This is my mother's recipe. Each year, she would make this for an auction. Her sauce usually sold for $12.00 an 8-ounce jar! Tastes best when it has had time to sit, for example, 2 weeks. The longer it sits, the stronger the flavours.

2 cups sugar
1/4 teaspoon ground cinnamon
1/4 cup bourbon

Steps:

  • Preheat oven to 350°F. Combine first 3 ingredients in 9x13-inch baking dish. Cover tightly with foil and bake until cranberries are tender and sugar is dissolved, stirring once, about 1 hour. Remove from oven and stir in bourbon. Refrigerate cranberry sauce until well chilled. (Can be prepared 1 week ahead.) Transfer to bowl and serve.

2 cups sugar
1/2 cup bourbon whiskey
2 sticks cinnamon
2 large coins peeled, fresh ginger
Zest of 1 orange
Juice of 4 oranges
1 pound (about 4 cups) fresh or thawed frozen cranberries
1 vanilla bean, seeds scraped

Steps:

  • Combine the sugar and bourbon, stirring well, in a 1-quart saucepan. Add the cinnamon, ginger, orange zest and juice. Bring the mixture to a boil over medium heat, stirring to dissolve the sugar. Reduce the heat to medium-low and simmer until the liquid begins to reduce a little bit, 5 to 7 minutes. Add the cranberries and vanilla bean and continue to simmer until the cranberries are soft and breaking apart and the sauce begins to thicken, 12 to 15 minutes.
  • If desired, mash your cranberries with a sturdy whisk or potato masher, just to break up the cranberries, and simmer to thicken a little bit more, about 5 minutes.
  • Remove the pan from the heat and discard the cinnamon sticks, ginger pieces and vanilla bean. Allow the sauce to cool. Serve the sauce warm or at room temperature, or refrigerate for up to 10 days -- the flavors only get better as they chill out in the fridge.

12 ounces fresh cranberries
1 orange, zest removed, peeled in one long piece, then cut into 1 inch pieces
2 teaspoons ground cinnamon
1 cup sugar
1/2 cup Bourbon
2/3 cup orange juice

Steps:

  • Preheat oven to 350 degrees.
  • Place cranberries, zest from the orange, orange peel, cut up orange pieces, cinnamon, and sugar into a 2 inch deep casserole dish.
  • Cover dish with foil and bake at 350 degrees for 60 minutes.
  • Stir mixture and check for sweetness. If too tart, may add up to one half cup more of sugar.
  • Add bourbon.
  • Cover and bake an additional 30 minutes.
  • Stir in orange juice and heat on top of the stove, stirring constantly over medium heat until thickened.
  • Remove peel and refrigerate until cold before serving.

  • Combine cranberries, sugar, and vinegar in a pot. Bring to a boil, stirring until sugar is dissolved. Remove from heat; let cool completely. Refrigerate up to 3 weeks.

1 pound ground pork
2 ounces chicken liver, chopped
1 onion, diced
1/2 bell pepper, diced
2 stalks celery, diced
4 cloves garlic, minced
1 cup rice
1 pint cranberries
1 cup bourbon whiskey
3 tablespoons sugar
8 whole quail
Kosher salt and black pepper
Cayenne
Chili powder
Smoked paprika

Steps:

  • Heat 2 tablespoons canola oil in a Dutch oven over medium-high heat. Add the ground pork and chicken liver and cook, stirring occasionally, until browned, about 10 minutes. Add the onion, bell pepper, celery and garlic, and continue to saute for 5 minutes.
  • Bring 2 cups water and a pinch of salt to a boil in a small saucepan. Add rice, cover, and bring back to a boil. Reduce to a simmer and cook for 20 minutes.
  • In a small saucepan, combine the cranberries, bourbon and sugar in pan. Bring to a boil and cook, uncovered, over medium heat until the berries are soft and the sugar is dissolved, about 20 minutes. Remove from the heat and let cool bit, then pour into a blender and puree until smooth.
  • Heat a cast-iron skillet over medium-high heat. Sprinkle the quail with salt, pepper, cayenne, chili powder and smoked paprika. Swirl some canola oil in the skillet and then add the quail. Cook on one side for about 5 minutes; flip and cook for another 5 minutes-the quail won't be fully cooked yet, but that's okay. Set aside.
  • Mix the cooked rice into the ground pork mixture and season with salt, pepper and cayenne¿now you have boudin.
  • Preheat the oven to 350 degrees F.
  • Stuff each quail with boudin and place back in the cast-iron skillet. Roast until cooked through, 10 to 15 minutes.
  • Serve the stuffed quail atop cranberry-bourbon sauce.

2 tablespoons all-purpose flour plus additional for dusting molds
1 cup dried cranberries (4 1/2 oz)
1/4 cup plus 2 teaspoons bourbon
7 oz fine-quality bittersweet chocolate (not more than 60% cacao if marked), chopped
1/4 cup pecans, toasted and cooled
3 large eggs, separated
1/2 cup packed light brown sugar
1/2 cup chilled heavy cream
1 teaspoon confectioners sugar plus additional for dusting
Special Equipment
parchment paper; 4 (4- by 1 1/4-inch) tartlet molds with removable bottoms or 4 (8-oz) ramekins (4 inches across and 1 1/4 inches deep)

Steps:

  • Put oven rack in middle position and preheat oven to 350°F.
  • Cut out 4 rounds of parchment paper to fit just inside bottom of each mold, then set rounds aside. Melt 2 tablespoons butter, then brush molds with some of it. Line bottom of each mold with a round of parchment and brush parchment with some melted butter. Chill molds 5 minutes (to set butter), then brush parchment and side of each mold with more melted butter. Chill molds 5 minutes more. Dust molds with flour, knocking out excess, and set aside.
  • Simmer cranberries and 1/4 cup bourbon in a small saucepan over low heat until cranberries are tender and bourbon is absorbed, about 5 minutes. Remove from heat.
  • Melt chocolate and remaining stick butter in a small heavy saucepan over low heat, stirring constantly, until smooth. Remove from heat and cool 10 minutes.
  • Pulse pecans with flour (2 tablespoons) in a food processor until finely ground, being careful not to process to a paste.
  • Beat together yolks and brown sugar in a large bowl with an electric mixer at medium speed until thick and pale, about 2 minutes. Add chocolate mixture and beat until just combined, then stir in pecan mixture and cranberries.
  • Beat whites with a pinch of salt in another bowl using cleaned beaters until they just hold stiff peaks. Fold one third of whites into chocolate mixture to lighten, then fold in remaining whites gently but thoroughly.
  • Divide batter among molds (they will be very full), then put molds in a shallow baking pan and bake until a wooden pick or skewer inserted into center of a cake comes out with tip wet and remainder of pick dry, about 25 minutes. (Batter will rise above rims but will not spill over.) Transfer cakes to a rack and cool in molds 30 minutes. (Cakes will continue to set as they cool.)
  • Beat cream with confectioners sugar and remaining 2 teaspoons bourbon in a small bowl using cleaned beaters until it just holds soft peaks.
  • Remove side from each mold, then slide each cake from bottom onto a dessert plate, discarding parchment. Lightly dust each cake with confectioners sugar and serve with a dollop of bourbon whipped cream.

CRANBERRY-WALNUT CLAFOUTIS WITH BOURBON WHIPPED CREAM

  • Heat the milk and 2 tablespoons butter in a small saucepan over medium heat until warm but not hot.
  • In a large bowl, whisk the eggs together. Whisk in 1/2 cup sugar, the flour, and the salt. Add the warm milk, whisking well to incorporate completely. Let the batter rest 1 hour at room temperature.
  • Preheat the oven to 375°F.
  • Spread the walnuts on a baking sheet, and toast about 10 minutes, until they're golden brown and smell nutty. When the nuts have cooled, chop them coarsely.
  • Butter a 10-inch round or oval baking dish with the 1 teaspoon butter. (You could also make six individual clafoutis if you like.) Sprinkle the remaining 2 teaspoons sugar in the dish, and tip it to coat the bottom and sides. Pour the batter into the dish. Scatter the walnuts and cranberries on top (most of them will sink). Bake about 45 minutes, until the clafoutis puffs up and is golden brown.
  • While the clafoutis finishes baking, whip the cream and bourbon to soft peaks.
  • Serve the clafoutis directly from the baking dish with the whipped cream on the side.

1 -14 ounce can jellied cranberry sauce { you can use whole sauce if you prefer }
2 oranges { strips of skin off one and the juiced from both } when peeling the skin make sure to only get the orange part, the white part will be bitter.
¼ cup turbinado sugar
1 chipotle { kind of smooshed } from the can
1 teaspoons adobo sauce from the can
2 tablespoons bourbon
3 tablespoons unsalted butter

Steps:

  • 1. In a small pot put the cranberry sauce.
  • 2. With a potato peeler, peel the strips from one orange and put them in the pot with the cranberry sauce, then cut the oranges in ½ and juice them into the pot.
  • 3. Add Turbinado sugar, chipotle, adobo, butter and the bourbon to the cranberry mixture, then mix and turn on the heat.
  • 4. You don't want to turn on the heat under the pot until you add the bourbon because things could go BAM and start a fire. Just the smallest amount of alcohol could ignite.
  • 5. Cook this for about 30 minutes until it all the flavors have gotten all groovy, on a real low heat, whisk often. Let this mixture cool a bit, after it has cooled strain the turkey basting sauce and throw out the peels and chipotle.
  • 6. At this point you can either smoke your bird { like I'm going to do } or put it in the oven, and bake it as you usually would do.
  • 7. I am brushing it on the bird every 30 to 45 minutes or so until the entire cranberry basting sauce is gone.

  • Instructions:Preheat over to 325. Prepare pans. Sometimes I make this in loaf pans, sometimes as muffins, sometimes in ramekins. It's up to you.Mix apples and sugar in a large bowl and set aside. Mix eggs, oil and vanilla in a separate bowl. Combine flour, baking soda, cinnamon, allspice and salt with a fork in yet another bowl. Next, combine egg mixture with apples and sugar. Combine flour mixture with apple mixture. Mix thoroughly it's very chunky. Then add raisins, cranberries, nuts and butterscotch bits into mixture until evenly distributed. Bake for 25-30 minutes. You may need to bake a little longer for loaf or bundt pans. Check with toothpick. Serve warm or at room temp. For added moisture, drizzle with Bourbon Sauce. (see below.)Melt butter over medium heat. Add brown sugar and Bourbon. Simmer on low heat, stirring often to cook off some of the alcohol, about 5 minutes. 1 liter (about 4 cups) bourbon
Orange peels, for garnish

Steps:

  • Combine the cranberries, orange juice, sugar and cinnamon sticks in a small saucepan over medium-high heat. Bring to a simmer and cook, stirring, until the sugar dissolves and cranberries start to pop, about 5 minutes. Let cool completely, then combine with the bourbon in a pitcher.

1 tablespoon shallot, minced
11 ounces mandarin oranges
12 ounces fresh cranberries
1 cup sugar, adjust to your taste, this is very tart with only this amount
1 teaspoon ground black pepper, adjust to your taste, this much is VERY peppery

Steps:

  • In small saucepan combine bourbon, shallots, and orange zest. Use SHALLOTS - small bulbs that look similar to a small yellow onion NOT scallions.
  • Bring to boil over medium heat, and simmer until syrupy, about 10 minutes.
  • Add cranberries and sugar, and stir until sugar dissolves.
  • Reduce heat.

  • Make the simple syrup:
  • Combine the first five ingredients in a medium saucepan. Bring to a boil over medium heat. Reduce the heat to medium-low and simmer until the cranberries break down, about 15 minutes. Strain the syrup through a fine-mesh sieve, pushing down on the cranberry pulp. Discard the solids. Cool the syrup to room temperature. (The simple syrup may be stored in a glass container in the refrigerator for up to one month.)
  • Make the cocktail:
  • Combine 3-4 cranberries, 3-4 mint leaves, lime and orange slice in a cocktail shaker and muddle. Add the bourbon and Cointreau, and then add the remaining ingredients. (Ice is approximate to fill half of shaker.) Shake vigorously and pour into a tall glass or strain into a rocks glass. Serve with whole fresh or frozen cranberries, lime wedges and mint sprigs.

Grilled Wagyu Flank Steak over Wild Mushroom Ragout in Sun-dried Cranberry Bourbon Demi-glace image

1 1/2 pounds wild mushrooms (cremini, shiitake, and oyster)
6 cups chicken stock
4 tablespoons shallots
1 cup chopped scallions
1 cup diced tomatoes
1 cup wine (Chardonnay works well)
1 cup sun-dried cranberries
8 ounces bourbon
4 tablespoons diced shallots
4 cups veal demi-glace
2 (1 1/4 pound) flank steaks

Steps:

  • Wild Mushroom Ragout: Simmer selection of wild mushrooms in chicken stock. Add shallots, scallions, diced tomatoes, and wine of choice. Reduce to "au sec" or until there is almost no liquid remaining. Set aside.
  • Sun-dried Cranberry Bourbon Demi-glace: Soak cranberries in bourbon for 20 minutes. In saucepan, carefully add the cranberries and bourbon over low heat and flambe. When flames die down, add shallots and continue to simmer. Add veal demi-glace and simmer for a few minutes. Season, to taste. Hold warm until ready to serve.
  • Preheat a grill.
  • Grill flank steak over open flame to desired temperature. Be sure to slice steak against the grain on a slight bias. Fan out flank steak over wild mushroom ragout and top with sauce.
