CRANBERRY OAT BARS
These bars are one part cookie, and one part granola bar. They're chewy and caramel-y and earthy and studded with tangy, dried cranberries.

Steps:
- Lightly grease an 8-inch x 8-inch baking pan. Line with a square of parchment paper, so that the paper is hanging over the sides. Set it aside.
- Preheat your oven to 350 degrees.
- Toss the sugar in a medium-sized pot. Add the butter and the golden syrup. Set the heat on medium. Whisk constantly as the butter and sugar melt.
- Keep whisking until you have a uniform paste
- Remove the pot from the heat. Toss in the oats, salt, and dried cranberries. Stir until the oats and cranberries are coated and the mixture is uniform.
- Scoop out into your prepared pan. Smoosh it down with the back of a spoon until the surface is flat and firm. Be sure to press down all the corners, too. You want it dense when it goes into the oven so it stays together.
- Pop the pan into your preheated, 350-degree oven for about 25 minutes, or until the edges are light brown and it smells nice and toasty.
- Cool it in the pan on a rack for about 5 minutes. Slice however you like.
- Let the bars cool completely in the pan. (They'll kind of fall apart until they cool.)
- When they're cool, break them apart to serve. You can leave the bars in the pan, or lift them out by the parchment paper. Enjoy!

CRANBERRY NUT GRANOLA BARS
This is one fast and totally addicting recipe. It's easy to adjust to your tastes or what's in your cupboard - try adding chocolate chips, coconut, raisins, cherries or a spoonful of peanut butter. You'll be making this every week.

- Preheat an oven to 350 degrees F (175 degrees C). Line a 13x9-inch pan with lightly-greased parchment paper; an inch or so of parchment paper should stick up on 2 sides to form lifting handles.
- Mix the quick-cooking oats, old-fashioned oats, pumpkin seeds, almonds, mixed nuts, cranberries, and sweetened condensed milk together in a bowl; spread into the prepared pan, evenly pressing into the corners and out to the sides.
- Bake in the preheated oven until the edges are golden brown, 20-25 minutes, using slightly less time for chewier bars and slightly more time for crunchier bars.
- Allow the the bars cool for 5 minutes in the pan before using the parchment paper to lift them from the pan. Use a sharp knife to cut into bars. Let the bars cool completely and store in an airtight container.

HONEY-OAT GRANOLA BARS
I found this recipe on one of our monthly Brown County REA newsletters. My husband and I eat a few of these bars each day. It's a basic recipe to which you can add any of your favorite flavors...coconut, chocolate or different flavored chips, nuts or dried fruits.

- Preheat oven to 350°. In a large bowl, combine oats, brown sugar, peanuts, chocolate chips and sunflower kernels. Stir in butter, honey and vanilla until combined (mixture will be crumbly). Press into a greased parchment-lined 15x10x1-in. baking pan., Bake 15-20 minutes or until browned and bubbly. Cool 15 minutes on a wire rack; cut into squares. Cool completely before removing from pan. Freeze option: Wrap each cooled bar in plastic; freeze until firm. To use, thaw bar at room temperature or, if desired, unwrap and place on a microwave-safe plate and microwave on high for 15-20 seconds or until heated through.

- In a large bowl, combine oats, Rice Krispies, cranberries, flax, 1 teaspoon cinnamon and nutmeg., In a large saucepan, combine brown sugar, corn syrup, oil and honey; cook and stir over medium heat until sugar is dissolved. Remove from the heat; stir in vanilla and salt., Stir in oat mixture; toss to coat. Press firmly into a 9-in. square pan coated with cooking spray. Combine sugar and remaining cinnamon; sprinkle over bars. Cool completely. Cut into bars.
