Cranberry Squares ~ Flavors of Cape Cod image

This recipe came from Cape Cod, in the cookbook "Flavors of Cape Cod" they have a streusel topping. To prepare Cranberry Squares using cranberry sauce, substitute one 8oz. can whole cranberry sauce for fresh cranberries, reduce sugar to 1/2 cup and orange juice to 1/2 cup.

2 cup(s) all-purpose flour
1 cup(s) sugar
1 1/2 teaspoon(s) baking powder
1 teaspoon(s) salt
1/2 teaspoon(s) baking soda
3/4 cup(s) orange juice
2 tablespoon(s) shortening
1 - egg, well beaten
1 1/2 cup(s) fresh or frozen cranberries, coarsely chopped
1/2 cup(s) chopped nuts
* STREUSEL TOPPING

Steps:

  • Preheat oven to 350 degrees. In a bowl mix together flour, sugar, baking powder, salt and baking soda. Stir in orange juice, shortening and egg. Mix until well blended. Carefully fold in cranberries and nuts. Turn into greased 9 X 13 X 2" pan. Sprinkle with streusel topping. Bake 30-35 minutes. Serve warm.
  • STREUSEL TOPPING: Mix together until crumbly 1/4 cup flour, 2 tablespoons butter or margarine, 1/3 cup sugar and 3/4 teaspoon cinnamon. Sprinkle over top of cooled bars.
  • To prepare Cranberry Squares using cranberry sauce, substiture one 8-oz can whole berry cranberry sauce for fresh cranberries, reduce sugar to 1/2 cup and orange juice to 1/2 cup !

CAKE:
1 stick butter, or margarine
1 c sugar
2 eggs
2 c flour
1 tsp baking powder
1 tsp soda
1 c sour cream
1 tsp almond extract
POUR HALF THE BATTER INTO PREPARED TUBE PAN.
SPREAD THE CRANBERRY SAUCE OVER FIRST LAYER OF BATTER.
1 can(s) ocean spray cranberry sauce/i used the small can with whole cranberries
TOP THIS LAYER WITH REMAINING BATTER. THEN TOP WITH NUTS & SUGAR MIXTURE.
1/2 c chopped nuts, walnuts or pecans
2 tsp sugar
1/2 tsp cinnamon

Steps:

  • 1. Prepare a tube pan, grease and dust with flour. Measure dry ingredients. Mix sour cream and almond extract.
  • 2. Cream butter, gradually add sugar, cream well. Add eggs, mix well. Sift dry ingredients together,add alternately with sour cream, to the creamed mixture.
  • 3. Pour 1/2 the batter into the greased pan. Then spread the cranberry sauce; and finish adding the batter. Sprinkle with the mixture of nuts, sugar, cinnamon.
  • 4. Optional: drizzle the warm cake with a mixture of: 1 cup confectioners' sugar, 1/2 tsp. almond extract, and 1 Tbs. hot water.

These cranberry-studded muffins make an easy breakfast or dessert. They freeze well, so bake up a batch and keep them on hand. Recipe is from Carole Walter's "Great Coffee Cakes, Sticky Buns, Muffins & More."

1 1/4 cups fresh cranberries or 1 1/4 cups frozen cranberries
2 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3 tablespoons unsalted butter
3 tablespoons canola oil
3/4 cup sugar
2 large eggs, lightly beaten
2/3 cup orange juice
3/4 cup toasted walnuts, coarsely chopped

Steps:

  • Position racks in the upper and lower thirds of the oven; preheat oven to 375 degrees F.
  • Line 14 muffin cups with paper or foil cupcake liners.
  • Place the cranberries in a food processor and pulse until coarsely chopped; set aside.
  • In medium bowl, whisk together the flour, baking powder, baking soda and salt; set aside.
  • In small saucepan, combine the butter and oil and heat until the butter melts.
  • Stir in sugar; it will not dissolve.
  • In large bowl, use a wooden spoon to stir together the eggs and orange juice.
  • Stir in the sugar-butter mixture, then add the dry ingredients and mix until just moistened.
  • When the flour is almost incorporated, stir in the cranberries and walnuts.
  • Fill the muffin cups until almost full with batter, about 1/4 cup each.
  • Bake for 18-20 minutes, one pan on each shelf.
  • Halfway through baking, rotate the pans front to back and switch them from one shelf to the other.
  • Bake until the muffins are golden brown and the tops are springy to the touch.
  • Cool on a wire rack.
