HARD TIMES CREAMED TUNA
Times were tough for my newly divorced mom in the 70's. I remember eating creamed tuna on toast with a green salad on the side at least weekly. It was one of my favorite meals, and I had no idea we were eating it out of necessity. Times aren't so tough now, but I still make this about once a month. It's great when you're in a hurry, or have limited supplies on hand. My kids love it too!

Steps:
- Melt butter in a small saucepan over medium heat. Stir flour into melted butter until smooth and slowly stream milk into the mixture while whisking continually. Bring mixture to a simmer and cook until thickened, about 5 minutes.
- Reduce heat to medium-low. Stir tuna into the milk mixture; season with salt and pepper. Cook until tuna is warmed, 2 to 3 minutes.
- Ladle tuna mixture over toasted bread to serve.

SOS -- "STUFF" ON A SHINGLE
After being wounded in Italy in 1944, my grandfather returned home and improvised a dish he was often served in the military. The Army called it "Chipped Beef on Toast". The soldiers called it Something (I can't mention here) On a Shingle, and in classic military tradition, that name was reduced to SOS. My grandfather taught this recipe to my dad, who, in turn, also taught it to my mother and me. My mother, who is offended by the idea of having the first "S" of SOS on her table, calls it Creamed Beef on Toast. All measures are approximate. Because of this, the recipe multiplies well. Heck, you could make enough to feed an army. ;-)

Steps:
- Combine ground beef, onion and garlic on a large skillet or pot, and brown the beef.
- Once the beef is browned and your onions clear, add the flour. There are two important things to note here - (1) Do not drain the beef (2) Add enough flour to completely absorb all the liquid in the pan.
- Once all fluid is absorbed by the flour and you have a nice roux, add your milk. Again, remember that the measures are approximate. So, you want to add about twice as much milk as flour.
- *Do not be afraid of adding too much milk. If you do, you will just have to cook it for longer in the next step, but the flavor will reward you for your efforts.
- Season with salt and pepper and bring to a boil. Reduce heat and slowly cook away the fluid, stirring often, until you have a nice thick milk gravy.
- Spoon generous amounts over dry toast (like an open-faced sandwich) and enjoy.
- We never have it with a salad or veggies, but they would go well this dish.

CREAMED TUNA & CHEESE SWIRLS
Grew up with my mom making this recipe for dinner alot. Now I make it a lot for my kids. It is just good ole' comfort food in my home.

- Combine flour, baking powder and salt; cut in shortening till mixture resembles coarse meal. Add milk all at once and mix just until dough follows fork around bowl.
- Turn out on lightly floured surface; knead gently 30 seconds. Roll or pat 1/2 inch thick and spread with cheese. Roll as for jelly roll and cut in 1 inch slices. Bake on sprayed baking sheet at 450 for 12-15 minutes.
- Meanwhile make sauce by combining flour, salt, pepper and milk in saucepan over medium heat. Stir with wire whisk until flour is dissolved. Cook over medium heat until sauce thickens. Add tuna and stir to combine. Serve sauce over cheese swirls.

CREAMED TUNA ON TOAST
Steps:
- In a medium saucepan over medium-low heat, mix tuna and soup. Gradually stir in the milk. Cook 5 to 10 minutes, stirring occasionally, until slightly thickened.
- Toast the bread. Pour equal amounts of the tuna mixture over each slice of toasted bread and season with salt and pepper to serve.

MOM'S CREAMED TUNA
Mom's creamed tuna on toast was her go-to meal on a busy day. Boil a couple of eggs, open a few cans, toast some bread and, "Viola!" dinner is served. To me, it's comfort food that I enjoy to this day. I think of Mom every time I make it.

- In a medium saucepan or skillet, over medium heat, stir together soup and milk; heat until it simmers. (Density of condensed soups vary; add the amount of milk that seems appropriate.)
- Add tuna, stirring gently to combine; continue heating until mixture is simmering hot.
- Fold chopped eggs into tuna mixture; continue heating for about 20 to 30 seconds, enough to heat the egg.
- Remove from heat; serve hot over toast, English muffins, noodle or rice. Garnish as desired. Store leftover creamed tuna in airtight container in refrigerator. Reheat on stovetop or in microwave.
CREAMED TUNA THE OLD FASHIONED WAY NO PEAS!!
This is the max comfort food, well, maybe after Mac and Cheese. Serve this on toast or biscuits. I love it on Bisquick biscuits.

- Thaw frozen peas in a collendar.
- Melt the margarine in a saucepan.
- Add the flour and blend.
- Add the milk, stirring constantly to prevent clumping and stir until creamy.
- Add the tuna, peas, salt and pepper and warm through.
- As the tuna is warming, toast bread.
- After toasted, cut in triangles and spoon tuna mixture over the toast.
