Steps:
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Keep warm and covered.
- Meanwhile, melt the butter in a large saucepan over medium heat. Add the minced garlic and cook until garlic releases its aroma, about 2 minutes, being careful not to let the garlic brown. Stir in the flour, salt, pepper, and cayenne pepper. Reduce heat, and cook, stirring constantly for about 2 minutes. Add the half-and-half and stir over medium heat until slightly thickened, about 3 minutes.
- Add the cream cheese and Parmesan cheese to the sauce and stir until cheeses melt and mixture is smooth. Mix in the crabmeat and continue cooking until crabmeat is heated through, about 3 minutes.
- Divide the fettucine between 2 plates or bowls and top with the crab sauce.

- 1. Heat oven to 350^. Grease or spray a 13x9-inch baking dish,st aside. Make Alfredo sauce as directed,then set aside; this is super easy and very,very delicious.
- 2. Crab/Pasta Cook pasta in boiling water for 8 minutes, al dente. Place frozen peas in a large strainer and pour the pasta and water over peas. Drain well. Place peas and pasta in a large bowl.
- 3. Add the remaining ingredients to the pasta,peas-except the cracker crumbs and melted butter. Combine the cracker crumbs and butter, blending well, set aside.
- 4. To the pasta mixture stir in the Alfredo sauce.Mix to blend. Pour into the prepared baking dish.Bake for 25 minutes then sprinkle cracker mixture over top and bake for 10 minutes more. Remove and let set for 5 minutes before serving..

- Slice the squashes and dice the mushroom and onion.
- Combine the Alfredo sauce, pasta, crab, onions, mushrooms, squash, zucchini, parsley and pepper flakes in a large bowl and toss to coat.
- Transfer mixture to a greased 13x9x2 baking dish and cover with cheese.
- Cover and bake at 325°F for 35 minutes.
- Toss bread crumbs and butter and sprinkle over casserole.

CAJUN SHRIMP & CRAB WITH ALFREDO SAUCE
My recipe fed four hungry Cajuns. Reminder: Shrimp tends to produce water while cooking. If you do not want a thin sauce, half way cook the shrimp in a separate pot. Then spoon them out into your sauce. If you do not like Shrimp or Crab you can always leave whichever one you do not like out of the recipe. You can also use this same recipe but with Crawfish or Chicken. I baked garlic bread to eat with my dish.

- In your main saucepan, sauté garlic and 1/2 yellow onion with butter do not burn. Cook until onions become transparent.
- In a separate pot, cook down your can of Rotel until soft. Then add to main saucepan.
- Stir in whipping cream, reduce heat to low and continue stirring about 2 minutes.
- Add Shrimp & Crab. Cook till shellfish is done.
- Season to your liking. I used Slap Ya Mama Cajun Seasoning and salt & pepper.

- 1. Put tortillas on cookie sheets and bake at 350 for 5-10 min till they get crispy
- 2. Make Alfredo sauce: melt butter in saucepan add flour stir and cook for 3-4 min till it loses that raw flour smell. Add milk, then seasonings simmer, stirring constantly till thickened and bubbly. Add crab and cheese. Stir to combine. Spread 1/4 of sauce on each tortilla
- 3. In sauté pan, melt butter, add oil put in onion and sauté for about 4-5 min till translucent. Add mushrooms and garlic. Sauté another 2-3 min. Add Worcestershire sauce and stir to coat. Put 1/4 of mixture on each pizza.
- 4. In same pan melt butter and add oil. Add shrimp, garlic, lemon and seasonings. Sauté till shrimp is pink. Place 1/4 of shrimp on each pizza.
- 5. Top pizzas with cheese and cilantro. Bake at 350 for 10-12 min till cheese is melted. Serve hot. Can cut into pieces or serve whole.

This is so scrumptious and rich you'd think you've gone to EPICUREAN HEAVEN. Basil accents this entrée with a touch of garlic. Lower in fat as it is prepared with nonfat half and half. I serve this with a medley of broccoli, cauliflower and carrots. Times are estimated, as I don't clock myself. You can substitute other fish fillets, but never use imitation crab. This recipe just looks busy, but is step by step and actually not that difficult. So read through first and you'll see how simple it is.

- Prepare Alfredo Sauce.
- Melt butter in sauce pan over medium heat. Gradually whisk in flour. This will create a paste. Gradually add half and half, whisking until incorporated and no lumps are present.
- Continue to whisk until hot, about 3-5 minute. The longer you cook the base (without the cheese) the thicker the sauce will be.
- Add parmesan slowly, whisking until incorporated. Add minced garlic, salt and pepper. Cook for 2 minutes or until cheese is melted. Remove from heat, add half the can of crab. Keep warm on very low heat, stirring occasionally so skin doesn't form.
- Preheat broiler.
- Cut four 6x8-inch pieces of foil.
- Place 1 fish fillet in center of each piece of foil. Fold up foil to form rectangle with 3/4-inch-high sides. Place packets on small baking sheet.
- In small bowl combine olive oil, minced basil leaves, lemon juice minced garlic clove, salt and pepper mixture.
- Drizzle over fish in foil. Broil fish, Turning fillets when opaque in center, about 6 minutes.
- Transfer fillets to 4 plates. Spoon alfredo sauce over fillets. Garnish with fresh julienned cut basil leaves, parmesan cheese and remaining crab meat. Serve.

FETTUCCINE ALFREDO WITH THAI RED CURRY AND LUMB CRAB MEAT
Steps:
- Bring a large pot of water to a boil. Once it's ready, add a generous sprinkle of salt to the water. Add the fettuccine noodles; stir. Allow to cook until al dente, about 10 minutes. While this cooks, get started on the sauce. In a large saucepan, add the butter and allow to melt slightly. Add in the garlic and fry slightly for about 30 seconds. Pour in the heavy cream, salt, white pepper, lemon juice, and allow to come to a gentle boil; stirring. Lower the heat and add the Parmesan cheese. Once it's melted thoroughly, add the Thai red curry and using a whisk, allow to incorporate into the sauce completely. Taste for seasonings. Add a pinch of cayenne pepper and then gently stir in the lump crab meat. Once the fettuccine noodles are cooked al dente, add them directly into the saucepan with the alfredo-thai red curry sauce and mix gently to combine. Feel free to add pasta water to loosen the sauce, if necessary. Serve pasta in big bowls and garnish with lemon zest, parsley, and another sprinkle of cayenne pepper on top. Provecho!

- 2. Heat oil in large skillet over med neat. Add onion and red pepper cook 3 minutes. Add broccoli and garlic cook stirring occasionally 5 minutes till tender.
- 3. Heat half and half and butter in small saucepan until butter is melted. Stir in cheese and salt. Add cream mixture and crab meat to skillet. Heat through over med heat. Toss with cooked drained pasta.
CRAB ALFREDO
Steps:
- Melt butter in large skillet. Add garlic salt. Stir in crab meat. Add canned tomatoe pieces or fresh chopped tomatoe. Add sliced black olives. Stir until heated through. Add Low-fat SourCream and heat through. Serve over rice or noodles
