This is a WONDERFUL dessert for Thanksgiving or Christmas. It's even fabulous on a brunch table. And it's so easy . . . Mix it in one bowl! Enjoy!

2 eggs
1 1/2 cups sugar
1/2 cup butter, melted
1 cup flour, sifted
1/2 cup pecans, chopped
2 cups cranberries, whole (fresh or frozen)

Steps:

  • Preheat oven to 325 degrees.
  • Grease 10-inch pie pan.
  • In a medium bowl, combine eggs, sugar, butter, flour, pecans and cranberries.
  • Pour into prepared pan.
  • Bake 50-60 minutes.
  • Best when served warm.
  • I usually make this by doubling the recipe. I bake it in a 13x9 pan for 70-80 minutes.

  • Dice cranberry sauce into small cubes.
  • Add pineapple and marshmallows.
  • Fold in whipping cream.
  • Top with nuts (optional).
  • Chill and serve.

FILLING
2 1/2 c cranberries, fresh
1/2 c sugar
1/2 c nuts, chopped
CRUST
2 eggs
1 c sugar
1/2 c butter, melted
1 c all purpose flour

Steps:

  • 1. preheat oven to 325 degrees
  • 2. place filling - cranberries , chopped nuts and sugar- in bottom of pan (8x8 or 9" pie)
  • 3. beat 2 eggs, add 1 cup sugar and mix.
  • 4. add 1/2 cup melted butter and 1 cup flour, mix well.
  • 5. pour over cranberry mixture. bake 1 hour until top is golden and not cracked.

2 cups all-purpose flour
2 tablespoons sugar
3 teaspoons baking powder
1/2 teaspoon salt
2 eggs
1 cup milk
1/4 cup butter, melted
1 cup jellied cranberry sauce

Steps:

  • In a large bowl, combine the flour, sugar, baking powder and salt. In another bowl, whisk the eggs, milk and butter. Stir into dry ingredients just until moistened.
  • Fill 12 greased muffin cups one-fourth full. Drop a rounded tablespoonful of cranberry sauce into each cup. Top with remaining batter.
  • Bake at 400° for 12-15 minutes or until muffin tops spring back when lightly touched. Cool for 5 minutes before removing from pan to a wire rack. Serve warm. Yield: 1 dozen.

1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
2 sticks butter, room temperature
3/4 cup packed dark brown sugar
1/2 cup granulated sugar
2 large eggs, beaten
1 1/4 teaspoons pomegranate juice
1 1/2 cups rolled oats
3/4 cup sweetened coconut flakes
1 1/2 cups dried cranberries

Steps:

  • Preheat oven to 350 degrees F.
  • In a medium bowl, whisk the flour, baking soda, and ground cinnamon. In large bowl, combine the butter, dark brown sugar, and granulated sugar with a hand mixer. Beat until fluffy, about 2 minutes. Add the beaten eggs and the pomegranate juice and mix until well incorporated. Add the flour mixture in batches and beat on medium for 2 minutes, scraping the bottom and sides. With a rubber spatula, fold in the oats, coconut, and cranberries and mix well. With an ice cream scoop, form the dough into balls and place onto 2 parchment lined cookie sheet at least 1-inch apart. Bake for 14 to 15 minutes. Remove from oven and transfer to a wire rack to cool.

3/4 cup melted margarine (11/2 sticks)

  • Pour sugar(1/2c)over the cranberries, then the nuts.

1/2 cup cranberry juice
2 tablespoons lemon juice
1 (3 ounce) package raspberry Jell-O gelatin
1 (15 ounce) can whole berry cranberry sauce
1/2 cup walnuts (chopped)

Steps:

  • Boil pineapple juice, cranberry juice and lemon juice together. Add jello. Remove from heat and stir in cranberries. Put in fridge till almost set. Add pineapple and nuts. Add a half cup of chopped celery if you like. Can Substitute Cherry Jello if preferred.
