2 cups water
5 1/2 ounces cranberries, approximately 1 1/2 cups, washed and sorted
3/4 cup granulated sugar
1/2 teaspoon lime zest

Steps:

  • Place the water, cranberries and sugar into a small saucepan, set over medium-high heat and simmer until the berries begin to pop, approximately 7 minutes. Remove from the heat. Puree with a stick blender, blender or food processor, for 1 minute. Pass the mixture through a fine mesh strainer directly into a metal 13 by 9-inch pan. Do not press on the skins. Simply allow the juice to drip through the strainer. Add the zest and stir to combine. Place in the freezer until set, at least 6 hours and up to overnight. Once frozen, scrape the mixture with a fork to create a shaved ice texture. Serve immediately.

Canned cranberries and chopped pecans add a chewy and crunchy contrast to the creamy base of whipped topping and cream cheese, while mandarin oranges add sweetness (and take the place of the pineapple that's a dessert salad standby). Serve up a bowl of this pretty pink salad, and watch how quickly it disappears.

1 can (14 oz) whole berry cranberry sauce
1 package (8 oz) cream cheese, softened
2 tablespoons sugar
1 can (11 oz) mandarin oranges, well drained
1 container (8 oz) Cool Whip frozen whipped topping, thawed
2 cups miniature marshmallows
1/4 cup chopped toasted pecans

Steps:

  • In large microwavable bowl, mix cranberry sauce, cream cheese and sugar; microwave uncovered on High 1 to 2 minutes, until easily stirred together. Stir in mandarin oranges. Refrigerate at least 2 hours but no longer than 12 hours.
  • Gently fold in whipped topping and marshmallows. Top with pecans.
  • Serve immediately, or cover and refrigerate until ready to serve, up to 2 hours.

1/3 cup sugar
1/4 cup fresh lime juice
1/4 cup vodka
6 fresh cranberries, for garnish

Steps:

  • Whisk the cranberry juice and sugar in a heavy medium saucepan over medium heat just until the sugar dissolves. Pour the cranberry mixture into a 13 by 9 by 2-inch glass baking dish. Cool completely. Whisk in the lime juice and vodka. Freeze until the granita becomes slushy, about 2 hours. Using fork, stir to blend. Continue freezing the granita until frozen, stirring every hour to form crystals, at least 5 hours or overnight.
  • Divide the granita among 6 dessert glasses. Garnish with fresh cranberries, if desired, and serve.

3/4 cup sugar
1/2 cup fresh orange juice
3 cups cranberry-juice cocktail
1 tablespoon fresh lemon juice
1 teaspoon finely grated orange zest
Salt
2 teaspoons finely grated peeled fresh ginger

Steps:

  • Place a 2-quart shallow baking dish in the freezer. In a medium saucepan, bring sugar and orange juice to a boil over medium-high heat, stirring, until sugar dissolves, about 2 minutes. Remove from heat. Stir in cranberry and lemon juice, zest, and a pinch of salt.
  • In a fine-mesh strainer set over cranberry mixture, press ginger with a spoon to release juice (discard solids). Stir to combine.
  • Pour mixture into baking dish. Freeze until solid, at least 6 hours or overnight. Mash with a fork to break granita into small crystals. Cover; freeze until ready to serve.

The arrival of cranberries in the fall magically coincides with the holiday food shopping frenzy. A wonder of nature? Or just good timing? Regardless, I'm happy whenever I find cranberries in abundance. Their flavor is invigorating and restorative, which is probably why they're so popular around the time of year when many of us could use help after overindulging in copious holiday feasts.

Yield makes about 1 quart (1 liter)

Number Of Ingredients 4

3 cups (340 g) cranberries, fresh or frozen
1 cup (250 ml) water
1 cup (200 g) sugar
1/2 cup (125 ml) freshly squeezed orange juice (from about 2 oranges)

Steps:

  • Put the cranberries, water, sugar, and orange juice in a medium, nonreactive saucepan and bring to a boil. Cover, remove from the heat, and let stand for 30 minutes.
  • Purée the mixture in a blender or food processor until smooth, then press through a mesh strainer to remove the bits of cranberry skin. Freeze according to the instructions for freezing granita on page 145.
  • Serve with Tangerine Sorbet (page 119) or spicy Cinnamon Ice Cream (page 38).

1 (16 ounce) package miniature marshmallows
1 cup white sugar
2 cups apples - peeled, cored and finely chopped
½ cup walnuts
1 pint heavy cream, whipped

Steps:

  • In a large bowl, mix cranberries, miniature marshmallows, and sugar. Cover, and chill in the refrigerator 8 hours, or overnight.
  • Mix apples and walnuts into the cranberry mixture. Fold in whipped heavy cream just before serving. Serve cold.

1 pound sliced hulled strawberries (about 1 2/3 cups)
3/4 cup sugar
Pinch of salt
1 1/2 cups cold water
1/4 cup fresh lemon juice
1 cup chilled whipping cream

Steps:

  • Puree strawberries, sugar, and salt in processor until smooth. Add water and lemon juice and process to blend. Strain into 8x8x2-inch metal baking pan. Cover with foil and place in freezer. Stir with fork every hour until frozen, about 4 hours. DO AHEAD Can be made 2 days ahead. Keep frozen. Using fork, scrape granita down length of pan, forming icy flakes. Return to freezer. Beat 1 cup chilled whipping cream until firm peaks form. Divide cream among dishes. Spoon granita over and serve immediately.
