A tasty way to get your fiber! I also plan on trying them with all orange juice in place of the milk.

Number Of Ingredients 12

2 cups wheat bran
1/2 cup sugar
2 1/2 cups flour (I use combo of white & wheat)
2 1/2 teaspoons baking soda
1 teaspoon salt
1/3 cup fresh squeezed orange juice (approximately)
1 2/3 cups low-fat milk (approximately)
1 -2 tablespoon orange zest
1/2 cup applesauce
1 teaspoon vanilla
2 eggs, beaten
3/4 cup dried cranberries

Steps:

  • Combine dry ingredients in a large bowl.
  • In a separate bowl, squeeze orange juice from orange(s) and combine with enough low-fat milk to make 2 cups total. Add zest from orange(s). Mix in applesauce, vanilla and eggs. Add wet ingredient mixture to dry ingredients and mix well by hand. Stir in cranberries.
  • Divide between muffin tins, and bake at 350°F for 18-20 minutes.

1 1/2 cups flour
1/2 cup oat bran
3/4 teaspoon salt
1/3 cup sugar
3 teaspoons baking powder
2 eggs
1/4 cup vegetable oil
1 cup milk
1 cup cranberries, chopped
1 cup walnuts, chopped
1 teaspoon orange peel, grated

Steps:

  • Preheat oven to 400 degrees F.
  • In a bowl combine dry ingredients (flour - baking powder) and set aside.
  • In another bowl beat together eggs, vegetable oil and milk and stir into dry ingredients.
  • Stir in cranberries, walnuts and orange peel.
  • Pour into muffin tins and bake for 20 minutes or until muffins are done.

1 ¼ cups wheat bran
⅓ cup dark brown sugar
¾ cup whole milk
⅔ cup grapeseed oil
2 large eggs
1 tablespoon molasses
1 orange, zested
1 ¾ cups all-purpose flour
½ cup white sugar
2 teaspoons baking powder
½ teaspoon salt
½ teaspoon ground cinnamon
1 ½ cups fresh cranberries

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a 12-cup muffin tin or line cups with paper liners.
  • Combine bran and brown sugar in a large bowl.
  • Pour milk into a microwave-safe glass measuring cup. Heat until almost boiling, about 1 minute. Pour over the bran mixture. Beat with an electric mixer until combined. Let stand until milk is mostly absorbed, about 5 minutes.
  • Beat oil, eggs, molasses, and orange zest into the bran mixture.
  • Combine flour, sugar, baking powder, salt, and cinnamon in a small bowl. Mix into the batter until just combined. Sprinkle cranberries on top; fold in with a spatula. Divide batter among the prepared muffin cups.

3 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon ground cinnamon
2 teaspoons ground ginger
1 1/4 cups whole milk
2 extra-large eggs
1/2 pound unsalted butter, melted and cooled
1 1/2 cups coarsely chopped fresh cranberries
1/2 cup medium-diced Calimyrna figs
3/4 cup coarsely chopped hazelnuts, toasted and skinned
3/4 cup brown sugar, packed
3/4 cup granulated sugar

Steps:

  • Preheat the oven to 375 degrees F.
  • Line 18 muffin cups with paper liners. Sift together the flour, baking powder, baking soda, salt, cinnamon, and ginger in a large bowl. Make a well in the center of the mixture and add the milk, eggs, and melted butter. Stir quickly just to combine. Add the cranberries, figs, hazelnuts, and both sugars and stir just to distribute the fruits, nuts, and sugar evenly throughout the batter.
  • Spoon the batter into the paper liners, filling each one to the top. Bake for 20 to 25 minutes, until browned on the top and a toothpick inserted in the center of the muffins comes out clean.

1/2 cup old-fashioned oats
1 cup all-purpose flour
1 cup whole wheat flour
1/2 cup all-bran cereal
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 large egg, beaten
1/4 cup vegetable oil
1/2 cup molasses
3/4 cup buttermilk
1 can (8 ounces) crushed pineapple in natural juice, undrained
1/2 cup chopped nuts, dates or raisins

Steps:

  • In a bowl, combine the first seven ingredients. Make a well in the center. Combine the egg, oil, molasses, buttermilk and pineapple with juice. 1 C flour
1 t baking powder
1 t baking soda
1/2 t salt
2/3 C brown sugar, firmly packed
1 C dried cranberries
1/2 C chopped pecans
1/2 C milk
1/3 C veg. oil
1/3 C orange juice
1 egg
1/2 C vanilla yogurt or sour cream
1 t orange zest

Steps:

  • Preheat oven to 350. Spray muffin pan with PAM. Stir together oat bran, flour, baking powder and soda and salt and brown sugar. Add cranberries and pecans. In a seperate bowl, whish milk, veg oil, o.j., egg, yogurt and orange rind. Add to flour mixture, stir til moistened. Spoon into muffin pans and bake 18-20 mins.
