CRANBERRY VODKA TONICS

1 pound fresh cranberries
1 cup sugar
2 teaspoons vanilla extract or 1 vanilla bean, split lengthwise
3 cups vodka
1 liter tonic
Lime slices, for garnish

Steps:

  • Combine the cranberries and sugar in a medium saucepan over medium heat. Add the vanilla extract or split vanilla bean and cook, stirring, until the cranberries burst, 5 to 6 minutes.
  • Divide the cranberry mixture between 2 large mason jars. Divide the vodka between the jars. Cover and refrigerate for 1 week. Strain out the cranberries. Store the flavored vodka in a clean jar in the refrigerator.
  • For each drink, pour 2 ounces cranberry vodka over ice in a tall glass; top with tonic. Garnish with a slice of lime.

CRANBERRY-ORANGE-CINNAMON VODKA TONIC

1 cup granulated sugar
6 fresh or frozen and thawed cranberries
One 2-inch strip orange peel
2 tablespoons freshly squeezed orange juice
1 shot (1 1/2 ounces) best quality cinnamon vodka
1 teaspoon orange liquor, such as Triple Sec
Plain, cranberry or orange flavored tonic water

Steps:

  • For the simple syrup: Bring the sugar and 1 cup water to a boil in a small saucepan. When the sugar is completely dissolved, remove the saucepan from the heat and cool the syrup to room temperature.
  • For the vodka tonic: Muddle the cranberries, orange peel and 1 to 2 tablespoons simple syrup (depending on how sweet you like your drink) in a rocks glass. Add the orange juice, vodka and orange liquor, fill 3/4 of way with the tonic and add ice cubes. Serve immediately. Reserve the remaining simple syrup for another use. It will keep in the refrigerator, covered, for up to 1 month.

2 (12-ounce) bags fresh cranberries
1 cup sugar
1/2 cup water
3 1/3 cups chilled tonic water
1 1/4 cups gin
3 tablespoons plus 1 teaspoon fresh lime juice

Steps:

  • Bring cranberries, sugar, and water to a simmer in a 3- to 3 1/2-quart saucepan, then simmer, uncovered, stirring occasionally, until berries just begin to pop, about 2 minutes. Drain cranberries in a fine-mesh sieve set over a 1-quart glass measuring cup, then reserve 2 cups cranberries and force remaining berries through sieve into syrup. Discard solids remaining in sieve, then add reserved cranberries to syrup. Cool to room temperature. Transfer to a pitcher and chill until cold, about 2 hours.
  • Add remaining ingredients to syrup, stirring gently to combine. Serve drinks over ice in 8- to 10-ounce glasses.

1 pound cranberries
1 cup sugar
2 teaspoons vanilla extract or 1 vanilla bean, split
1 bottle tonic
Lime slices, for garnish
One 750-milliliter bottle vodka

Steps:

  • Place cranberries, sugar and vanilla in a medium saucepan. Place pan over medium heat and stir. Simmer cranberry mixture until the berries burst, about 5 to 6 minutes.
  • Divide mixture in half and pour into large, clean mason jars. Pour vodka into the jars to cover the berries. Set aside and allow to sit for 1 week. After 1 week, strain out the cranberries and store cranberry vodka in a clean jar in the refrigerator.
  • To serve: Pour 2 ounces of vodka mixture over ice in a tall glass and top with tonic. Garnish with a slice of lime.
