Yield 12-15 servings

Number Of Ingredients 14

For the casserole:
7 slices white sandwich bread
1 pound bulk breakfast sausage
Softened unsalted butter or nonstick vegetable cooking spray (for pan)
4 scallions, white and pale green and dark green parts separated, thinly sliced
1 (10-ounce) package frozen spinach, thawed, squeezed dry
8 ounces cheddar cheese, shredded (about 2 cups)
8 large eggs
1 1/2 cups milk
1/2 cup full-fat Greek yogurt
1 teaspoon mustard powder
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground nutmeg

Steps:

  • Preheat oven to 425°F. Toast bread on a rimmed baking sheet until dry, 8-10 minutes.
  • Meanwhile, heat a large skillet over medium-high. Add sausage and cook, breaking into pieces with a spatula, until browned, about 7 minutes.
  • Butter a 3-quart baking dish. Arrange 6 bread slices in dish in one layer, covering bottom of pan completely and cutting slices to fit if needed. Tear remaining slice into smaller pieces to fill in any gaps.
  • Using a slotted spoon, transfer sausage to baking dish, scattering over bread.
  • Heat skillet over medium and add white and pale green scallion parts. Cook, stirring, until softened and just starting to take on color, about 3 minutes. Add spinach, stir to combine, and cook until warmed through, 1-2 minutes more. Top sausage with spinach mixture, then top spinach mixture with cheese.
  • Whisk eggs, milk, yogurt, mustard powder, salt, pepper, and nutmeg in a large bowl. Gently pour over casserole. Cover and chill at least 4 hours or up to overnight.
  • Uncover dish and transfer to a cold oven. Heat oven to 375°F and bake casserole until eggs are puffed and cheese is browned, about 40 minutes.
  • Let casserole cool several minutes. Top with dark green scallion parts.
  • Do Ahead
  • Casserole can be assembled 1 day ahead. Tightly cover and chill.

COWBOY BREAKFAST

Cowboy Breakfast image

I had my first taste of this while working as a volunteer at a local state park during a pioneer reenactment day. A gentleman was cooking it and handing out small samples. It was so good, I had to ask for the recipe. He told me - sausage, frozen hash browns, eggs and cheese, all cooked in one pot. I couldn't have asked for a simpler, more filling and delicious meal. I've wanted to post it for a while, but I wanted to make it for someone special first. It's also a good campfire recipe. Leftovers reheat well. I usually make this for my son and I, but I have made it for 6. We used 9 eggs and could easily have used the 11 available. All amounts are variable according to personal preferance.

1/2 lb bulk sausage (may substitute lean ground pork or split half sausage, half lean ground pork if desired)
1 (25 ounce) package country style frozen hash brown potatoes
6 eggs
shredded cheddar cheese (optional)

  • Brown meat in large pot over medium heat.
  • Add frozen hash browns and stir occasionally, until potatoes are cooked (they will not turn brown).

16 slices Texas toast
Butter
1 pound breakfast sausage, cut into 8 patties
12 eggs
1/2 cup half-and-half
Salt and freshly ground black pepper
1 cup jarred jalapeno slices
Sandwich spread of your choice, such as mayo, spicy sandwich spread or spicy mustard
8 slices cheese, such as American, Cheddar or Cheddar-Jack

Steps:

COWBOY CHRISTMAS BREAKFAST

Cowboy Christmas Breakfast image

Categories     Milk/Cream     Egg     Pork     Breakfast     Brunch     Bake     Christmas     Cheddar     Sausage     Gourmet     Sugar Conscious

Yield Makes 12 servings (or 8 for cowboys)

Number Of Ingredients 10

1/2 stick (1/4 cup) unsalted butter, softened, plus additional for greasing baking dish
1 (1-lb) package bulk breakfast sausage (not links)
1 (15-inch-long) loaf Italian bread (about 4 inches wide)
1 garlic clove, chopped
2 dozen large eggs
1 cup whole milk
2 teaspoons salt
1 teaspoon black pepper
1 large bunch scallions, chopped (1 1/4 cups)
1/4 lb sharp Cheddar, coarsely grated (1 cup)

Steps:

  • Put oven rack in middle position and preheat oven to 375°F. Generously butter bottom and sides of a 13- by 9-inch baking dish.
  • Cook sausage in a 12-inch heavy skillet over moderately high heat, stirring frequently and breaking up any large lumps with a fork, until browned, about 10 minutes. Pour off fat from skillet, then cool sausage to room temperature.
  • Cut half of loaf into 1-inch-thick slices and reserve remaining half for another use. Pulse butter and garlic in a food processor until smooth. Spread a thin layer of garlic butter on both sides of each bread slice, arranging bread in 1 layer in bottom of baking dish. Sprinkle sausage on top.
  • Whisk together eggs, milk, salt, and pepper in a large bowl until frothy, then whisk in scallions and half of cheese. Pour egg mixture over sausage (bread will float to the top), pushing down on bread with a spatula to help it absorb liquid. Sprinkle with remaining cheese.
  • Bake, covered with a large sheet of buttered foil (buttered side down), 30 minutes, then carefully remove foil and bake until top is slightly puffed and eggs are cooked through in center, about 20 minutes more.
  • Let stand 10 minutes, then cut into 12 squares.

COWBOY BREAKFAST CASSEROLE

Cowboy Breakfast Casserole image

Breakfast comes early so I assemble this casserole the night before and pop in the oven in the morning while I inhale my coffee! This was designed for my meat and potatoes only cowboy BUT you can add anything to it in the meat layer. Very very adaptable and cheap!

Provided by Mamas Kitchen Hope

Categories     Breakfast

Time 55m

Yield 6-8 serving(s)

Number Of Ingredients 7

12 slices bread
2 cups colby or 16 slices American cheese
1 lb ham, chopped (any breakfast meat would work) or 1 lb sausage (any breakfast meat would work)
8 ounces sour cream or 8 ounces yogurt
6 large eggs
1 teaspoon ground mustard
salt and pepper

Steps:

  • Line a 9x13 greased pan with 8 slices of bread and top with half of the cheese.
  • Sprinkle meat over cheese. You could also use any other type of meat you prefer. Turkey bacon cooked and crumbled is good too!
  • Mix eggs, milk or sour cream or yogurt, ground mustard, and salt and pepper in a bowl until well blended and pour over cheese.
  • Top with the rest of the cheese and 8 more slices of bread, pressing down so the egg bubbles up and moistens it a little.
  • Spray top of bread with butter flavored cooking spray or spread with a little butter covering the whole surface of the bread.
  • Cover and refrigerate overnight. Bake at 350 F for 45 minutes to 1 hour or until the middle of casserole looks cooked. Knife inserted in middle will come out with melted cheese but not with 'wet' egg when done.
  • Note: Like I said I made this recipe up for my meat and taters cowboy but you can add mushrooms, onions, green pepper etc. if desired. Just throw it into the meat layer.

COWBOY BREAKFAST BAKE

Cowboy Breakfast Bake image

Breakfast ready in 40 minutes! Enjoy this cheesy pork sausage bake made using Gold Medal® all-purpose flour.

Provided by By Betty Crocker Kitchens

Categories     Breakfast

Time 40m

Yield 10

Number Of Ingredients 18

3/4 cup Gold Medal™ all-purpose flour
1/4 cup cornmeal
1 tablespoon sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/3 cup milk
2 tablespoons vegetable oil
1 egg
1 package (12 oz) bulk pork sausage
1/2 cup sliced red bell pepper
1/2 cup sliced onion
6 eggs
1/4 cup milk
1/2 teaspoon salt
Dash of pepper
1 tablespoon butter or margarine
2 cups shredded Cheddar cheese (8 oz)
2/3 cup Old El Paso™ Thick 'n Chunky salsa, if desired

Steps:

  • Heat oven to 400°F. Spray bottom and sides of 13x9-inch pan with cooking spray or grease with shortening. In medium bowl, mix flour, cornmeal, sugar, baking powder and 1/4 teaspoon salt. In small bowl, stir together milk, oil and egg. Add egg mixture all at once to flour mixture; stir just until moistened. Spread batter in pan. Bake 10 to 13 minutes or until light golden brown.
  • Meanwhile, in 10-inch nonstick skillet, cook sausage, bell pepper and onion over medium-high heat 5 to 7 minutes, stirring occasionally, until sausage is no longer pink; drain. Remove sausage from skillet; keep warm.
  • In medium bowl, beat eggs, milk, salt and pepper with fork or wire whisk until well mixed.
  • In same skillet, heat butter over medium heat just until butter begins to sizzle. Pour egg mixture into skillet. As mixture begins to set at bottom and side, gently lift cooked portions with spatula so that thin, uncooked portion can flow to bottom. Avoid constant stirring. Cook 3 to 4 minutes or until eggs are thickened throughout but still moist.
  • Arrange eggs over hot crust; top with sausage mixture. Sprinkle with cheese. Bake 5 to 7 minutes or until cheese is melted. Serve with salsa.

COWBOY BREAKFAST SKILLET

COWBOY BREAKFAST SKILLET image

Categories     Egg     Breakfast     Wheat/Gluten-Free

Number Of Ingredients 8

• 1 lb breakfast sausage
• 2 medium sweet potatoes, diced
• 5 eggs
• 1 avocado, diced
• handful cilantro
• hot sauce
• raw cheese, optional
• s & p

Steps:

  • Directions: 1. Preheat your oven to 400ºF. 2. In an oven safe skillet, we used cast iron, crumble and brown the sausage. 3. Once it's brown, use a slotted spoon to remove the sausage and let it hang out while we cook the sweet potatoes. Try to reserve as much of the grease as possible. 4. Toss the sweet potatoes into the sausage grease and let them get crispy and cooked through. 5. Add the sausage back into the pan. 6. Make a few wells in the pan-one well for each egg. Crack your eggs into the wells. 7. Place the skillet in the oven. We're just baking the skillet long enough for the eggs to set, about 5 minutes. 8. Now, turn the oven to broil and hit up the top side of the eggs for a few minutes, but don't let the yolk cook all the way through-unless you don't like runny yolks. But man, oh man, the runny yolks go down really nicely with the crispy sweet potatoes. Just sayin'. 9. Remove the pan from the oven and douse the whole thing with avocado, cilantro and hot sauce. 10. Serve by scooping out an egg, along with its neighboring goodies, with a large spoon.
