makes a perfect low-carb on-the-go lunch, or a picnic for the park as well! Pack the dressing with an ice pack to keep it chilled out. If you think you don't like anchovies, try them in this dressing. They just taste salty and yummy!

Yield 4 servings

Number Of Ingredients 11

2 romaine lettuce hearts
1 pound fully cooked jumbo shrimp (from the seafood counter)
1 rotisserie chicken (available in many markets)
4 heaping tablespoons reduced-fat mayonnaise
1 garlic clove, crushed
Zest and juice of 1 lemon
2 tablespoons anchovy paste (optional-but the salad tastes better with it in)
1/2 cup grated Parmigiano-Reggiano or Parmesan (a few handfuls)
2 teaspoons Worcestershire sauce (eyeball the amount)
1 teaspoon coarse black pepper (eyeball it)
3 tablespoons extra-virgin olive oil (EVOO) (pour to the count of 4

Steps:

  • Cut the bottoms off the romaine and cut the hearts in half lengthwise. Wash the lettuce and separate the leaves. Let it dry in the dish draining rack while you prepare the rest of the menu.
  • Remove the tails from the shrimp and place the shrimp in a bowl or, if this is a picnic meal, pack for travel.
  • To remove the chicken meat from the chicken, cut the chicken breasts off first. Cut the legs and thighs off using kitchen scissors.
  • Slice the meat up on an angle. Arrange on a plate or in a plastic container.
  • Place the mayo, garlic, lemon zest and juice, anchovy paste, cheese, Worcestershire, and pepper in the blender and turn it on. Stream the EVOO into the dressing through the center of the lid. When the dressing is combined, use a rubber spatula to remove the thick dressing to a bowl or a plastic container.
  • Place the lettuce on a serving platter or pack in a large plastic bag or container to travel.
  • To assemble, spread some dressing onto a lettuce leaf. Fill the leaf with a large shrimp or sliced cold chicken, like a lettuce taco, and eat!

THICK AND CREAMY CAESAR SALAD DRESSING

Thick and Creamy Caesar Salad Dressing image

Where I live there is a restaurant chain called the Italian Bistro and I think they have the BEST Caesar salad dressing. I've been trying to duplicate it for quite a while. It is loaded with garlic and Parmesan cheese. It's very thick which is why it appeals to me. This recipe is very similar to the one I enjoy at the Bistro. In fact.. by George... I THINK I'VE GOT IT!! I hope you

COOKING LIGHT'S CREAMY CAESAR SALAD DRESSING

Cooking Light's Creamy Caesar Salad Dressing image

I don't know the month/date of the issue that I saved this from. It's my go-to caesar dressing when I want a quick dressing, or when I want something that's a little more kid-friendly than a classic caesar dressing. I wrote the recipe as-is from the magazine, but I don't buy/use fat-free mayo. I also just throw everything into my magic bullet and go, which works great, too!

CREAMY VEGETARIAN (NOT VEGAN) CAESAR SALAD DRESSING

Creamy Vegetarian (Not Vegan) Caesar Salad Dressing image

Contains egg but avoids the anchovies that are in all Worcestershire Sauces. (Read the label) Most restaurant dressings have anchovies, and if not most waitstaff are unaware that Worcestershire Sauce has anchovies. Also most hard cheeses are made with animal rennet so check that Parmesan. In Colorado, King Soopers deli has non-animal rennet Murray's Sartori Sarvecchio Parmesan. No cheese in dressing but consider this when you top your salad with Parmesan. Home made croutons are also the best - see additional recipe.

Time 20m

Yield 4 serving(s)

Number Of Ingredients 9

1 egg yolk
2 crushed garlic cloves
1/2 teaspoon prepared yellow mustard
1/2 cup olive oil
1 1/2 tablespoons lemon juice
1 tablespoon water
1/2 tablespoon balsamic vinegar
1/4 teaspoon salt
fresh ground pepper

Steps:

  • Wisk mustard, egg yolk and crushed (I use a garlic crusher) garlic.
  • Very, very, very slowly add olive oil and whisk to incorporate. (At first I add about 1/4 teaspoon at at crack) later I add 1/2 teaspoon at a time, wisk in to incorporate, then add another 1/2 teaspoons and so on and so forth.
  • When all the oil is added it will look and feel like soft creamy butter.
  • The combo of yolk, mustard and oil now will allow water to mix in (oil and water will now come together).
  • So -- add 1 tbsp water and incorporate.
  • Then add 1 tbsp lemon juice and incorporate.
  • Then add 1/2 tbsp balsamic vinegar and incorporate.
  • Then add 1/2 tbsp more lemon juice and incorporate.
  • Add salt and pepper.
  • Done.

2 tsps. Anchovy paste
1 tbsp. whole grain mustard
1 egg yolk, coddled

1 tsp. red wine vinegar

Steps:

  • Mash the roasted garlic with the salt and pepper to form a paste. Add the anchovy paste, whole grain mustard, egg yolk, lemon juice and Worcestershire sauce one at a time, mashing each time so that in the end you have a relatively smooth paste. Place in the refrigerator until ready to use and to allow the flavors to meld together.
