A creamy easy quick casserole that is just true comfort food. Easy to prepare and always loved by family, friends and guests.

2 (15 ounce) cans water-packed artichoke hearts, drained and just rough chopped
8 ounces parmesan cheese, grated
1 1/4 cups gruyere, shredded (or you can use swiss cheese)
3 tablespoons minced garlic
3/4 cup mayonnaise
1 cup thin sliced fennel
1 teaspoon kosher salt, to taste
1 teaspoon ground black pepper, to taste
1 tablespoon olive oil to saute the vegetables
1 cup thin sliced onion
1 teaspoon paprika
2 tablespoons dried parsley
2 tablespoons butter
2 cups breadcrumbs

Steps:

  • Vegetables -- In a small sauce pan on medium heat, add the olive oil then onion, fennel, and garlic and cook on medium low to sweat and slowly cook until slightly soft, about 5 minutes. Remove and transfer to a medium size bowl.
  • Mix -- In that bowl with the onion and fennel, add the artichokes, cheese, garlic, mayonnaise, salt and pepper, and parsley. Spread in a greased 13x9 pan and sprinkle with paprika.
  • Topping -- Melt the butter in a measuring cup or small microwavable bowl just in the microwave for 10 seconds and then add the breadcrumbs and parsley and mix well. Sprinkle over the top of the casserole.
  • Bake -- Heat a oven to 350 degrees and cook on the middle rack for about 30 minutes uncovered until bubbly and golden brown on top. Serve and enjoy!

This doesn't look like it makes very much, but you won't want to eat a whole lot at any one time due to its richness. This is definitely one you don't want to substitute Miracle Whip for mayonnaise, and I've found the mayonnaise made with olive oil to taste the best. It's comfort food you can sort of feel OK about eating!

1 cup mayonnaise
1/2 cup grated parmesan cheese
1 garlic clove, crushed
1/2 teaspoon black pepper
1/2 cup French-fried onions

Steps:

  • Preheat oven to 350°F.
  • Combine mayonnaise, parmesan, garlic and pepper well; add artichoke hearts and mix.
  • Pour into small greased casserole dish and bake at 350F for 10 minutes.
  • Top with french fried onions and bake an additional 5 minutes, or until lightly browned.

2 1/2 lbs lean pork tenderloin or 2 1/2 lbs boneless pork shoulder, diced
1 teaspoon chopped fresh thyme
1 teaspoon fennel seed, crushed
2 cloves garlic, minced
2 cups dry white wine
2 fennel bulbs
1/2 cup all-purpose flour
4 ounces pancetta, cut into thin strips
3 tablespoons olive oil
2 onions, thinly sliced
1 1/2 lbs new potatoes
salt (to taste)
black pepper (to taste)
1 1/2 teaspoons grated lemons, zest of
1/2 clove garlic, chopped
2 tablespoons chopped fresh parsley

Steps:

  • Place pork in a marinade of thyme, fennel seeds, garlic and wine for 6 hours or overnight.
  • Drain pork from marinade, reserving marinade, and pat pork dry.
  • Remove fronds from fennel and reserve; cut bulbs into 6 sections and set aside until needed.
  • Cook pancetta in 2 tbsp of the olive oil until the fat renders, then place pancetta in the bottom of crockpot.
  • In the remaining oil in pan, add onions, fennel, and potatoes and cook for 5 minutes.
  • Place vegetables into the crockpot.
  • Dredge pork in flour and shake away excess.
  • Add remaining 1 tbsp of olive oil to pan and cook pork until browned on all sides.
  • Add marinade to the pan, season with salt and pepper, bring to a boil and cook 2 minutes.
  • Place pork/marinade mixture into crockpot and stir everything together.
  • Cover and cook on low for 8-10 hours or until pork is tender and cooked through.
  • To serve, garnish with lemon zest, garlic, parsley, and fennel fronds before plating.

This is a family favorite...spinach, fresh mushrooms, artichokes and cheeses make up a mouth-watering side dish that is creamy and delicious. This recipe has a lot of steps, but it is relatively easy and is well worth it. If you are a garlic lover, add an additional clove or two of pressed garlic to the mixture without roasting it first. This is my most requested vegetable casserole recipe, and it is a Thanksgiving favorite.

6 cloves garlic, unpeeled
4 (10 ounce) packages frozen chopped spinach - thawed, drained and squeezed dry
1 (14 ounce) can artichoke hearts, drained and chopped
¼ cup butter
1 (8 ounce) package sliced fresh mushrooms
3 green onions, finely chopped
1 (8 ounce) package cream cheese
1 cup sour cream
1 (8 ounce) can water chestnuts, drained and chopped
¾ cup grated Parmesan cheese
¾ cup real mayonnaise
2 teaspoons garlic salt
1 tablespoon lemon juice
1 cup French fried onion rings

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place garlic cloves in a small oven-safe dish, and roast in the preheated oven until softened and fragrant, about 20 minutes. Set roasted garlic cloves aside to cool.
  • Place the spinach in a large mixing bowl, and stir in the artichoke hearts.
  • Melt butter in a skillet over medium heat, and cook and stir the mushrooms until softened, about 10 minutes. Mix in the green onions, and cook and stir until onions are soft, about 5 more minutes. Transfer the mushrooms, green onions, and butter from the skillet into the bowl with spinach mixture.
  • Remove cream cheese from wrapping, place into a microwave-safe bowl, and cook in the microwave until warm and very soft, about 1 1/2 minutes. Stir the softened cream cheese into the spinach mixture, and add the sour cream, water chestnuts, Parmesan cheese, mayonnaise, garlic salt, and lemon juice. Squeeze the roasted garlic out of the garlic skins, and mix thoroughly into the spinach mixture. Spoon the casserole into a round 2-quart baking dish.
  • Bake in the preheated oven until the casserole is hot and bubbly, about 30 minutes. Spread French-fried onion rings over the top, return to the oven, and bake until the onion rings are lightly browned, 5 to 10 more minutes.
