PAULA DEEN'S BOILED CRABS IN GARLIC BUTTER



Paula Deen's Boiled Crabs in Garlic Butter image

I got this from FoodTV. I get my crabs, live from the Asian market. Serve with tons of napkins as this is a messy dish but totally delicious.

6 live blue crabs
2 tablespoons Old Bay Seasoning
2 tablespoons salt
1 cup butter
1/2 cup chopped fresh garlic
1 cup chopped fresh parsley leaves

Steps:

  • In a large pot drop crabs into boiling water, making sure water covers the crabs.
  • Add Old Bay and salt to boiling water and crabs.
  • Cook until crabs are red, approximately 10 minutes.
  • Let crabs cool to the touch.
  • Remove the lungs (they can be found by lifting the back shell up, they look like"fingers").
  • Leave any roe in there and also leave the claws attached.
  • Crack crabs down the middle, making 2 pieces of each crab.
  • In a deep skillet, melt the butter and add garlic and parsley (I always add a little Tony Cacheres or cayenne too).
  • Place the crabs in the butter mixture, coating them and then place on a platter.
  • Pour remaining butter from skillet onto the crabs before serving.
  • Serve with bread to sop up the extra butter on the platter.

These were served at a party many years ago, and I have made them from time to time over the years, and they always disappear quickly. If you enjoy seafood, you will love these. Preparation time does not include freezing time.

1/4 lb butter
1 (6 ounce) jar Kraft Old English cheese spread
1 1/2 teaspoons mayonnaise
1/2 teaspoon garlic salt (can use garlic powder if watching salt intake)
1/2 teaspoon seasoning salt
1 (8 ounce) can crabmeat
6 English muffins, split

Steps:

  • Combine all ingredients (except muffins) till well combined.
  • Spread evenly over split muffins (12 pieces).
  • With sharp knife, cut into small pie shaped slices (I usually cut each in 4 pieces, but if you need more, you can cut them smaller).
  • Place on cookie sheet.
  • Put cookie sheet in freezer until crabbies are frozen.
  • When frozen, remove from cookie sheet and place in plastic bag. Return to freezer and store till ready to use.
  • When ready to serve, place on cookie sheet.
  • Put under broiler until bubbly and crisp, approximately 5 minutes.

6 whole english muffins, split in half
1/2 cup margarine or butter
1 jar "Kraft" Old English cheesespread
1 1/2 tsp mayonnaise
1/2 tsp garlic salt
1/2 tsp salt
1 7 oz can crab meat, undrained

Steps:

  • 1. Blend all but crab meat together. Stir in crab meat. Freeze on cookie sheet, cut into 1/4 sections while frozen. Cook frozen. Broil 5-7 minutes. Use less salt, less butter, more crab.
