STUFFED MUSHROOMS WITH CRABMEAT
Steps:
- Preheat oven to 450˚F. Line a baking sheet with foil.
- Lay the mushrooms on the prepared baking sheet, gill side up. Spray them with cooking spray, and season with salt and pepper to taste. Bake until the mushrooms are tender, about 10 minutes.
- Meanwhile, in a medium bowl, stir together the crabmeat, mayonnaise, bacon bits, peas, chives, and panko. Season the mixture with salt and pepper to taste.
- Divide the mixture among the mushrooms, covering the top of each mushroom completely and mounding the filling high. Bake until the crab mixture is hot throughout and beginning to brown, about 15 minutes. Serve immediately.

Steps:
- Heat oven to 350°F.
- Remove mushroom stems; chop enough stems to measure 1/3 cup. Discard remaining stems. Place mushroom caps, rounded sides down, in single layer in shallow baking dish.
- Melt 1 Tbsp. butter in medium skillet on medium heat. Add onions and chopped mushrooms; cook 3 to 5 min. or until mushrooms are tender, stirring frequently. Stir in bread crumbs. Spoon into medium bowl. Add cream cheese; mix well. Stir in crabmeat.
- Melt remaining butter; brush onto mushroom caps. Fill with cream cheese mixture.
- Bake 18 to 20 min. or until heated through.

- Wash mushrooms and pat dry with paper towels. Pull out stems, leaving a hole where the filling will go. Mince all or most of the stems to make 1 cup, Set aside.
- Heat olive oil in a medium skillet over medium heat. Add onions and mushroom stems. Cook and stir until vegetables are tender, about 3 - 4 minutes.
- Stuff the mushroom cabs with the crabmeat mixture.
- Arrange stuffed mushrooms in a single layer in a shallow baking pan. Bake at 400 for 15 minutes. Serve hot or at room temperature.

Steps:
- Remove and chop stems of mushrooms. Put to the side.
- Chop onion superfine. (Add as much or as little as you want)
- Chop crabmeat and add to onions. (Add as much or as little as you want)
- Prepare stuffing and add to onion and crabmeat mixture.
- Add chopped mushroom stems (optional).
- Put mixture into mushroom caps.
- Sprinkle with cheese and top with butter.
- Put in oven at 350 until mixture has browned and is a little crispy. Typically takes 20-25 minutes. I usually start checking around 20.
