CRANBERRY APPLE COBBLER
This is easy to make, and really tasty. I made it for thanksgiving, but would eat it anytime! You can leave out the Cranberrys or add another kind of frozen fruit if you'd like.

Steps:
- Heat oven to 400 degrees.
- Peel, core, and slice 4 medium tart cooking apples into 1/4 inch slices.
- In large bowl, combine all cobbler ingredients except apples and cranberries.
- Add apples and cranberries; toss to coat with flour mixture.
- Put in 2-quart casserole dish.
- In medium bowl, stir together 2/3 cup flour and 1/2 cup sugar, cut in butter until crumbly.
- Sprinkle over fruit mixture.
- Bake for 40 to 45 minutes, or until golden brown.
- Serve warm with ice cream.

I studied a year abroad and lunch was the only meal provided. My friends and I made a "dinner club" in order to ensure we ate good food every night. One of the recipes I learned was this cranberry apple cobbler/kugel.

Steps:
- Peel and slice the apples.
- Layer the apples in a 9x13 pan.
- Mash the cranberry sauce and layer on top of the apples.
- In a bowl mix the oatmeal, flour, raw brown sugar, baking powder, and cinnamon.
- Then with your hands mix the margarine with the bowl of dry ingredients.
- Layer the oatmeal mixture on top of the cranberry sauce.
- Bake at 350°F 1 hour uncovered and then up to an hour covered until the cranberry sauce seeps into the apples and the edges are light brown.

- In a shallow 2-cup baking dish toss together the cranberries, the apple, the zest, the brown sugar, the cinnamon, the cloves, and 1 tablespoon of the flour and dot the top with the butter. In a bowl stir together the remaining 1/2 cup flour, the baking powder, and the salt. Add the shortening, blend the mixture until it resembles coarse meal, and stir in the yogurt. (The dough will be sticky.) Drop the dough by spoonfuls onto the cranberry mixture, sprinkle it with the granulated sugar, and bake the cobbler in the middle of a preheated 400°F. oven for 30 minutes, or until the top is golden. Serve the cobbler with the ice cream.

- Heat oven to 400°F. Grease 2-quart casserole. In medium bowl, mix flour and granulated sugar. Cut in butter, using fork or pastry blender, until crumbly. Stir in egg until blended.
- In casserole, mix all filling ingredients. Crumble topping over fruit mixture.
- Bake uncovered 25 to 30 minutes or until topping is golden brown.

FANTASTIC APPLE-CRANBERRY APRICOT MATZOH KUGEL!
This is better than any bread pudding!!! This is best served at room temperature, yeah right, just try and wait that long, you will have it half gone before it even reaches room temperature LOL! it is THAT good, try this, you will LOVE IT! Dried cherries can be used in place of the dried apricots and raisins can be replaced for the cranberries, I use Ocean Spray Craisins when I make this! If you prefer a less sweeter kugel then reduce the white sugar to 1-1/4 cups or less.

- Set oven to 350°F.
- Grease a 3-quart casserole dish (you can also make this in a 13 x 9-inch baking dish, I used my 3-quart Corning Ware casserole dish for this).
- In a bowl toss the apple pieces with 1/3 cup brown sugar (can use less than 1/3 cup sugar if desired) and 1/4 cup fresh orange juice; set aside.
- In another bowl soak the matzoh pieces in 1 cup warm water until soft but not mushy; set aside.
- While the matzoh is soaking, in a large bowl whisk the eggs until well blended; add in the salt, cinnamon, 1-1/2 cups sugar, melted butter, cranberries (or Craisins) and chopped dried apricots; mix to combine.
- Gently squeeze the liquid from the matzohs (don't worry about squeezing all of the water out completely!) add to the egg mixture along with the chopped apples; mix very well.
- Transfer the mixture into greased baking dish.
- Sprinkle lightly with about 2 tablespoons white or brown sugar, then dot all over with the cold butter pieces.
- Bake covered with foil for about 40 minutes.
- Remove from oven uncover, then return and bake uncovered for another 20 minutes, or until the casserole is set.
- Serve at room temperature.
CRAN-APPLE COBBLER

- In a large cast-iron or other ovenproof skillet, combine the first eight ingredients; let stand for 5 minutes. Cook and stir over medium heat until mixture comes to a full rolling boil, about 18 minutes. Dot with butter., In a small bowl, combine the flour, sugar, baking powder and salt. APPLE/PEAR/CRANBERRY KUGEL
Made this dessert kugel for the first time last Passover. Found the recipe on the net and it was very well received. I used cooking pears and even though they take longer time to cook I like that better since they do not mush up too much. You can easily make half the recipe, I did, and then used a round baking tin.

Steps:
- Preheat oven to 350°F.
- Butter a 9x13 inch baking dish and set aside.
- Peel and core apples and pears, cut them in half.
- Put them in a pan with the cranberries and raisins.
- Add wine or water and cover.
- Cook on low heat for about 20 minutes, or until the apples fall apart and the pears (if using cooking pears) are half soft).
- Mash the fruit into large chunks with a fork and add both sugars.
- Cook over medium-low heat for another 5 minutes.
- Let the mixture cool slightly
- Beat the eggs in a separate bowl and add to the cooled fruitmixture.
- Stir well.
- Pour into the prepared baking dish
- Bake for about 40-50 minutes, or until the top browns.
- Serve hot or at room temperature.
