TEXAS COWBOY CAKE

Number Of Ingredients 16

3 c sugar
1 1/2 tsp cinnamon
3/4 tsp cloves, ground
2 c water
1 c strong brewed coffee
1 box raisins (15 oz.)
1 box dates, chopped (8 oz.)
3/4 c butter
4 1/2 c all purpose flour
1 1/2 tsp baking soda
1 1/2 Tbsp baking powder
3/4 tsp salt
3/4 c chopped pecans
1/2 c light corn syrup
1 c pecans, halved
2 Tbsp bourbon or rum (optional)

Steps:

  • 1. Combine first eight ingredients in a saucepan and bring to low boil while stirring continually. Reduce heat and let simmer 5 minutes. Remove to cool.
  • 2. Sift together flour, baking soda, baking powder and salt.
  • 3. Once cooled to lukewarm, slowly stir the liquid spice/fruit mixture into the dry ingredients. Fold in chopped pecans. Pour into two large well-greased loaf pans.
  • 4. Arrange pecan halves in a decorative pattern on the top of the loaves.
  • 5. Bake 1 hour at 300 degrees.
  • 6. With a brush, gently apply a coat of corn syrup over the cakes. (A few tablespoons of bourbon or rum may be added to the corn syrup.)
  • 7. Continue baking one hour, or until a toothpick come out of the cakes cleanly. Cool.
  • 8. For an adult dessert, a few tablespoons of bourbon or rum can be poured on each slice prior to serving.

1 box Betty Crocker™ Super Moist™ yellow cake mix
Water, vegetable oil and eggs called for on cake mix box
Tray or cardboard (18x15 inch), covered with foil or wrapping paper and plastic wrap
2 containers Betty Crocker™ Rich & Creamy or Whipped vanilla frosting
Red food color
Brown food color
1 roll Betty Crocker™ Fruit by the Foot™ chewy fruit snack, any red flavor (from 4.5-oz box)
1 tablespoon edible pearls
2 large yellow gumdrops

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Grease bottom only of 13x9-inch pan with shortening or cooking spray.
  • Make and bake cake mix as directed on box for 13x9-inch pan, using water, oil and eggs. Cool 10 minutes. Run knife around side of pan to loosen cake; remove from pan to cooling rack. Cool completely, about 1 hour. For easier handling, refrigerate or freeze cake 30 minutes to 1 hour or until firm.
  • Use serrated knife to cut boot shape from cake (template can be found under the Tips below) saving cake scraps for another use. Place cake on serving plate or foil-covered tray.
  • In medium bowl, mix 1 container frosting and red food color until desired shade. Spread thin layer of red frosting over cake to seal in crumbs. Refrigerate or freeze 30 minutes to 1 hour.
  • Frost cake with remaining red frosting. In small bowl, mix 1/2 container frosting and brown food color. Frost sole of boot, heel and top of boot with brown frosting. With remaining frosting, pipe western design on boot (template can be found under the Tips below). Decorate with edible pearls. Unroll fruit snack; cut to look like leather strap for pulling on boot. Place strap at top center of boot. On sugared surface, roll gumdrops with rolling pin to flatten. Cut shapes for strap and spur; place on boot.
