Easy Endive, Cranberry, Walnut Appetizers image

An excellent, quick appetizer and always a hit! Cranberry or walnut balsamic vinegar is wonderful with this!

3 heads endive - washed, dried, and separated into individual leaves
⅓ cup crumbled blue cheese
⅓ cup sweetened dried cranberries (such as Craisins®)
⅓ cup glazed walnuts
2 tablespoons balsamic vinegar, or to taste

Steps:

  • Arrange endive leaves on a serving tray.
  • Stir blue cheese, cranberries, and walnuts together in a bowl. Place a small amount of the blue cheese mixture on each leaf. Drizzle with balsamic vinegar.

5 ounces cream cheese, such as Kraft Philadelphia, room temperature
4 ounces blue cheese, room temperature
1/2 cup dried cranberries
1/2 cup pecans, finely chopped
4 tablespoons unsalted butter, room temperature
1 tablespoon honey
Kosher salt and freshly ground black pepper

1 English cucumber, sliced in half lengthwise, seeds scooped out with a spoon to create 2 "boats"

Steps:

  • Combine the cream cheese, blue cheese, cranberries, pecans, butter, honey and some salt and pepper in a stand mixer fitted with the paddle attachment. Mix until fully combined.
  • Spread the filling into the cucumber "boats." Slice crosswise into 1-inch pieces.

1/3 cup crumbled blue cheese

  • In a large bowl, beat cream cheese and jelly until smooth. Stir in cheese and cranberries. Spoon heaping teaspoonfuls onto each endive leaf. Sprinkle with pecans.

½ cup butter, melted
5 ounces blue cheese, crumbled

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9-inch pie plate with non-stick cooking spray.
  • Slice each biscuit into quarters, arrange then in the prepared pie plate. Pour melted butter over the biscuits, then sprinkle the biscuits with blue cheese.
  • Bake for 8 to 10 minutes.
