A Cream soup mix that can easily be made dairy-free. Good to eat on its own, or to put in your favorite recipe calling for cream soup.

1 cup non-fat powdered milk (or replace with soy milk powder for a dairy free option.)
1 tablespoon onion flakes
2 tablespoons cornstarch
2 tablespoons chicken bouillon
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
1/4 teaspoon black pepper

Steps:

  • Combine mix ingredients.
  • To make soup- add 2 c water.
  • Cook over medium heat, stirring constantly until thick.
  • CREAM OF MUSHROOM SOUP-Add sliced mushrooms.
  • Can also be mixed up to use in recipes that call for cream soup.

1/3 cup dry soup mix (mushroom, leek, onion, etc)
1/4 cup nonfat dry milk powder
4 teaspoons cornstarch
1 1/2 teaspoons dry chicken soup base or 1 1/2 teaspoons chicken bouillon
1 teaspoon dried onion flakes
1 dash dried thyme
1 dash dried dill weed
1 dash celery salt

Steps:

  • Mix dry milk, cornstarch, soup base, onion flakes, thyme, dill and celery salt.
  • For equivalent of 1 can cream of chicken soup combine and heat 1/3 cup dry mix and 1 1/4 cups water.
  • For equivalent of 1 can cream of mushroom soup combine and heat 1/3 cup dry mix, 1 1/4 cups water, 2 ounces finely chopped mushroom pieces and 1 teaspoon salt.
  • For equivalent of 1 can cream of celery soup combine and heat 1/3 cup dry mix, 1- 1/4 cups water and 1/8 cup celery flakes.

2 cups nonfat dry milk powder
3/4 cup cornstarch
1/4 cup reduced-sodium chicken bouillon granules
1 teaspoon onion powder

  • In a large bowl, combine all ingredients. Store in an airtight container., For a condensed cream soup substitute: Whisk 1/3 cup mix and 1-1/4 cups water in a small saucepan until smooth. Bring to a boil over medium heat. Cook and stir for 2 minutes or until thickened. Cool. Use as a substitute for one 10-3/4-oz.-can condensed cream of chicken, celery or mushroom soup. , For 1-1/2 cups soup: Whisk 1/3 cup mix and 1-1/2 cups water in a small saucepan until smooth. From my "Heart Healthy Cookbook" of delicious healthy recipes from Edina, MN in 1995. Make 9, 10 ounce cans of soup. This is much less expensive and contains far less sodium than canned soups. Add sautéed chopped mushrooms, chopped celery, or bits of cooked chicken to resemble the cream soup you usually use.

2 cups instant nonfat dry milk powder
3/4 cup cornstarch
1/4 cup wyler's very low-sodium instant chicken bouillon granules or 1/4 cup wyler's very low-sodium beef bouillon cube
5 tablespoons dried onion flakes
1/4 teaspoon black pepper
1 teaspoon dried basil
1 teaspoon dried thyme

Steps:

  • Mix all ingredients together in a medium bowl and store in an air-tight container.
  • To substitute one 10 3/4 ounce can of cream soup, use 1/3 cup mix plus 1 1/4 cups water.
  • Combine in a medium saucepan and cook until thick.
