Dressing:
1 head Roman littuce chopped to bitsize
1 Avacado, diced
2 tablespoons diced red onion
2 tabelspoons capers, drained and rinsed
2 cups or more lump crab meat
2 tablespoons feta cheese, small dice
1 sliced tomato for garnish
Salt and pepper
12 oz lime juice
24 oz light olive oil
6 tablespoons /(Salt/Pepper mix)

Steps:

  • Make vinaigrette Mix lime juice with olive oil and salt pepper mix. Let set for an hour to blend and then shake before mixing. Put all ingredients in bowl except tomatoes, with 1/4 of the crab meat . Toss Pour a small amount of dressing over the top and toss ligthly. Plate and put the rest of the crab equally over the top of each plat. Pour a small amount of dressing over the top, garnish with tomatoes and serve.

2 scallions, minced
1/4 cup mayonnaise
1/4 cup ketchup
1 tomato, peeled and diced
1 lime juiced
Salt and pepper
Plantain chips
Sliced avocado

Steps:

  • In a large bowl add all ingredients until blended, being careful not to shred crab meat. Serve in a mold on a chilled plate, garnish with plantain chips and sliced avocado.

1 lb large lump crabmeat
1 stalk celery, sliced very thin
1 medium scallion, sliced very thin
1/4 small green pepper, finely diced
1/2 cup mayonnaise
1 tablespoon fresh lime juice
1 tablespoon small caper
1 1/2 teaspoons Old Bay Seasoning
1/2 teaspoon ground mustard
1/8 teaspoon cayenne pepper (more or less to taste)
2 ripe avocados

Steps:

  • Lightly toss the chopped vegetables with the crab meat - try to minimize breaking up the lumps.
  • Stir the remaining ingredients together and toss into the crab-vegetable mixture.
  • Chill at least one hour.
  • Peel and halve the avocados. Place them on a bed of spring greens or butter lettuce.
  • Spoon the crab salad over the avocado halves. Garnish with lemon wedges.

1 california avocado
8 ounces surimi (Crab flavor)
1 medium tomatoes, chopped
2 tablespoons fresh cilantro, chopped
1/4 onion, sliced
1/2 lime, juice of
salt & freshly ground black pepper

Steps:

  • Shred surimi and place in bowl.
  • Slice avocado in half and twist to open. Carefully Lodge a knife in the seed and twist to remove.
  • Score avocado into 1 inch by 1 inch sections and spoon into bowl.
  • Add tomato, onion slivers, and cilantro.
  • Squeeze 1/2 lime over the salad.
  • Salt and pepper to taste.
  • Stir well and serve.

Kosher salt
1/2 pound haricots verts or green beans, halved
2/3 cup low-fat plain yogurt
3 tablespoons low-fat mayonnaise
1 to 2 tablespoons fresh lemon juice
1/2 cup chopped fresh chives
1/4 cup chopped fresh basil
3 anchovy fillets, chopped
Freshly ground pepper
1/2 pound lump or claw crabmeat
1 Hass avocado, halved, pitted and diced
3 romaine hearts, chopped
1 1/2 cups whole-wheat croutons
1 pint cherry tomatoes, halved

Steps:

  • Bring a saucepan of salted water to a boil. Add the haricots verts and cook until crisp-tender, 3 to 5 minutes. Drain and run under cold water to stop the cooking.
  • Puree the yogurt, mayonnaise, lemon juice, chives, basil and anchovies in a blender until smooth. Season with salt and pepper.
  • Toss the crabmeat, half of the avocado and about 1 tablespoon of the yogurt dressing in a small bowl. Toss the romaine, croutons, haricots verts and the remaining avocado with the remaining dressing in a large bowl.
  • Divide the romaine salad among plates, top with the tomatoes and place some of the crab mixture in the center.
