I have never tried this recipe, but my mom got it from a co-worker. It is supposed to be really good, so we are going to try it soon.

6 medium sweet potatoes
1 cup water
1 cup sugar
6 ounces pecan halves
2 cups fresh cranberries (Ocean Spray) or 2 cups frozen cranberries (Ocean Spray)
1 large apple, thinly sliced
1/2 cup light brown sugar, firmly packed
1/4 teaspoon ground cinnamon
1/2 cup water (or orange juice)
1/4 cup butter

Steps:

  • Put sweet potatoes in a large saucepan.
  • Add enough water to cover the potatoes.
  • Bring to a boil; cover and cook until potatoes are'fork' tender.
  • Cool slightly.
  • Combine water, sugar, and cranberries in a medium saucepan.
  • Cook until cranberries pop.
  • Preheat oven to 350 degrees.
  • Grease a 13" X 9" X 2" baking dish.
  • Layer the sweet potatoes, apple slices, and cooked cranberries in baking dish.
  • Sprinkle with brown sugar, cinnamon, and butter.
  • Pour water (or orange juice) over top.
  • Last, the peacon halves on top.
  • Bake in oven for 30 minutes or until tender.

1 large butternut squash, peeled and cut into 1-inch cubes
2 large apples, cut into 1/2 inch thick slices (tart cooking apples)
1/2 cup fresh cranberries (or frozen)
1/2 cup brown sugar
1/4 cup unsalted butter
1 tablespoon flour
1 teaspoon salt
1/2 teaspoon ground nutmeg

Steps:

  • Preheat oven to 350 degrees F. Slice and peel squash and apples.
  • Place squash cubes in an ungreased 7 x 11 inch baking dish. Plese apples on top and then cranberries. Mix the flour, salt, sugar and nutmeg and sprinkle on top. Dot with butter. Bake 50-60 minutes.

1/3 cup granulated sugar

1/2 cup chopped nuts
1/4 cup packed brown sugar
1/4 cup butter or margarine, softened

Steps:

  • Heat oven to 375°F.
  • Stir together apples, cranberries, granulated sugar, 2 tablespoons Bisquick and the cinnamon in medium bowl. Spread in ungreased square baking dish, 8x8x2 inches.
  • Stir together remaining ingredients; sprinkle evenly over apple mixture.

1 and 1/2 teaspoons Haddar Baking Powder
1/2 teaspoon cinnamon
1/2 tablespoon vanilla sugar

4 Granny Smith apples, peeled and diced
2 cups fresh or frozen cranberries

  • Preheat oven to 350 degrees Fahrenheit (180 degrees Celsius).
  • In a medium bowl, combine the first six ingredients. Stir in parve milk and oil.
  • Heat water and sugar in a small saucepan over medium-high heat. Stir until sugar is completely dissolved. Set aside.
  • Combine apples, cranberries, and lemon zest in a nine-inch (23-centimeter) square or round baking dish. Spread batter evenly over fruit. (The batter may not completely cover the fruit.) Pour sugar and water mixture over the batter.
  • Bake for one hour.

2 cups raw cranberries
1 cup sugar
1 cup quick oats, uncooked
1/2 cup chopped pecans
1/3 cup flour
1/2 cup brown sugar
1 stick margarine, melted

Steps:

  • Combine apples and cranberries in 2-quart casserole dish. Mix remaining ingredients, except margarine, and spread over apples and cranberries. Spoon melted margarine over top. Bake at 325° for 45-60 minutes. Can be used with a meal or as a dessert with whipped topping. Freezes well.
