This easy and simple couscous is a perfect side for a tagine. if you don't like the flavor of cilantro, try using fresh mint or parsley. For added flavor use broth for the water.

Steps:
- Heat oil in medium saucepan over medium-high heat. Add garlic and turmeric; stir 1 minute.
- Add water, lemon zest, and coarse salt; bring to boil.
- Remove pan from heat. Stir in couscous. Cover; let stand until liquid is absorbed, about 5 minutes.
- Fluff with fork; mix in cilantro and lemon juice. Season with salt and pepper, if desired.
- Serve.

- Heat olive oil in a medium saucepan over medium-low heat.
- Add garlic and saute until fragrant (not toasting and browning or it will be bitter!), about 20 seconds.
- Remove from heat, pour in chicken broth, lemon zest, lemon juice and season with salt to taste. Place over medium-high heat and bring to a boil.
- Pour in couscous, stir then remove from heat and immediately cover with lid. Let rest 4 - 5 minutes off heat.
- Add parsley and fluff with a fork. Finish with a little more olive oil or broth to moisten if desired and serve warm.

- In a large bowl, combine the orange juice, joney, soy sauce, and garlic. Stir in the chivken until well-mixed. Marinate at room temperature for 20 to 30 minutes in the refrigerator for up to 2 hours. If using wooden skewers, soak them for 30 minutes before cooking.
- Prepare the couscous. In a medium sacepan, combine the chicken broth, orange juice, scallion, oil, and salt.
- Heat the broth mixture to a boil over medium heat. Stir in the couscous and raisins. Cover the pan, remove the pan from the heat and set aside for at least 5 minures.
- Meanwhile, preheat the broiler. Thread the chicken onto 4 large or 8 small skewers. Broil for 2 minutes. Turn skewers, baste with remaining marinade, and broil 2 minutes longer or until chicken is opaque in center.
- Spoon the couscous onto serving platter and top with skewered chicken. Remove chicken from skewers before serving.
