Chicken, Craisin, and Cashew Bow-Tie Pasta Salad image

This is my favorite chicken pasta salad! The tangy dried cranberries and crunchy cashews combine wonderfully in a creamy pasta salad that is substantial enough for a main dish or perfect as a summer side dish. It is pretty enough for company and can be made up to a day a head. We served this as a side dish at our summer wedding reception five years ago and I still get compliments.

4 cups cooked chicken breasts, diced
6 cups bow tie pasta, cooked al-dente
1 1/2 cups green grapes, sliced in half
1 1/2 cups red grapes, sliced in half
2 (5 ounce) cans water chestnuts, drained and quartered
1 (10 ounce) can pineapple tidbits, drained
2 cups celery, thinly sliced
1/2 cup scallion, thinly sliced (green onions)
2 cups cashews, whole and halves
2 cups craisins (dried cranberries)
1 (16 ounce) bottle hidden valley brand coleslaw dressing
1/2 cup mayonnaise
1/2 cup Miracle Whip

Steps:

  • In a large bowl mix all salad ingredients together, except cashews and Craisins.
  • Whip together Dressing ingredients. Toss dressing with the mixture in the large bowl.
  • Let this mixture marinate in the fridge for 12-24 hours.
  • Mix in cashews and Craisins just before serving. Serve cold.
  • *Note: You could use almonds instead of cashews, but I prefer the cashews. You could also use a different brand of coleslaw dressing, but I've had the best results with Hidden Valley brand. *.

I had a can of chicken, no celery and I wanted to make chicken salad for lunch! I searched 'Zaar until I found something I liked and then I just kept on going adding more and more. So here it is, the Chicken Salad recipe from Shellbelle tweeked up a bit!

1 (12 ounce) can chicken, drained
1 tablespoon light mayonnaise
mustard, to taste
black pepper, to taste
3 dill pickle spears, diced
garlic powder, to taste
adobo seasoning, to taste
alfalfa sprout (I am a little fuzzy on the exact amount... I just grabbed them and chucked them in!)
1 -2 ounce snow peas
1/2 granny smith apple, diced
1 tablespoon oil
1 tablespoon red wine vinegar

Steps:

  • Put all ingredients minus the oil and vinegar in a mixing bowl and mix together.
  • Whisk red wine vinegar and oil together in a small separate bowl until well blended.
  • Pour the oil and vinegar mix into the salad and stir all together.
  • Refrigerate until ready to serve.

I love chicken salad, mostly because it's so easy to do. This one is a nice change from the usual with the addition of craisins. The cream cheese makes it super creamy, but I leave it out sometimes and bump up the mayo instead.

1/2 cup mayonnaise
3 -4 ounces softened cream cheese
1 teaspoon curry powder
1 teaspoon salt
1 teaspoon pepper
2 cups cooked chicken breasts, finely chopped
1/3 cup crushed pineapple (reserve a few tablespoons of the juice)
1/4 cup dried cranberries
1 tablespoon onion, finely chopped
4 celery ribs, finely chopped
sourdough bread, for serving

Steps:

  • In a bowl, combine mayonnaise, cream cheese, and seasonings until well-blended. Add chicken and mix.
  • Stir in crushed pineapple, cranberries, onion, and celery. Add desired amount of pineapple juice for flavor and consistency.
  • Spread on bread of your choice to make a sandwich.

This is a very nice chicken salad and simple to make. Kids love it. I love to serve it in a croissant and half them, for a great sandwich tray. You can stuff a tomato or simply top a little on some salad green's.

12 1/2 ounces premium chunk white chicken meat packed in water
1/2 cup mayonnaise (or more)
1/2 small onion, chopped
1/4 cup craisins (dried cranberries-can use raisins)
1/3 cup almonds, slivered
1 celery, chopped
1 tablespoon honey
1 tablespoon butter
salt & pepper

Steps:

  • Drain chicken place in mixing bowl, separate with fork.
  • Chop onions and celery add to mixing bowl along with mayo, craisens and honey.
  • Brown almonds in saucepan with butter, stirring often until browned add to mixing bowl.
  • Season with salt and pepper mix again.

A basic chicken salad recipe with some added goodness. Try changing it up by adding either 1 teaspoon curry or cumin.

2 large stalks celery, diced
1 red bell pepper, seeded and diced
¼ red onion, diced
½ cup sweetened dried cranberries (such as Craisins®)
6 tablespoons mayonnaise
6 tablespoons sour cream
salt and ground black pepper to taste
1 (4 ounce) package feta cheese, crumbled
⅓ cup toasted sliced almonds

Steps:

  • Mix chicken, celery, red bell pepper, red onion, and cranberries in a large bowl.
  • Stir mayonnaise and sour cream together in a separate bowl; pour over the chicken mixture and stir to coat. Season mixture with salt and pepper.
  • Cover bowl with plastic wrap and refrigerate 8 hours to overnight.
  • Stir feta cheese and almonds through salad to serve.
