This recipe is well known in Singapore and is a great hit with tourists and locals alike! It is really spicy!!!

1 pound whole Dungeness crab
5 tablespoons ketchup
1 cup water
2 tablespoons cornstarch
¾ teaspoon dark soy sauce
5 tablespoons vegetable oil
7 cloves garlic, crushed
2 tablespoons chopped shallots
10 red chili peppers, pounded with seeds
¾ teaspoon lemon juice
1 egg, beaten
4 green onions, minced

Steps:

  • Wash crabs and separate claws from body. Crack the shell and cut the body into 4 to 6 pieces.
  • In a large bowl, mix together ketchup, water, cornstarch, and soy sauce.
  • Heat skillet and the oil, stir in garlic and shallots. Fry the garlic and shallots for 1 to 2 minutes before adding the chili. Fry another 2 minutes. Add crab pieces and fry until they turn red, about 4 minutes.
  • Stir sauce mixture into the skillet until the crabs are well coated. Cover the skillet and let simmer on high heat, for 7 minutes or until the shells turn bright red.
  • Remove cover and stir in the lime juice. Stir in beaten egg until it is fully cooked. Turn the heat off and stir in green onions.

CRAB & SHRIMP CHILI (SPICY)

I put this recipe together while trying to find something to fix on a Friday during Lent. It is a tomato based chili with imitation crab and shrimp. Has some heat to it, but not too spicy for my taste because I don't like food so overly spicy you can't taste any of the other flavors. It is fairly simple to put together too. You can serve it with rice if you like or just alone with some crusty bread on the side and a salad.

28 ounces diced tomatoes (use pre-seasoned ones)
10 1/2 ounces cream of mushroom soup
8 ounces imitation crabmeat (flaked)
8 ounces pre-cooked shrimp (deveined and tails removed)
2 tablespoons butter
1/4 cup rice vinegar
1 tablespoon garlic, minced
1 small onion, diced
1/2 cup milk
1 teaspoon salt
2 teaspoons cajun seasoning
1 teaspoon crushed red pepper flakes
1/4 teaspoon blackening seasoning (I used Old Bay)
3 dashes thyme

Steps:

  • Combine all ingredients in a large pot and bring to a boil.
  • Turn heat to low and let simmer for at least a half hour before serving.
  • You can leave it on a low heat setting for several hours if needed.
  • Serve alone or mixed with rice.

1 large sweet pepper, diced
2 garlic cloves, minced
1 (15 ounce) can black beans
1 (15 ounce) can red beans
1 (15 ounce) can pinto beans
1 (15 ounce) can diced tomatoes with green chilies
1/2 lb small shrimp
2 tablespoons olive oil
1 tablespoon Old Bay Seasoning
1 teaspoon chili powder
1/4 teaspoon red pepper flakes

Steps:

  • In large stock pot, add olive oil, pepper, onion and garlic and saute for several minutes.
  • Add all other ingredients except shrimp.
  • Reduce heat to low, cover and simmer for 30 minute.
  • 10 min before serving, add shrimp, and cook until just pink.
  • Serve with grated cheese if desired.

1 mud crab
3 shallots
ginger, 1 in (2.5 cm)
3 long red chillies
5 cloves garlic
2 tablespoons ketchup
1 teaspoon shrimp paste, belacan
2 tablespoons cooking oil
1 ½ cups chicken stock
1 ½ cups tomato puree
1 tablespoon rice wine vinegar
½ cup sweet chili sauce
2 tablespoons soy sauce
2 tablespoons palm sugar
1 egg
1 spring onion
½ cup butter
1 bunch coriander
fried bao dough, mantou

Steps:

  • Prepare the crab by removing the base flap, then pull off the head and clear out the cavity. Keep the head in a bowl. Moving to the body of the crab, remove the gills, which are an opaque brown colour on both sides of the crab. Using a sharp knife, cut the crab in half down the middle, then divide into six parts. Using the knife, crack the crab legs open to allow the flavours to enhance while cooking. Add to the bowl with the head then set aside.
  • In a food processor, add shallots, ginger, red chillies, garlic, ketchup, and shrimp paste, then pulse until it comes together and forms a paste.
  • Heat oil in a wok over medium heat, then once it comes up to temperature fry add the chilli paste and cook for five minutes, stirring occasionally.
  • Add the crab pieces into the wok and stir until they are fully coated. Give the crab time to start turning orange, approximately 5 minutes.
  • Add the tomato puree, chicken stock, rice wine vinegar, sweet chilli sauce, soy sauce and palm sugar, then stir until completely mixed. The crab should be fully orange by now. Add a lid on top and allow the mixture to simmer for 15 minutes.
  • Remove the crab legs and head, and plate up on a shallow dish.
  • Add butter, spring onions, and egg. Let the egg sit for a minute before stirring, then give the sauce a quick stir. The sauce should thicken up quickly.
  • Pour the sauce on top of the crab and garnish with a few sprigs of coriander.
  • Enjoy!

CHILI CRAB DIP WITH SHRIMP CHIPS



Chili Crab Dip With Shrimp Chips image

Inspired by chili crab, an aromatic and spicy Singaporean seafood braise, this crab dip gets sweetness from tomato paste and flavor from shallots and ginger.

2 medium shallots, quartered
1 lemongrass stalk, bottom third only, tough outer layers removed, cut into a few pieces
1 3-4" piece ginger, peeled, coarsely chopped
1 serrano chile, preferably starting to turn orange, halved, seeds removed if desired
4 medium garlic cloves
2 Tbsp. double-concentrated tomato paste
1 tsp. sugar
1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt, plus more
1 Tbsp. vegetable oil
4 oz. cream cheese, room temperature
2 Tbsp. mayonnaise
8 oz. claw crabmeat, picked over
3 medium scallions, finely chopped
½ large bunch cilantro, tough stems discarded, leaves and tender stems finely chopped
2 Tbsp. store-bought fried shallots or garlic (optional)
Shrimp chips (such as Dandy's or Shrimp Snacks) or Ritz crackers (for serving)

Steps:

  • Pulse or blend shallots, lemongrass, ginger, chile, garlic, tomato paste, sugar, 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt, and ½ cup water in a food processor or blender until a coarse purée forms.
  • Heat oil in a medium skillet over medium-high. Scrape purée into pan and cook, stirring often, until mixture darkens and thickens to the consistency of tomato paste, 12-15 minutes. If it begins to stick and brown, stir in a little water (about 1 Tbsp.), scraping up any browned bits with a wooden spoon. (You should have about ⅔ cup.)
  • Transfer mixture to a small bowl and vigorously mix in cream cheese and mayonnaise. Stir in crabmeat, half of the scallions, and half of the cilantro. Taste dip and season with more salt if needed.
  • Transfer dip to a serving bowl. Top with remaining scallions and cilantro, then with fried shallots (if using). Serve with shrimp chips.
