x cans butter beans , drained and rinsed
100g light soft cheese with garlic and herbs
2 tbsp snipped chives
4 tbsp breadcrumbs
1 tsp sunflower oil

Steps:

  • Heat the butter beans in a small pan for 3-4 mins. Remove a quarter of them to a bowl and mash with a fork until smooth and creamy. Stir back into the rest of the beans in the pan with the soft cheese and chives, then heat for a few mins more until warmed through.
  • Transfer to a small baking dish and sprinkle with breadcrumbs. Drizzle over oil and flash under a hot grill for 1-2 mins until the crumbs are crunchy and golden.

1 medium head cauliflower (about 2 pounds), cut into bite-size florets
2 cloves garlic, roughly chopped
6 tablespoons unsalted butter
1 1/4 teaspoons kosher salt
1/3 cup fresh bread crumbs (see Know-How, below)
3 tablespoons minced fresh flat-leaf parsley
Freshly ground black pepper
Lemon wedges

Steps:

  • Preheat the oven to 450 degrees F. Put the cauliflower on a baking sheet and scatter the garlic on top. Melt the butter in a medium skillet and toss 2 tablespoons with the cauliflower and garlic; set the rest aside in the skillet. Toss the cauliflower with 1 teaspoon of the salt. Roast until the cauliflower is quite tender and the edges are starting to brown, 20 to 25 minutes. Transfer the cauliflower to a serving bowl.
  • Reheat the remaining butter over medium-high heat until brown. Add the bread crumbs and cook, swirling the pan and tossing, until they are brown and crisp-this should take less than 1 minute. Pull the pan from the heat and toss the crumbs with the parsley and the remaining 14 teaspoon salt. Spoon crumbs over the cauliflower and season with pepper. Serve warm or room temperature with lemon wedges on the side.

1 pound fresh green beans, washed and trimmed
½ cup water
¼ cup Italian-style seasoned bread crumbs
¼ cup olive oil
salt and pepper to taste
¼ teaspoon garlic powder
¼ teaspoon dried oregano
¼ teaspoon dried basil
¼ cup grated Parmesan cheese

Steps:

  • Combine green beans and 1/2 cup water in a medium pot. Cover, and bring to boil. Reduce heat to medium, and let beans cook for 10 minutes, or until tender. Drain well.
  • Place beans in a medium serving bowl, and mix in bread crumbs, olive oil, salt, pepper, garlic powder, oregano and basil. Toss mixture until the beans are coated. Sprinkle with Parmesan cheese, and serve.

Kosher salt and freshly ground pepper
12 ounces green beans or yellow wax beans, or a combination, trimmed
1/4 cup extra-virgin olive oil, plus more for drizzling
4 slices rustic bread (5 ounces), crusts removed, torn into large pieces
2 tablespoons unsalted butter
10 ounces cocktail tomatoes or large cherry tomatoes, or a combination, halved
1 ounce Manchego cheese, finely grated (1/4 cup)

Steps:

  • Bring a large pot of generously salted water to a boil. Add beans and cook until bright green and crisp-tender, 4 to 6 minutes. Drain and transfer to a serving platter; lightly drizzle with oil.
  • Pulse bread in a food processor until coarse crumbs form (you should have 2 cups). In a medium skillet, heat 2 tablespoons oil and butter over medium. Add breadcrumbs and season with salt and pepper; cook, stirring, until golden and crisp, about 5 minutes. Transfer to a plate.

2 medium eggs
8 spring onions , trimmed (remove the root and half of the dark green part)
1 ½ tbsp olive oil
1 slice wholemeal bread , broken into chunky breadcrumbs
400g can cannellini bean , drained and rinsed
juice ½ lemon
1 tsp Dijon mustard
½ small red onion , finely chopped
handful parsley , roughly chopped
1 Little Gem lettuce , roughly chopped

Steps:

  • Cook the eggs in boiling water for 6 mins, or longer if you prefer them hard-boiled. Add the spring onions for the final 3 mins of cooking. Remove and run both under cold water. When cool enough to handle, pat the spring onions dry and peel the eggs.
  • Meanwhile, heat ½ tbsp of the oil in a non-stick frying pan. Tip in breadcrumbs and season. Fry for 3-4 mins until crisp and golden, then set aside.
  • Toss the spring onions with the beans, lemon juice, mustard, red onion, parsley, remaining oil and lettuce. Season and arrange halved boiled eggs on top. Sprinkle with the crumbs and eat straight away.
