5 medium sweet potatoes, peeled and cut into 1-inch pieces (about 1 1/2 pounds)
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
1/2 cup cranberry juice cocktail
3 tablespoons dark brown sugar
2 tablespoons butter
1/2 teaspoon ground cinnamon
1/4 cup chopped toasted almonds

Steps:

  • Preheat the oven to 400 degrees F.
  • On a baking sheet, toss together the sweet potatoes, oil and some salt and pepper. Roast until the potatoes are golden brown and cooked through, 30 to 40 minutes.
  • In the meantime, in a small saucepan over medium-high heat, reduce the cranberry juice by half. Add the brown sugar, butter and cinnamon, stirring to dissolve and incorporate.
  • When the potatoes come out of the oven, add them to a large bowl. Pour the glaze over top and toss to coat completely. Serve topped with the toasted almonds.

1/2 cup gin
2 cups port
6 sprigs fresh thyme
6 juniper berries
4 venison steaks, 6 ounces each
Salt and freshly ground pepper
3 tablespoons olive oil
2 tablespoons unsalted butter
1 onion, peeled and finely chopped
2 stalks celery, finely chopped
2 carrots, peeled and finely chopped
1/2 cup port wine
1/4 teaspoon Mexican cinnamon
1/4 teaspoon allspice
1/2 cup cranberry juice
2 cups chicken stock
2 tablespoons cold unsalted butter
1/4 cup fresh or frozen cranberries, coarsely chopped
Salt and freshly ground pepper
4 large sweet potatoes, peeled, cut into large cubes and cooked until soft
1 stick unsalted butter
1 teaspoon chipotle puree
2 tablespoons maple syrup
Salt and freshly ground pepper

Steps:

  • Combine gin, port, thyme and juniper berries in a medium shallow baking dish. Add the venison and turn to coat. Cover and marinate in refrigerator for 30 minutes. Heat oil in a large saute pan over high heat until almost smoking. Remove the venison from the marinade and shake off excess. Season with salt and pepper to taste. Cook on one side until golden brown. Turn over, reduce heat to medium and continue cooking until medium-rare, 3-4 minutes.
  • Heat butter in a medium saucepan over medium-high heat. Add the onions, celery and carrots and cook until soft. Raise the heat to high and add the port, cook until dry. Add the spices, cranberry juice, and chicken stock. Strain the sauce and discard solids. Return to pan to heat, whisk in the cold butter, stir in cranberries, and heat through. Season with salt and pepper to taste.
  • In a bowl mash potatoes with rest of ingredients.

1 lb sweet potato, peeled and sliced very thin
4 boneless skinless chicken breast halves
1 (16 ounce) can whole berry cranberry sauce
1/4 cup olive oil, DIVIDED, enough to coat potatoes & some for mixture
1/2 teaspoon ground ginger (*I use more)
1/2 teaspoon salt (optional)
1/4 teaspoon white pepper, adds a bit of heat
0.5 (1 ounce) envelope dry onion soup mix, low sodium version

Steps:

  • Preheat oven to 350°.
  • Peel potato and slice thin. Place evenly in a 8x8 baking dish sprayed with non-stick spray.
  • Alternately, you can slice potatoes, drizzle with EVOO' and roast them ona baking sheet at 400° until slightly tender before lining the 8x8 baking dish with them and placing chicken over.
  • Place chicken breasts on top of potatoes.
  • Combine all other ingredients and pour over chicken.
  • Bake uncovered for 50-60 minutes until chicken is done and potatoes are tender.

½ cup cider vinegar

1 fresh jalapeño, seeded and minced
1 teaspoon allspice
½ teaspoon powdered ginger
FOR THE SWEET POTATOES:
6 sweet potatoes
6 teaspoons canola or olive oil

½ cup sour cream

Steps:

  • PREPARATION MAKE THE CHUTNEY: Slowly melt the butter in a large saucepan over medium heat. Add red onion and red and green peppers. Sauté for 1 minute. Add vinegar, brown sugar, currants, raisins and cranberries. Cook over medium heat for 20 minutes. Add jalapeño, allspice and ginger. Cook, stirring occasionally, for another 10 minutes. MAKE THE SWEET POTATOES: Heat oven to 350 degrees. (Use 1 large sweet potato to serve 2 as a side dish, or 1 smaller sweet potato per person.) Wash and dry each sweet potato, then rub with 1 teaspoon of canola oil and sprinkle with 1 teaspoon each of sea salt and cracked pepper. Bake for 1 hour and 10 minutes or until soft in the center. While sweet potato is hot, cut in half and top with 1 tablespoon fresh sour cream and 1 tablespoon chutney. Serve immediately.

2 tablespoons butter or margarine
1/2 teaspoon salt
1/2 cup soft bread crumbs (about 1 slice bread)
1/4 cup dried cranberries
1/4 cup coarsely chopped pecans
2 tablespoons butter or margarine, melted

Steps:

  • Place sweet potatoes in 3-quart saucepan; add enough water just to cover potatoes. Cover and heat to boiling; reduce heat. Simmer covered 20 to 25 minutes or until potatoes are tender when pierced with a fork; drain. Return potatoes to saucepan. Heat potatoes over low heat about 1 minute, shaking pan often to keep potatoes from sticking and burning, to dry potatoes.

1/2 c soft bread crumbs (about 1 slice bread) - optional: japanese style panko seasoned bread crumbs
1/2 c dried cranberries
1 Tbsp brown sugar
1/4 c coarsely chopped pecans
2 Tbsp butter, melted

Steps:

  • 1. Place sweet potatoes in 3-quart saucepan; add enough water just to cover potatoes. Cover pan and heat to boiling; reduce heat. Simmer covered 10 to 15 minutes or until potatoes are tender when pierced with a fork; drain. Return potatoes to saucepan. Shake pan with potatoes over low heat to dry (this will help mashed potatoes be fluffier).
  • 2. Heat oven to 350 degrees. Mash potatoes in warm saucepan and mix well with 3 tablespoons melted butter, 1 T. brown sugar, 1 t. cinnamon and 1/2 t. salt. Mix with potato masher or electric mixer on low speed until no lumps remain. Spoon into ungreased 1-quart casserole. Mix remaining ingredients; sprinkle over potatoes.
  • 3. Bake uncovered about 30 minutes or until potatoes are hot and topping mixture is golden brown.
  • 4. NOTE: You can make these potatoes a day ahead. Just follow the directions through Step 2, then cover and refrigerate up to 24 hours. Bake uncovered 45 to 60 minutes or until potatoes are hot and topping mixture is golden brown.

Cranberry Streusel Sweet Potatoes image

Delicious, not especially sweet and simple! A great addition to your holiday table. I used 1/3 cup panko bread crumbs instead of the soft crumbs and it made a lovely crunch to the topping. You may make the sweet potato part the day before and then cook with streusel 30 minutes before serving.

6 medium sweet potatoes, peeled
2 tablespoons butter, melted
1/2 teaspoon salt

Steps:

  • Mash potates and mix well with 2 tablespoons melted butter (I mixed them in a table top mixer so my hands were free to do other stuff - made a lovely smooth fluffy texture!).
  • Spoon into ungreased 1-quart casserole.
  • Mix remaining ingredients; sprinkle over the potatoes.
  • Bake uncovered at 350 degrees for about 30 minutes or until heated through and streusel mixture is golden brown.

This came from the November Good Housekeeping magazine. The picture looked absolutely delicious. I am posting for safe keeping. You can prepare and arrange the sweet potatoes and syrup separtely up to 1 day ahead. Refridgerate separately. Allow both to come to room temperature before baking. Select sweet potatoes the same size so they cook evenly.

4 lbs sweet potatoes, peeled (5 Med)
1 1/2 teaspoons salt
1 cup pure maple syrup
1 1/2 cups cranberries (half of a 12 oz bag)
3 tablespoons butter (no substitutions)

  • .In a covered 6-quart sauce pan, heat whole sweet potates with salt and. enough water to cover to boiling on high.
  • reduce heat to low and simmer for 30 minutes or.

  • set aside until cool enough to handle.
  • Meanwhile, in a 1-quart saucepan
  • heat maple syrup on high till boiling.
  • Reduce heat to medium.
  • boil gently 10 to 15 minutes.

  • Stir in cranberries

  • cook just until cranberries pop.
  • about 5 minutes longer.
  • preheat oven to 400°F.
  • Cut cooled sweet potates crosswise in 1 inch thick slices.
  • arrange slices in a shallow 3 quart ceramic or glass baking dish.
  • overlapping slices if necessary.
  • Spoon maple-cranberry syrup evenly over potatoes.
  • Bake uncovered.
  • 20 minutes or until hot.
