- Preheat oven to 325°. Line a roasting pan with foil. Place ham on a rack in prepared pan. Bake, covered, 1 hour., Meanwhile, in a small saucepan, whisk remaining ingredients until blended. Remove 1 cup mixture for glaze; reserve remaining mixture for sauce. Brush ham with some of the glaze mixture. Bake, uncovered, until a thermometer reads 140°, 35-45 minutes, brushing every 10 minutes with remaining glaze., Warm reserved sauce mixture over medium heat, stirring occasionally; serve with ham.

- 1. Remove and discard glaze packet from ham or reserve for another use. Begin by preparing ham according to package directions.
- 2. Make Honey Glaze: While baking, mix honey, mustard and lemon juice in small bowl until blended. Set aside until the last 30 minutes of baking time.
- 3. Make Cranberry Relish: Combine apples and juice in medium saucepan. Bring to a boil over medium heat. Reduce heat to medium-low; simmer 5 minutes, stirring occasionally. Add cranberries; simmer an additional 5 minutes, or until fruit is tender, stirring occasionally. Remove from heat; stir in marmalade and pecans. Set aside until ready to eat. Or, if made in advance, cover and refrigerate until ready to use.
- 4. Uncover ham and brush with the Honey Glaze for the last 30 minutes of the baking time.
- 5. Let stand 10 minutes. Carve and serve with Cranberry Relish.

- In a large bowl, combine the cranberry sauce, orange juice, steak sauce, oil, mustard and brown sugar. - Combine the apricots, orange zest, sugar, water, and honey in a sauce pan. Bring to a boil then lower to a simmer for 5 minutes until it's a nice thick glaze. Remove from the heat and add the vanilla paste, cardamon, allspice, coriander and sage.
- Glaze ham with half of the apricot mixture and bake at 350. Baste frequently, until the ham is heated through.about 45 minutes.
- While the ham is baking, in the saucepan with the remaining apricot mixture, add the cranberries and red wine. Simmer until the mixture is thick.
- Serve the ham with the cranberry chutney.

- 1. Preheat oven to 350F. Place ham in a roasting pan. Heat rest of ingredients and bring to a boil and then simmer for 10-15 minutes.
- 2. Make criss-cross slits in ham with a knife. Pour half the glaze over top. Place in oven and bake 30 minutes and then reapply glaze on ham. Cook for another 30 minutes repeat step. Remove ham and place foil over it. Return to a 250F oven for 35 minutes.
- 3. Remove glaze from bottom of pan and serve over ham slices. ***the glaze has a purple tint due to the combination of cranberries and pineapple, but the taste is amazing.

- Combine cranberries, water, and honey in a medium saucepan. Set over medium heat.Stir occasionally for about 4-5 minutes, until most of the cranberries have popped.Add dijon mustard, vinegar, brown sugar, and cayenne pepper.Continue to cook for another 3-5 minutes until the sauce has thickened some and is syrupy. Remove from heat.If you have an immersion blender, use it to puree the sauce. (If you don't, transfer the mixture to a regular blender. Leave the top of the blender vented (to allow steam to escape) and cover with a towel. Blend it up until smooth.)Preheat your oven to 325 degrees F. Prepare a roasting pan with a roasting rack so that the ham doesn't cook in it's own juices (you want a nice crispy bottom, no soggy ham bottoms please.)Place the ham on the roasting rack and use a sharp serrated knife to score the ham diagonally.Use a brush to coat the ham all over with the cranberry sauce.
