CRANBERRY HAM & CHEESE APPETIZERS (OR WRAPS)

Although these are colorful for the yuletide holidays, they are so easy to make, you can have them year round. You can also serve them as 2 individual wraps which are great for lunch on the go, sweet snack (cranberries) included! 1 wrap has about 300 calories. Enjoy.

2 large flour tortillas (spinach tortillas preferred)
4 ounces reduced-fat cream cheese, softened
1/2 cup dried cranberries, sweetened
2 -3 tablespoons chopped green onions
8 slices lean ham, deli thin sliced
8 maraschino cherries, cut in half (green and red) (optional)

Steps:

  • To tortillas, spread cream cheese all the way around to edges. Sprinkle with cranberries, and chopped green onion. Lay ham slices to cover top.
  • Roll up tightly, wrap in plastic and refrigerate at least one hour.
  • Eat as wraps or to make pinwheels: Trim off the very ends of each log, then slice each log into 8 slices and lay flat. Place a half cherry (if using) onto the center of each pinwheel. Arrange decoratively onto a serving platter.

2 tablespoons vegetable oil
2 large onions, cut into medium dice
4 teaspoons minced fresh rosemary
½ teaspoon ground cloves
1 (16 ounce) can whole berry cranberry sauce
1 (16 ounce) package cocktail rye bread
¼ cup Dijon mustard
2 pounds thin ham slices from a baked spiral-cut ham (or substitute Black Forest ham), cut to fit rye bread
12 ounces thinly sliced Swiss cheese, cut to fit rye bread Arugula or other baby salad greens

Steps:

  • Heat oil in a 12-inch skillet over medium-high heat. Add onions; saute until well-browned, 10 to 12 minutes. Add rosemary and cloves; continue to saute until fragrant, 1 to 2 minutes longer. Stir in cranberry sauce, and simmer until heated through. Remove from heat and set aside. (Cranberry-Onion Relish can be cooled, covered and refrigerated up to 2 weeks ahead.)
  • To assemble: Working in batches, lay breads on a work surface and spread with about 1/4 tsp. mustard and 1 tsp. cranberry relish. Top half the breads with a portion of ham, cheese and arugula (optional), then the remaining bread slice. Halve each sandwich on the diagonal, sticking each half with a toothpick. (Sandwiches can be covered with a damp paper towel and plastic wrap and can remain at room temperature for 2 hours.)

1/2 cup whole berry cranberry sauce
28 slices cinnamon raisin bread, crusts removed
1 1/2 lbs deli ham, thinly sliced

Steps:

  • Combine cream cheese and cranberry sauce, stirring well. Spread mixture on each bread slice. Top with ham. Place a second slice of bread on top with cream cheese mixture also spread on it to form a sandwich. Cut each sandwich into four triangles.

1 package King's Hawaiian Rolls
8 oz cream cheese
4 oz cranberry sauce with whole cranberries

Steps:

  • Leave cream cheese at room temperature and allow to soften. Once soft, stir in cranberry sauce. Slice Hawaiian rolls and spread one half with cranberry and cream cheese mixture. Add a slice of ham and put halves back together. Makes 12 sandwiches.

If you're tired of the same old ham and cheese sandwiches, this sandwich is for you! Tart dried cranberries, salty ham, and mellow Provolone cheese combine to make a delicious sandwich!

1 tablespoon cooking oil
1 1/2 cups dried cranberries, chopped
3/4 cup chopped red onion
1/3 cup balsamic vinegar
1 loaf round bread
6 slices provolone cheese
12 ounces thinly sliced cooked ham
4 romaine lettuce leaves
1/4 cup mayonnaise

Steps:

  • For cranberry relish, in a large skillet heat oil; cook cranberries and onion in the hot oil over medium heat for 5 minutes or until just softened, stirring often. Stir in vinegar; cook and stir about 1 minutes more or until most of the liquid is absorbed; let cool.
  • Split loaf of bread in half horizontally. Hollow out inside of each half, leaving a 3/4-inch-thick shell. Arrange cheese slices on the bottom half of the bread. Spoon cranberry relish over cheese. Layer meat and lettuce on top of relish. Spread mayonnaise on the cut side of the top half of bread; place spread side down on filled loaf. Cut sandwich into wedges.
