TARRAGON GARLIC BUTTER (TO DIP YOUR CRAB LEG MEAT!!)



Tarragon Garlic Butter (to dip your crab leg meat!!) image

I would eat steamed Alaskan King Crab legs 24/7 if I could afford it! But on the rare occasions (that are getting few and far between) that I do treat myself, this is THE butter "sauce" to dip the meat in! It could be used to dip any seafood in - I've just always reserved it for my crab legs.

1/2 cup butter
1 tablespoon minced garlic
1 teaspoon lemon juice
1 -2 teaspoon dried tarragon or 1 -2 teaspoon fresh tarragon
1 dash of your favorite white wine (optional)

Steps:

  • Put butter and garlic in a small saucepan over medium heat to melt.
  • Once melted, add the rest of the ingredients and simmer for a few minutes or until your crab legs are steamed and ready to devour!
  • Enjoy!

2 lbs lump crabmeat

1 cup butter, 2 sticks
32 oz. cream cheese
2 lbs lump crab meat, flaked and cooked

Steps:

  • 1. Melt the butter and cream cheese in a double boiler, stirring to mix well. Fold in the crab meat. Serve in a chafing dish with crackers or chips. You may also spread this on English muffins land top with a poached egg and Hollandaise sauce as a substitute for the Canadian bacon for a coastal version of eggs Benedict. Makes 8 cups.
