Spicy Jalapeno Cranberry Sauce is sweet and spicy, adding an exciting relish for any meal, especially Thanksgiving and Christmas. The sauce cooks in 15 minutes and will be fully thickened after full cooling. May be made the day before using.Yield: 2 1/2 cups

2 Jalapeno Peppers (seeded and diced)
1/2 teaspoon Kosher Salt
1/2 cup Light Brown Sugar
1/2 cup Granulated Sugar
1/2 cup Orange Juice
1/2 cup Water
1/2 teaspoon Orange Zest
12 ounces Cranberries

Steps:

  • In a large saucepan combine the jalapeno peppers, salt, sugars, orange juice, water and orange zest. Bring to a simmer over medium heat and add the cranberries.
  • Simmer for 15 minutes, stirring periodically (cranberries will pop while cooking). Remove from heat and cool to room temperature. Transfer to a sealed container and fully chill. NOTE: the sauce will thicken as it cools.

1 pound cranberries (about 4 cups), thawed if frozen
Finely grated zest and juice of 1 lime
1 1/4 cups sugar
1 teaspoon ground cumin
Kosher salt
1/4 cup chopped pickled jalapenos, plus 2 tablespoons brine from the jar

Steps:

  • Put all but 1 cup cranberries in a saucepan. Add the lime juice, sugar, cumin, a pinch of salt, the jalapenos and brine and 1/4 cup water. Bring to a simmer over medium heat; cook, stirring occasionally, until the berries burst and the sauce thickens, 15 to 20 minutes.
  • Stir in the remaining 1 cup cranberries and cook until softened, 3 to 4 minutes. Remove from the heat and stir in the lime zest. Let cool, then transfer to a serving dish and refrigerate at least 3 hours.

Through some experimintation, I finally developed a most marvelous Cranberry Sauce that has just enough peppery taste without being overpowering.

12 ounces fresh cranberries or 12 ounces frozen cranberries
1 cup water
1 cup granulated sugar
2 small jalapeno peppers, seeded and diced fine
2 teaspoons fresh lemon juice
1/2 cup sherry wine

Steps:

  • Rinse cranberries in cold water; drain.
  • In a medium size saucepan mix water and sugar and bring to boil on medium-high heat; stir to dissolve.
  • Add cranberries and Jalapeno peppers and return to boil.
  • Reduce heat, cover and boil gently, for 10 minutes, stirring occasionally.
  • Add lemon juice and sherry and stir well to blend.
  • Remove from heat and let cool completely at room temperature.
  • Refrigerate in a glass container with lid.
  • Serve with turkey or chicken.
  • CAUTION when handling the Jalapeno peppers.
  • Wear plastic gloves, or wash hands thoroughly after handling, using any toothpaste.
  • Then wash again with soap and water.
  • You can also use a mixture of bleach and water to remove all pepper heat.

12 ounces fresh cranberries
orange, zest of, , finely grated
orange, juice of
2 teaspoons tequila
1/2 cup sugar
1 jalapeno pepper, seeded and finely chopped

Steps:

  • Add enough water to the orange juice to make one cup of liquid.
  • Combine cranberries, orange zest, juice and water, tequila, and sugar in a large pot.
  • Bring to a slow boil, stirring occasionally.
  • When the cranberries begin to pop, add the chopped jalapeno cook for about 5 minutes, stirring frequently.
  • If the sauce seems a little thick, add a bit more water.
  • Remove from heat, transfer to a bowl and chill.

1 cup granulated sugar, plus more if needed
1 tablespoon zested fresh ginger
1 to 2 jalapenos, seeds and ribs removed, diced
Zest and juice of 1 large orange (1/2 cup of juice is necessary)
One 12-ounce bag fresh cranberries
Zest from 1 lemon
1 tablespoon lemon juice
Kosher salt

Steps:

  • In a medium saucepan, put the sugar, ginger, jalapenos, orange zest and orange juice. Simmer for 2 minutes. Add the cranberries and set over medium heat for 20 minutes, stirring frequently. Add water if the mixture appears too dry. Add in the lemon zest and juice and season with salt or a bit more sugar. Let cool completely and serve.
