1/2 cup orange juice, chilled
1/4 cup rum

Steps:

I'm sure to pick up extra bags of cranberries for the freezer in the fall so that I can make this lovely, delicious jam year-round. My kids love it on peanut butter sandwiches. Jars of this pretty ruby-colored jam also make great gifts. -Marjilee Booth, Chino Hills, California

2 packages (10 ounces each) frozen sweetened raspberries, thawed
4 cups fresh or frozen cranberries
1 package (1-3/4 ounces) powdered fruit pectin
5 cups sugar

Steps:

  • Drain raspberries, reserving juice; add enough water to juice to measure 1-1/2 cups. Pour into a Dutch oven. Add raspberries and cranberries; stir in pectin. Bring to a full rolling boil over high heat, stirring constantly. Stir in sugar; return to a full rolling boil. Boil and stir 1 minute., Remove from heat; skim off foam. Ladle hot mixture into six hot half-pint jars, leaving 1/4-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 10 minutes. Remove jars and cool.

a 12-ounce bag of cranberries, picked over
a 10-ounce package frozen raspberries in light syrup, thawed
1/2 cup firmly packed light brown sugar
3/4 cup cranberry juice cocktail

Steps:

  • In a heavy saucepan combine the cranberries, the raspberries with the syrup, the brown sugar, and the cranberry juice cocktail, simmer the mixture, covered, stirring occasionally, for 10 to 15 minutes, or until the cranberries have burst and the sauce is thickened, and let the sauce cool.

1 tablespoon sugar
1 tablespoon water
2 lime wedges
1/3 cup aquavit

Steps:

  • Fill a rocks glass with ice. In a cocktail shaker, using a wooden spoon, muddle the cranberries with the sugar, water and 1 of the lime wedges. Add the aquavit and a handful of ice and shake well. Strain into the glass, garnish with the remaining lime wedge and serve.

2 cups raspberries
1 cup Merlot wine
¾ cup white sugar

Steps:

  • Put cranberries, raspberries, Merlot, and sugar in a large saucepan. Bring to a boil, stirring occasionally. Use a whisk to mash the cranberries. Turn down heat and let simmer for 15 minutes. Pour sauce into a container and refrigerate. It can be served hot or cold.

100g fresh or frozen cranberries
1l cranberry juice
500ml vodka
400ml grapefruit juice
2 limes , cut into round slices
ice

Steps:

  • Using two ice cube trays, put one or two cranberries in each square, fill with water and freeze until solid. Can be done a week ahead.
  • Pour the cranberry juice, vodka and grapefruit juice into a punch bowl or large pouring jug and add the lime slices. Add some ice and half the cranberry ice cubes. Divide the remaining cranberry ice cubes between the glasses, then pour in the punch.
