1 cup heavy cream
3/4 cup sugar, divided
1 (8-ounce) package cream cheese, at room temperature
1 teaspoon vanilla extract
1 (7-ounce) package ladyfingers
1 cup strong black coffee
1 teaspoon cocoa powder

Steps:

  • Have 4 (8-ounce) wine glasses ready.
  • In a chilled bowl combine 3/4 cup of heavy cream and 1/4 cup sugar. Whip with a hand mixer until soft peaks form. Cover and refrigerate until ready to use.
  • In a large bowl combine the cream cheese, 1/4 cup heavy cream, vanilla and the remaining 1/2 cup of sugar. Whip with a hand mixer until light until fluffy.
  • Reserve 4 ladyfingers for garnish. Using1 lady finger at a time, snap or cut in half, then dip it quickly into the coffee, and drop it into the bottom of a wine glass. Repeat with the other 3 glasses. Put a heaping tablespoon of the cream cheese mixture on top of the ladyfingers in each glad. Do another layer of ladyfingers dipped in coffee, another of the cream cheese mixture, then 1 more layer of ladyfingers. Top with remaining filling and dollop with the whipped cream. Break the reserved 4 ladyfingers in half and insert 2 halves into the top of each glass.
  • Put the cocoa powder into a small sieve and tap it gently over each glass to dust the tops. Refrigerate for at least 1 hour before serving.

Tiraimisu is one of my favorite desserts, but sometimes it's hard to find marscapone cheese. This easy recipe uses cream cheese instead. My mom got this recipe from Martha Stewarts Everyday Food magazine a while ago and we have been making it ever since.

3 tablespoons instant espresso powder
3 tablespoons boiling water
1 1/2 cups cold water
8 ounces cream cheese, softened
3/4 cup heavy cream
1/3 cup sugar
2 (3 ounce) packages ladyfingers
unsweetened cocoa powder, for dusting

Steps:

  • In a small mixing bowl stir together espresso powder and boiling water until dissolved. Stir in cold water, set aside.
  • In a medium mixing bowl with an electric mixer on medium speed beat cream cheese, cream, and sugar until fluffy.
  • Spread a few tablespoons of cream cheese mixture in the bottom of a 2 quart serving dish. One by one, dip a third of the ladyfingers in espresso, then arrange in bottom of dish. Spread with a third of the cream cheese mixture. Repeat twice with remaining ladyfingers, espresso, and cream cheese mixture. Cover and chill for up to one day.
  • Dust tiramisu with cocoa just before serving.

PHILADELPHIA FABULOUS TIRAMISU

We love Tiramisu but I was always intimidated to make it until I found this recipe on the Kraft Website. It is so easy to make and delicious! You can substitute real Whipped cream for the Cool Whip for a more authentic taste if you like. You can also substiute Pound cake for the lady fingers. I use an extra tablespoon of Coffee and dip the Lady fingers for a stronger Coffee taste. I guess what I am trying to say is this recipe is very adaptable for individual tastes! Do not leave the liqour out though! lol

2 (3 ounce) packages ladyfingers, split, divided
2 tablespoons maxwell house instant coffee
1 tablespoon sugar
1 cup boiling water
2 (8 ounce) packages Philadelphia Cream Cheese, softened
1/2 cup sugar
2 tablespoons almond flavored liqueur or 2 tablespoons brandy
2 cups thawed Cool Whip Lite
1 teaspoon unsweetened cocoa powder

Steps:

  • ARRANGE 1 pkg. of the ladyfingers on bottom of 13x9-inch dish. Dissolve instant coffee and 1 tablespoons sugar in boiling water. Brush 1/2 cup of the coffee mixture over ladyfingers in dish.
  • BEAT cream cheese with electric mixer on medium speed until smooth. Add 1/2 cup sugar and liqueur, mixing until blended. Gently stir in whipped topping.
  • SPREAD one half of the cream cheese mixture over ladyfingers. Top with remaining ladyfingers; brush with remaining coffee. Spoon remaining cream cheese mixture over ladyfingers. Dust with cocoa. Refrigerate 4 hours or overnight.

1 tablespoon butter, melted
1/3 cup chocolate graham cracker crumbs (about 2 whole crackers)
2 tablespoons plus 2 teaspoons instant coffee granules
1 tablespoon hot water
1/3 cup strong brewed coffee
1 teaspoon rum extract
1 package (3 ounces) ladyfingers, split
4 packages (8 ounces each) cream cheese, softened
1-1/3 cups sugar
1/3 cup heavy whipping cream
1/3 cup sour cream
2 teaspoons vanilla extract
4 eggs, room temperature, lightly beaten
Baking cocoa

Steps:

  • Preheat oven to 325°. Brush bottom of a 9-in. springform pan with butter; sprinkle evenly with cracker crumbs. Securely wrap a double thickness of heavy-duty foil (about 18 in. square) under and around pan. , Dissolve coffee granules in hot water; cool and set aside. Combine brewed coffee and rum extract; brush over flat sides of split ladyfingers. Arrange ladyfingers, rounded sides out, along sides of prepared pan., Beat cream cheese and sugar until smooth. Beat in cream, sour cream, vanilla and reserved dissolved coffee. Add eggs; beat on low speed just until combined. Pour into prepared pan. Place springform pan in a larger baking pan; add 1 in. hot water to larger pan., Bake until center is just set and top appears dull, 70-80 minutes. Remove springform pan from water bath; remove foil. Cool cheesecake on a wire rack 10 minutes; loosen sides from pan with a knife. Cool 1 hour longer. Refrigerate overnight, covering when completely cooled., Remove rim from pan. Just before serving, dust cheesecake with cocoa.
