2 cups fresh or frozen cranberries, halved
3/4 cup sugar
3 cups miniature marshmallows
2 cups chopped apples
1/2 cup chopped nuts
3/4 cup pineapple tidbits, drained
1 cup halved green grapes
1 cup heavy whipping cream, whipped

Steps:

  • Combine cranberries and sugar; let stand 30 minutes. Add next 5 ingredients and mix well. Gently fold in whipped cream; chill.

1/4 cup pecans
1/4 cup walnuts
1/4 cup sour cream
2 tablespoons thinly sliced chives
2 tablespoons mayonnaise
1 tablespoon honey
1 tablespoon fresh lemon juice
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
3 stalks celery, thinly sliced
2 crisp apples, such as Pink Lady or Gala, cored and cut into 1/2-inch pieces
1 cup green grapes, halved
1/2 cup dried cranberries

Steps:

  • Preheat the oven to 350 degrees F. Spread the pecans and walnuts on a rimmed baking sheet and bake until lightly toasted, about 6 minutes. Cool completely and roughly chop.
  • Stir together the sour cream, chives, mayonnaise, honey, lemon juice, 1/2 teaspoon salt and pepper to taste in a large bowl. Add the celery, apples, grapes, cranberries and nuts and toss to combine; season with salt and pepper to taste. Serve immediately.

I make this salad all year long, but it is especially great for Thanksgiving and Christmas. Just freeze a few bags of cranberries to use at a later date. I know this will become a tradition to anyone who tries it, it's delicious! Garnish with frosted cranberries and mint leaves, if desired. For frosted cranberries, wet cranberries with water, and roll in sugar.

1 envelope unflavored gelatin
1 cup cold water, divided
1 package (3 ounces) cranberry gelatin
2 cups boiling water
1 can (14 ounces) whole-berry cranberry sauce
1/2 to 1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/8 to 1/4 teaspoon salt
2 medium tart apples, peeled and diced
1 cup chopped walnuts

Steps:

  • Sprinkle unflavored gelatin over 1/4 cup cold water; let stand for 5 minutes. In a bowl, dissolve softened gelatin and cranberry gelatin in boiling water. Stir in cranberry sauce until blended. Add the cinnamon, ginger, salt and remaining cold water. Cover and refrigerate until almost set. Fold in apples and walnuts. Pour into an ungreased 2-1/2-qt. serving bowl. Refrigerate until firm.

This is an old family recipe. I don't know where it came from originally. I am made to bring this salad every Thanksgiving, my sister says it's not really Thanksgiving without it! It does sit overnight to mellow the cranberries, but the prep is quick.

12 -16 ounces fresh cranberries
1 (10 ounce) bag mini marshmallows
1 cup sugar
1 cup heavy cream
1 tart green apple, chopped
1 cup red seedless grapes, halved
1/2 cup broken walnuts or 1/2 cup pecans

Steps:

  • Rinse the cranberries and remove any stems or leaves.
  • Grind the cranberries and marshmallows together using a meat grinder or chop in a food processor.
  • Turn the cranberry mixture into a bowl and add the sugar.
  • Stir well, then cover and refrigerate overnight.
  • Next day, whip the cream to soft peaks, then gently stir into cranberry mixture.
  • Add the chopped apple (do not peel it), halved grapes and nuts and just mix through.

1 1/2 c good quality mayonnaise (I use Hellmans)
1 1/2 c sour cream
3 Tbsp honey
4 1/2 c tart apples, peeled and diced (granny smiths are the best apple for this recipe)
3 c celery, diced
1 1/2 c walnuts, chopped
3 c red seedless grapes, halved
1 c dried cranberries
1 orange, zested
1 lemon, zested
2-3 c miniature marshmallows

Steps:

  • 1. In a medium-sized bowl mix together the mayo, sour cream, and honey for the dressing. Refrigerate until ready to use.
  • 2. In a very large bowl, mix together the grapes, walnuts, celery, and cranberries.
  • 3. Mix in the peeled and diced apples, lemon zest, and orange zest.
  • 4. Mix in mini-marshmallows.
  • 5. Pour dressing mixture over apple mixture.
  • 6. Mix thoroughly until all ingredients are coated. Cover and refrigerate until ready to serve. Mix again right before serving.

2 c cranberry juice
3 oz pkg. lemon jello
1/4 tsp salt
1 c chopped red apple, skin on seeds out
1/2 c chopped celery, strings removed
1/4 c walnut pieces

Steps:

  • 1. Heat 1 cup cranberry juice just to boiling. Dissolve jello in hot juice. Add remaining juice and salt. Chill until consistency of egg whites, about an hour and a half. Fold in celery, nuts and apples. Pour into a bowl or mold and chill until firm. May be poured into 6 individual molds, if desired.

This is an adaptation of one of Emeril's Waldorf Salad recipes. The key to making it delicious is using very hearty, crunch lettuce. Softer lettuce turns to mush with the mayo dressing. You can sub any bleu cheese for the Stilton. It makes a great healthy lunch or a nice side to a beef or pork dish.

1/3 red onion

1 pear
1/4 cup dried cranberries

1 pinch salt
1 pinch black pepper
1 pinch cayenne pepper
1/2 teaspoon honey, more if desired

  • 2. If too spicy from cayenne, add another touch of honey to balance it out.

1/3 c sugar
1 c boiling water
3 1/2 c cranberry juice cocktail
1 c chopped apple
1/2 c chopped celery
1/2 c chopped walnuts

Steps:

  • 1. In a large bowl, mix gelatin and sugar. Add boiling water and stir until gelatin is completely dissolved. Add cranberry juice; chill till mixture is slightly thickened.
  • 2. Fold in apple, celery and walnuts. Pour into 8" or 9" square pan and chill until firm. To serve, cut into squares.
