1 cup crumbled Gorgonzola cheese
1 cup dried cranberries
2 tablespoons each finely chopped onion, celery, green pepper and sweet red pepper
1/4 teaspoon hot pepper sauce
3/4 cup chopped pecans
Assorted crackers

Steps:

  • In a small bowl, combine cheeses. Stir in the cranberries, vegetables and pepper sauce. Shape into a ball; wrap in plastic. Refrigerate for 1 hour or until firm. Roll cheese ball in pecans. Serve with crackers.

1-1/2 cups (6 ounces) white shredded cheddar cheese
3/4 cup whipped cream cheese
1/2 cup butter, softened
1/4 cup Dijon mustard
1-1/3 cups chopped pecans, toasted, divided
1 cup dried cranberries, divided
Assorted crackers

Steps:

  • Beat cheddar cheese, cream cheese, butter and mustard until blended. Fold in 1/3 cup pecans and 1/2 cup dried cranberries. Spread remaining pecans and dried cranberries in an even layer on a 12x12-in. piece of plastic; place cheese mixture on top of cranberry mixture. Bring corners of plastic up over cheese ball and shape into a ball. Refrigerate at least 1 hour., Remove from refrigerator 10 minutes before serving. Serve with crackers.

1 c dried cranberries, chopped
1/4 c frozen orange juice concentrate, thawed
16 oz cream cheese, softened to room temp
1/4 c confectioners' sugar
CARAMELIZED PECANS
3/4 c pecans, coarsely chopped
1 Tbsp butter
2 Tbsp sugar

Steps:

  • 1. Chop cranberries in a food processor or blender.
  • 2. Add the cream cheese, OJ and sugar. Blend in the processor till all is creamed together.
  • 3. Place onto a sheet of wax paper and shape in a ball the best you can. Let it sit overnight to stiffen up a bit. You can shape it better the next day when it is a little harder.
  • 4. Directions for candied pecans: Melt butter in a pan on med heat add the pecans and sugar and mix well stirring frequently. About 3-5 minutes. Do not let the pecans burn!
  • 5. Lay out a sheet of wax paper and place pecans on the sheet spreading them out. Let them cool.
  • 6. When you are ready to eat the cheese ball take it out of the fridge and shape better. Grab a handful of pecans and place them all over the cheese call till covered. Place cheese ball on a plate and serve!

4 tablespoons frozen orange juice concentrate
zest of 1 orange
1/4 teaspoon cinnamon
1/2 cup dried cranberries, chopped
1 or 2 jalapenos, seeded, chopped fine
1/2 cup walnuts, chopped

Steps:

  • 1. Cook the cranberries in 1/2 cup of water in microwave for 1 minute, drain and cool.
  • 2. In a mixing bowl, beat cream cheese, orange juice concentrate, zest and cinnamon on medium speed until fluffy. Add chopped cranberries, jalapeno, and walnuts. Stir into cheese mixture. Chill. Shape into a ball.
  • 3. Serve with favorite crackers.

I made this epic cheese ball for a Thanksgiving gathering. My husband said it was weird to have a sweet cheese ball. He's used to those cheddar cheese ranch dressing lumps of cheese dip. However it was a real hit at the party. It sort of tastes like a mound of cheese cake.

16 oz cream cheese, softened
1/2 c salted butter, softened (1 stick)
1 1/2 tsp vanilla extract
2 tsp spiced rum (or 1 tsp of artificial rum flavoring)
1 c white chocolate chips
1/2 c dried cranberries
1 c sugar
FOR TOPPING:
1 c graham crackers, crumbs
1/2 c pecans, in pieces

Steps:

  • 1. In a large mixing bowl cream together cream cheese and butter until completely incorporated together.
  • 2. Mix in vanilla extract and rum. Mix until completely smooth.
  • 3. Fold in chocolate chips and cranberries.
  • 4. Put in refrigerator covered for at least 2 hours.
  • 5. On a large plate mix together graham crackers crumbs and pecans.
  • 6. Take cheese ball mixture out of refrigerator, and form it into a large ball with your hands.
  • 7. Roll the cheese ball in the graham cracker crumb and pecan mixture until it is coated evenly.
  • 8. Refrigerate for at least 1 hour before serving.
  • 9. I served the cheese ball on a large platter with ginger snaps.

2 tablespoons sherry wine or 2 tablespoons brandy
1 (8 ounce) package cream cheese, softened

1 teaspoon Worcestershire sauce
1/2 cup chopped walnuts
1 cup chopped fresh Italian parsley

Steps:

  • Soak the cranberries in the sherry for 10 minutes.
  • In a food processor, process the cream cheese, cheddar cheese, and Worcestershire together until smooth.
  • Stir in the cranberries and sherry.

This Onion Cranberry Pecan Cheese Ball is an easy, make-ahead appetizer that tastes amazing & has the most beautiful colors!

8 oz. cream cheese (softened)
2 cups sharp white cheddar (shredded)
1 cup Craisins
1/2 cup green onions (chopped)
1/4 cup chopped parsley
1 cup pecans (chopped and toasted and cooled completely)

Steps:

  • stir together the cream cheese and cheddar until it's evenly combined
  • mix in the Craisins, green onions, and parsley
  • spread toasted pecans onto a baking sheet
  • form the cheese into a ball shape
  • roll the cheese ball around on the pecans to completely coat the outside of the ball
  • completely cover with plastic wrap and store overnight or at least 4 hours to allow the flavors to mix
  • enjoy!

1 box cream cheese, room temperature
1/3 - 1/2 c craisins (i use cherry craisins for extra flavor)
1/2 -1 c powdered sugar
1/2 c coconut
graham crackers

Steps:

  • 1. mix cream cheese and powdered sugar in bowl. I usually mix sugar a little bit at a time until I get the amount of sweetness that I like. Adjust for your taste, I prefer it sweeter.
  • 2. Slowly blend in craisins
  • 3. Make into ball and place back into refrigerator for 1 hour to chill and set.
  • 4. After hour remove from refrigerator. Lay a piece of parchment paper on flat surface and spread coconut. Remove cheese ball from bowl and roll in coconut.
  • 5. Keep in refrigerator until ready to serve.
  • 6. Serve with graham crackers, I prefer chocolate graham crackers.
