1/2 cup unsalted butter, melted
1 1/2 cups fine cookie crumbs (use graham crackers, vanilla or chocolate wafers, gingersnaps or shortbread cookies)
2 (10 ounce) packages cream cheese, at room temperature
1 cup sugar
4 large eggs
1 teaspoon lemon zest
1/2 teaspoon vanilla extract
1/4 teaspoon salt
1 1/2 cups sour cream, at room temperature

Steps:

  • Preheat the oven to 325°F.
  • Lightly brush the inside of a 9-inch pie or cake pan and the outside of a smaller pan with some of the melted butter.
  • In the bowl of a food processor, combine the crumbs and remaining butter.
  • Pat the mixture evenly into the pan and press it down with the bottom of the smaller pan.
  • Bake until firm and lightly browned, about 15 minutes.
  • Cool on a wire rack.
  • In the bowl of a mixer fitted with the whisk attachment, beat the cream cheese and sugar for 2 minutes.
  • Add the eggs one at a time, scraping down the sides of the bowl frequently.
  • Beat in the lemon zest, vanilla and salt.
  • Fold in the sour cream by hand.
  • Scrape the filling into the crust and smooth the top.
  • Bake until the cake is barely set, about 45 minutes.
  • Cool in the pan on a wire rack, then cover and refrigerate for at least 3 hours or overnight.

  • Preheat oven to 350 degrees. In the bowl of an electric mixer fitted with the paddle attachment, cream butter and 1/2 cup plus 2 tablespoons sugar until light. Add flour, cornmeal, and salt, and mix until well combined. Press mixture onto the bottom and 3/4 of the way up sides of a 10-by-3-inch springform pan to form a neat crust. Place in the oven, and bake until lightly golden, 20 to 25 minutes. Remove pan from oven, and place on a wire rack. Gently press sides of crust back into place if necessary. Let cool to room temperature.
  • Reduce oven to 325 degrees. In the bowl of an electric mixer fitted with the paddle attachment, beat cream cheese, mascarpone, and remaining 1 1/4 cups sugar on low speed until smooth and well combined. Add eggs and egg yolk, one at a time, beating on low speed after each addition until combined, scraping down sides of bowl with a rubber spatula as necessary.
  • Add cream, vanilla extract, and orange and lemon zests; beat just until combined. Do not overbeat. Pour mixture into cooled shell; place in oven; bake until set but still wobbly in center, 65 to 70 minutes. Turn oven off, and allow cheesecake to sit in the oven 1 hour more. Remove cheesecake from oven, and place on a wire rack to cool. When completely cool, chill at least 2 hours or overnight. Remove outside ring of springform pan.
  • Combine stewed rhubarb with raspberries. Spoon fruit over cheesecake immediately before serving.

Steps:

You can make the cheesecake part the day before or even earlier and freeze it until you're ready to do the rest. Plan to make this when you have plenty of time and won't have to rush. Cooling/chilling/freezing time is not included in the prep time so be sure to allow at least 4 or 5 hours for that. Tip: Because the frosting uses pumpkin puree but not the whole can, I measure it out into freezer jars, mark it and save it for the next time I make this frosting.

  • The cheesecake: Preheat the oven to 325*F. Place a large oven safe pan on the lower rack of the oven. Place a kettle of water on the stove to boil. Spray a 9-inch spring-form pan with nonstick spray similar to Baker's Secret.
  • Cut a parchment circle, line bottom of springform pan and spray parchment with non-stick spray.
  • Wrap foil around and up the sides of your springform pan. Tuck the points around the top edge to secure it.
  • In a large bowl, use mixer to blend the cream cheese until it is smooth and creamy, 1 to 2 minutes. Add sugar and salt, miz approximately 2 more minutes. Scrape down the sides of the bowl periodically. Add the eggs, one at a time, mixing thoroughly after each one.
  • Add sour cream, whipping cream and vanilla. Mix until smooth.
  • Pour the batter into prepared pan. Set pan in your large oven safe pan inside preheated oven. Pour the boiling water into the large pan so it reaches 1/2 way up the side of the springform pan.
  • Bake the cheesecake for 45 minutes. It should be just set.
  • Carefully remove the cheesecake pan from the water bath. Cool on a rack for at least 20 minutes. Run a knife around edge and continue to cool completely.
  • Carefully place a plate on top of cooled cheesecake layer and flip it over onto plate. Remove parchment paper.
  • Cover in plastic wrap and freeze.
  • The cake: Preheat the oven to 350 degrees F.
  • Spray two 9-inch round cake pans with nonstick spray like Baker's Secret. Cut a round of parchment paper, line the pan and spray again with non-stick spray. I always use cake strips for every cake I bake so that my cakes always have nice, flat tops. So if you will be using them, soak them and attach them now.
  • In a large bowl, use an electric mixer to combine the oil and sugars. Mix until thoroughly combined. Add eggs, one at a time, beating after each addition. Mix in the pumpkin. Beat well.
  • In a separate bowl, whisk together the flour all other dry ingredients.
  • Add the dry ingredients to the wet ingredients, alternating between the wet and dry ingredients until everything is combined.
  • Pour the batter into your 2 prepared pans.
  • Bake 30 to 35 minutes, or until toothpick inserted in the center comes out clean.
  • Cool the cake in the pans for at least 15 minutes and then remove to wire rack, remove parchment and cool completely.
  • The frosting: In a large bowl, use an electric mixer to combine the cream cheese, butter, pumpkin, spices and vanilla. Add 2 cups of powdered sugar and mix until combined. Add 1 additional cup of sugar slowly and continue to mix until smooth and creamy. If you frosting is too thin, carefully add a little bit of sugar. If it's too stiff, carefully add a little bit of milk or cream.
  • If you did not use cake strips on your pans, carefully level your cakes now. Put the first cake layer on your cake plate. Remove the cheesecake from the freezer, unwrap it and put it on top of the first layer. If the cheesecake is larger than the cake layer, wait 15 minutes for the cheesecake to soften slightly and trim it to fit. Put the 2nd cake layer on top. Frost the top and sides of the cake.
  • Keep cake refrigerated until served.
  • Tip- I usually have leftover frosting. It is wonderful on pancakes or pumpkin muffins!

  • bake for about 1 hour 20 minutes, check after 1 hour- dont open the oven before 1 hour. outside should be set and golden, the middle should jiggle a little but not be liquid. turn off oven and keep the door closed, let cool at least 1 hour in the oven, cool completely and refrigerate 6 hours or overnight.
  • top with whipped cream or praline sauce if desired.

1/2 cup sugar
1 teaspoon vanilla extract
1 teaspoon lemon juice
1 graham cracker crust

Steps:

  • Mix the first 5 ingredients in a blender.
  • Pour into graham cracker crust.
  • Bake at 350 for 35 to 45 minutes or until knife inserted comes out clean.

This is similar to a cheesecake filling but there is no baking involved. I make this every week for my husband as he loves it so much. I make it low fat by using Splenda. He eats this every night and has still managed to lose 30 pounds. I serve with fresh strawberries and whipped cream to make it look like a sundae.

1 (8 ounce) package low-fat cream cheese
1/4 cup da vinci sugar-free vanilla syrup
1 (8 ounce) container heavy whipping cream
1/2 cup Splenda granular
1 teaspoon vanilla extract

Steps:

  • In your mixer add the 8 oz block of cream cheese and 1/4 cup of Splenda.
  • As you mix that on low speed add in the Da Vinci syrup. it will look soupy at first but will start to thicken up again.
  • When it is well mixed, put it in another bowl to sit while you mix the fluff part in your mixer, I don't wash out the mixer at this point either as soon we will put both parts together, add in the Whipping cream, vanilla extract and the other 1/4 cup of Splenda.
  • Mix until stiff peaks form and you have whipped cream.
  • Add back your cream cheese mixture and beat on high until well blended.
  • Place in a bowl and store in the refrigerator until dessert time.
  • I top with fresh berries and a bit of whipped cream.
