8 ounces cream cheese, room temperature
3/4 cup raspberry chipotle sauce

Steps:

  • Place cream cheese on shallow serving dish.
  • Pour raspberry chipotle sauce over top of cream cheese and allow it to drizzle down sides.

Yummo! I tried this with a bit of cream cheese on a bagel and boy were my taste buds happy. It's a bit smoky from the chipotle peppers, and then you taste the fruity jelly. This would be great on grilled meats too... especially chicken.

3 c fresh mangos, diced (I buy the fresh mango spears in the produce section at the supermarket)
1 can(s) chipotle peppers in Adobo sauce (drained), 12 oz
2 c apple cider vinegar
6 c sugar
1 pkg 6 ounce total liquid pectin

Steps:

  • 1. Sterilize and prepare pint canning jars and lids as directed.
  • 2. Put 3 cups fresh mangos and the drained chipotle peppers in food processor or blender. Blend until smooth.
  • 3. In a heavy 6 quart pan, add 6 cups sugar and 2 cups apple cider vinegar. Stir over medium heat until sugar is dissolved.
  • 4. Once sugar is dissolved add mango pepper mixture. Bring to a rolling boil that you can not stir down for 10 minutes. Turn off heat and let cool for ten minutes.
  • 5. Add 6 oz or two pouches of the liquid pectin. Bring back up to a rolling boil for 5 minutes. Turn off heat.
  • 6. Ladle into jars. I use the hot water bath process. Some people just put the lids turn the jars upside down and the lids seal either way.
  • 7. Enjoy as a snack with bagels and cream cheese. I use the jelly to make crostini appetizers and I use it for cooking.

1 (8 oz.) pkg. cream cheese, softened
1 (14 oz.) can Eagle Brand® Sweetened Condensed Milk
or 1 (14 oz.) can Eagle Brand® Low Fat Sweetened Condensed Milk
1/3 cup lemon juice
1 tsp. vanilla extract
1 (9-inch) frozen deep-dish pie crust, baked
Fresh fruit (blueberries, strawberries, bananas*)
Smucker's® Seedless Red Raspberry Jam, or Strawberry Jelly (optional)

Steps:

  • BEAT cream cheese in large bowl with an electric mixer until fluffy. Gradually beat in sweetened condensed milk until smooth. Stir in lemon juice and vanilla. Pour into baked pie crust.
  • REFRIGERATE 3 hours or until set. Arrange fruit on top of pie. If coating berries, stir jam or jelly until smooth. Brush berries with jam and serve.
  • *If using bananas, dip in lemon juice before placing on pie to keep them from turning brown. Do not coat with jam.

12 oz cream cheese (from two 8-oz packages), softened
1 cup shredded sharp white Cheddar cheese (4 oz)
1/2 teaspoon onion powder
1/2 teaspoon ground mustard
1/2 cup chopped pecans
1/2 cup apricot preserves
2 teaspoons finely chopped gingerroot
2 teaspoons chopped chipotle chiles in adobo sauce (from 7-oz can)
48 crackers

Steps:

  • In food processor, place cream cheese, Cheddar cheese, onion powder and mustard. Cover; process, scraping side of bowl if necessary, until well mixed. Add pecans. Cover; process with on-and-off pulses 2 or 3 times until mixed.
  • Using parchment paper, cut out a star shape 7 inches in diameter. Spoon the cheese spread evenly onto the shape, using a table knife to shape the star. Turn onto a serving plate; remove the parchment paper.
  • In small bowl, mix preserves, gingerroot and chiles. Spoon over cheese star. Serve with crackers.
